APPLE CHICKEN WITH CIDER MUSTARD SAUCE
Chicken with Apples and Cider Mustard Sauce. It sounds so fancy, right? I know. And it very well might be, but this apple cider chicken recipe is also easy, relatively quick (45 minutes), and a one-pan family friendly delight. There are so many ways to enjoy the bounty of apple season, and if you're in need of a savory fix after your eleventy-billionth apple pie, this is the dinner recipe for you!

Steps:
- Heat oven to 375°F.
- Heat olive oil over medium high heat in an oven-proof skillet like cast iron. Pat chicken dry, then season with salt and pepper. Cook skin side down until the skin is browned and easily releases from the pan, 8-10 minutes. Flip the chicken and cook skin side up for 1 minute. Remove chicken and set aside on a plate.
- Add the apples and saute in the rendered fat, stirring occasionally, until slightly caramelized, 2-3 minutes..
- Add the apple cider vinegar to the skillet to deglaze, stirring up any browned bits from the bottom of the pan. Add the mustard, apple cider, and chicken broth, stirring to mix completely.
- Nestle the chicken thighs in between the apple slices. Transfer the skillet to the oven and braise until the chicken is cooked through and reaches 165°F using an instant read thermometer, 20-25 minutes depending on size.
- Plate the chicken, and top with the apple slices, cider sauce, and fresh thyme to taste. Serve immediately.

CHICKEN WITH APPLE CIDER SAUCE

- Preheat a medium to large skillet over medium-high heat, for about 1 minute or until the surface of the pan is hot. Add the oil and heat until rippling on the surface. Pat the chicken breast dry and season with salt and pepper. Place the chicken in the pan and cook until the meat is golden, about 4 minutes. Turn the chicken breasts, lower the heat to medium and add 1 tablespoon of the butter. Cook until firm to the touch or an instant-read thermometer registers 160 degrees F, about 4 to 6 minutes more. Transfer the chicken to a plate to rest.
- Pour off any fat remaining in the skillet. Add the vinegar and deglaze over medium-high heat, scraping up any browned bits stuck to the bottom of the pan with a wooden spoon. Add the cider and the broth. Bring to a boil and cook until it thickens to form a sauce, about 6 minutes. Whisk in the remaining 2 tablespoons butter, lemon juice and thyme leaves. Return the chicken to the pan, adjust the seasoning with salt and pepper, and serve.

CHICKEN WITH APPLE, ONION AND CIDER SAUCE

- Preheat the oven to 350 degrees F. Heat a large skillet over medium-high heat. Season the chicken with salt and pepper and coat in flour, shaking off the excess. Add 2 tablespoons vegetable oil to the pan. Place the chicken smooth-side down in the skillet and cook until golden, about 5 minutes per side. Transfer to a baking dish and bake until cooked through, about 8 minutes.
- Meanwhile, add the red onion and apple to the skillet, along with 1 tablespoon vegetable oil if the pan is dry. Increase the heat to high and cook, tossing, until the onion has wilted slightly and the apple is golden brown, about 2 minutes. Stir in the vinegar with a wooden spoon, scraping up the browned bits from the pan. Let the mixture boil until the vinegar becomes syrupy, about 1 minute. Add the chicken broth and bring to a boil. Cook until the broth reduces by half. Remove from the heat, season with salt and pepper and whisk in the butter.
- Remove the chicken from the oven; add any collected juices to the pan sauce. Divide the chicken among plates and spoon the apple, onion and sauce over each piece. Sprinkle with the parsley.

CHICKEN SCALOPPINE
Steps:
- Pound the 4 pieces of chicken between sheets of plastic wrap to flatten them, about 1/4-inch thick. Sprinkle with poultry seasoning and season with salt and pepper, to taste. Coat the chicken with the flour, shaking off any excess.
- In a large skillet over medium-high heat, add the oil and butter. Mix together and when the butter has melted add the chicken, working in batches, until they are golden brown, about 4 to 6 minutes per side. Remove the chicken, to a serving platter, cover and keep warm. Add the chicken broth to the pan and cook it over high heat until it reduces by half and thickens slightly, about 5 minutes. Stir in the lemon juice, parsley and basil. Taste, and adjust the seasoning with salt and pepper, if needed. Pour the sauce over the cooked chicken serve with the Roasted Garlic and Mushroom Risotto.
- Preheat the oven to 350 degrees F.
- Slice the top off the head of garlic. Put it on a large square of aluminum foil and drizzle 1 teaspoon of the extra-virgin olive oil over the exposed cloves. Wrap the foil around and over the garlic. Roast until it is soft, about 50 minutes to 1 hour. Remove from the oven and let cool.
- Pour the 2 cans of broth into a saucepan, over low heat, and add 3 cans of water. Bring to a simmer.
- In a large, heavy bottomed skillet, heat the remaining olive oil over medium-high heat. Add the onion and saute for 3 minutes. Add the mushrooms, season with salt and pepper, to taste, and cook until the mushrooms release their juices, about 5 minutes. Add the rice and cook for 1 minute to toast.
- Add 2 ladles full of hot broth to the pan and gently stir the rice. Cook until most of the liquid has been absorbed. Adjust the heat so that the pan is just gently bubbling. Continue adding broth and stirring until all the broth is used and the rice is cooked but not mushy, about 20 to 25 minutes. Once the rice has absorbed all the liquid and is nice and creamy, stir in the butter, Parmesan and the garlic pulp. Cover and let rest for 2 minutes. Transfer to a serving dish and serve hot.
- Reserve 3 cups for another use.

- Season chicken with salt and pepper.
- In a large skillet over medium-high heat oil, cook chicken about 4 minutes per side or until browned.
- Add juice concentrate, lemon juice and rosemary to skillet.
- Reduce heat; cover and simmer for 10 minutes or until internal juices run clear.
- Remove chicken from the skillet.
- In a small bowl, whisk together cornstarch and cream.
- Add cream mixture to skillet.
- Cook, stirring until thickened, about 1-2 minutes.
- Stir in parsley.
- Return chicken to skillet.
- Heat about 2 minutes.
- To serve, place chicken on rice, spoon sauce over the chicken and top with chopped apples.

Steps:
- Pound each chicken breast half to 1/4-inch thick with meat mallet or rolling pin.
- (I put them between 2 sheets of plastic wrap first).
- Brush chicken with juice and sprinkle with salt and pepper.
- Dredge chicken in breadcrumbs.
- Heat a large nonstick skillet to medium-high heat and coat with cooking spray.
- Add chicken and cook for 3 minutes or so on each side until chicken is done.
- Remove from pan and keep warm.
- Add broth and wine to pan.
- Cook 30 seconds, stirring constantly.
- Remove from heat.
- Stir in capers and butter.
- Spoon 1 tablespoon sauce over each chicken breast.
CHICKEN SCALOPPINE WITH APPLES IN APPLE CIDER SAUCE
Steps:
- Heat 1 tablespoon of the oil in a large saute pan or skillet over medium-high heat. While the oil is heating, spread the cornstarch out on a large plate. Sprinkle the chicken cutlets with salt and pepper to taste, then coat both sides of the cutlets with the cornstarch, shaking off any excess. Place the chicken in the pan or skillet, being careful not to crowd the pieces. Cook for about 2 minutes, until lightly browned on one side, then turn over and cook for about 2 minutes on the second side. Transfer the browned pieces to a plate. Repeat with the remaining chicken cutlets, adding oil as needed. Combine the apple cider and chicken broth in a measuring cup. With the pan or skillet over medium-high heat, add the apple and onion slices and about 1/3 cup of the cider-broth mixture. Cook for 2 minutes, stirring and scraping the browned bits off the bottom of the pan or skillet; allow the liquid to evaporate. Add the butter, stirring to combine, then reduce the heat to medium. Cook for about 10 minutes, until the apple and onion slices are tender. Add the remaining cider-broth mixture and return the chicken to the pan or skillet. Make sure all the chicken is coated with some of the cooking liquid and the apples and onions. Cover, leaving the lid slightly ajar; increase the heat to medium-high so the liquid comes to a boil, then reduce the heat to medium-low so the liquid just bubbles at the edges. Cook for 5 minutes; the sauce will thicken slightly and the chicken should be cooked through. Taste and add salt and pepper as needed. To serve, spoon the apple-onion mixture over the cutlets.

This is from a cookbook club that I used to belong to years ago, I pulled out the binder, dusted it off, and looked for a chicken recipe. This is what I found, and it's delicous...my picky 3 year old even ate it!

- In a large skillet, heat olive oil over medium-high heat. Add onion; saute until softened, about 2 minutes. Add mushrooms and garlic; cook, stirring frequently, until vegetables are softened and lightly browned, 10-15 minutes. Cover and remove from heat; set aside.
- Rinse chicken breast halves under cold water; pat dry with paper towels. On a cutting board, cut each piece in half. Place between sheets of waxed paper; using a rolling pin, pound and roll chicken to 1/4 inch thickness.
- In a bowl, combine flour, sage, salt and pepper. Dredge chicken pieces in the mixture, shaking off excess.
- In a large skillet, heat 1 tablespoon olive oil and 1 tablespoon butter over medium heat. Cook chicken pieces, 4 or 5 at a time, until cooked through and lightly browned on both sides, about 2 minutes per side; add additional oil and butter, if necessary. Transfer chicken to a plate.
- Add balsamic vinegar to the skillet; increase heat to medium-high heat and cook, stirring, to loosen any browned bits from the bottom and sides of the skillet, about 1 minute.
- Return chicken and pan juices to the skillet; reduce heat to low and turn medallions once or twice to baste them in the sauce.
- Add cooked pasta to the skillet with the vegetables, tossing to combine; warm over low heat until heated through, about 4 minutes.
- Transfer pasta and vegetables to a platter. Arrange the chicken medallions on the platter next to the pasta and vegetables; garnish with fresh basil leaves and lemon wedges. Serve immediately.
