For a quick and casual meal, toss this tasty, crunchy chicken salad in just 10 minutes.

1 bag (12 oz) salad blend with lettuce, carrots and red cabbage
2 packages (6 oz each) refrigerated cooked chicken breast strips, coarsely chopped
1 red bell pepper, cut into 1/2-inch pieces
1 can (1 3/4 oz) shoestring potatoes
3/4 cup ranch dressing

Steps:

  • In large bowl, mix all ingredients except dressing.
  • Divide salad evenly among 4 plates; drizzle each with 3 tablespoons dressing. Serve immediately.

This creamy chicken salad with crunchy shoestring potatoes is the perfect accompaniment to burgers, hotdogs, or any cookout!

2 c cooked chicken, cubed
1 1/2 c grated carrots
1 1/2 c chopped celery
2 Tbsp chopped green onion
1 c miracle whip
2 1/2 c mayonnaise
1/2 Tbsp ranch dressing
garlic salt
pepper
1 can(s) (9 oz) shoestring potatoes

Steps:

  • 1. Mix all ingredients together, except shoestring potatoes. Season with garlic salt and pepper to taste. Refrigerate overnight, or for at least 4 hours.
  • 2. Add shoestring potatoes just before serving, and mix well. If you mix it beforehand, they will get soggy.

I don't know where this recipe came from but my family has made it since the 1960's. It is a simple chicken salad with lots of crunch.

1 c cooked chicken
1 c chopped celery
1 c diced onion
1 c grated carrots
mayonnaise, to taste
potato sticks, to taste

Steps:

  • 1. Combine the ingredients in a medium bowl.
  • 2. Add as much mayonnaise as you like. Top with the potato sticks.
  • 3. Notes: You can use canned chicken to make this salad. Be sure to drain it first. You want to top the salad with the potato sticks. If you stir them into the salad, they will become soggy and lose their crunch. Enjoy!

  • Mix together the mayos, milk, lemon juice. Add chicken, carrots, and celery. Top with shoestring potatoes.

1 russet potato
Oil for frying
Salt
2 handfuls of arugula
1 ripe tomato, sliced or diced
Classic French Vinaigrette (p. 90)
2 tablespoons blue cheese

Steps:

  • Peel the potato, cut it crosswise into 1/8-inch-thick slices, then cut into thin matchsticks. Rinse the matchsticks thoroughly in cold water, then drain and shake or pat thoroughly dry in a kitchen towel. Heat 2 inches of oil in a deep saucepan over medium heat until it registers about 350°F. Fry the match-sticks to golden brown and crisp, 4-6 minutes, stirring a little to cook them evenly. Drain on paper towels and salt lightly. When they've cooled completely, you can store them in a Ziploc bag or an airtight container, and they will stay crisp for several days.
  • Place the arugula and tomato in a bowl and dress with the vinaigrette. Toss, crumble in the blue cheese, and add a big handful of shoestrings. Toss again and serve.

1 pound coarsely shredded cooked chicken
1 (8 ounce) can whole kernel corn, drained
1 cup pitted green olives, chopped
¾ cup golden raisins
2 carrots, grated
1 stalk celery, finely chopped
¼ green apple, finely chopped
4 tablespoons heavy cream
1 tablespoon Dijon mustard
1 pinch white sugar
salt and freshly ground black pepper to taste
2 tablespoons chopped fresh parsley, or to taste
2 large lettuce leaves
4 sprigs watercress
2 cups shoestring potato sticks

Steps:

  • Combine chicken, corn, olives, raisins, carrots, celery, and apple in a large bowl.
  • Stir together cream and mustard in a cup and season with sugar, salt, and pepper. Pour dressing over salad and mix to combine. Season with salt and pepper and sprinkle with parsley.
  • Arrange lettuce leaves and watercress on a platter and spoon salad in the middle. Sprinkle shoestring potato sticks on top and press into salad. Chill until serving.
