Categories     Dinner

Time 3h

Number Of Ingredients 15

1 1/2 pounds skinless boneless chicken breast or thighs (cut into 1 inch cubes)
2 tablespoons fresh squeezed lemon juice
1 tablespoon extra virgin olive oil
2 teaspoons dried za'atar or oregano
1 clove crushed garlic
1 1/4 teaspoon kosher salt
fresh ground black pepper (to taste)
lemon wedges for serving
3/4 cup plain low fat plain Stonyfield yogurt
3/4 cup finely chopped cucumber (peeled and seeded)
1 tablespoon fresh lemon juice
1/2 tablespoon fresh dill (chopped)
1/2 tablespoon fresh mint (chopped)
1/2 teaspoon kosher salt
fresh black pepper (to taste)

Steps:

  • Mix lemon juice, olive oil, za'atar, garlic, salt, and pepper together. Put chicken in a zip-locked bag and pour marinade over it. Marinate the chicken at least 2-3 hours or as long as overnight.
  • If using wooden skewers, soak in water at least 30 minutes if grilling outdoors (I usually double them up so they are easier to turn).
  • Prepare the yogurt sauce by combining the ingredients in a medium bowl. Refrigerate until ready to eat.
  • Thread chicken onto the skewers. You should have 4 kabobs total.
  • Preheat the grill over medium heat, oil the grates and cook (indoor or outdoor grill works fine) until the chicken is cooked though, turning often about 12 to 15 minutes.
  • Serve with lemon wedges and yogurt sauce.

CHICKEN SATAY SKEWERS RECIPE BY TASTY

Chicken Satay Skewers Recipe by Tasty image

Here's what you need: creamy peanut butter, coconut milk, spring onions, garlic, ginger, fresh Serrano chilies, curry powder, cumin, turmeric, salt, soy sauce, lime, boneless, skinless chicken thighs, peanuts, coconut milk, Bamboo or wooden skewer

Provided by Evelyn Liu

Categories     Dinner

Yield 4 servings

Number Of Ingredients 16

¾ cup creamy peanut butter
¾ cup coconut milk
4 spring onions, roughly chopped
3 cloves garlic, peeled
10 g ginger, peeled
2 fresh Serrano chilies, roughly chopped
1 teaspoon curry powder
1 teaspoon cumin
1 teaspoon turmeric
1 teaspoon salt
2 tablespoons soy sauce
1 lime, juiced
8 boneless, skinless chicken thighs, diced
⅓ cup peanuts, chopped
½ cup coconut milk
Bamboo or wooden skewer

Steps:

  • In a food processor, blend the peanut butter, coconut milk, spring onions, garlic, ginger, chilies, curry powder, cumin, turmeric, salt, soy sauce, and lime juice into a smooth paste; this should make about 2 cups. Reserve half of the marinade and pour the other half over the chicken thighs. Mix and chill for 2 hours or overnight.
  • Preheat the oven to 425˚F (220˚C). Line a baking tray with parchment paper.
  • Skewer the marinated chicken onto bamboo skewers, then arrange the skewers so their ends rest on the edges of the baking tray, allowing the chicken to be suspended. Bake the chicken skewers for 15-20 minutes, until slightly dark brown on the edges and cooked through.
  • With no oil in the pan, toast the chopped peanuts on low to medium heat, stirring constantly until the peanuts turn golden brown, 2-3 minutes. Add in the reserved marinade and the coconut milk. Stir and cook until thick and very aromatic, 5-10 minutes.
  • Serve the chicken skewers with the sauce on the side.
  • Enjoy!

CHICKEN SATAY SKEWERS WITH CUCUMBER YOGURT SAUCE

Chicken Satay Skewers With Cucumber Yogurt Sauce image

This is great with Peanut Noodle Salad. It's refreshing and a nice change of pace from your average grilled chicken. If you don't have bamboo skewers, don't worry... I don't use them half the time either. Just grill chicken and enjoy.

Time 2h10m

Number Of Ingredients 27

MARINADE
1 c yogurt, plain
1 tsp fresh grated ginger
1 Tbsp curry powder
1 1/2 lb chicken breasts, boneless and skinless, cut into strips
20 bamboo skewers, soaked in water for 30 mintues
canola oil for grilling
butter lettuce leaves
fresh cilantro
PEANUT SAUCE
1/2 c peanut butter, creamy
3 Tbsp water
1 large lime, juiced
1-2 Tbsp rice wine vinegar
3 Tbsp honey
1 Tbsp canola oil
1 tsp fresh grated ginger
1 tsp sriarcha chili (more or less to taste)
THAI CUCUMBER RELISH
1 c rice wine vinegar
1/3 c sugar
1 Tbsp kosher salt
2 tsp freshly ground black pepper
1 thai chili pepper, sliced thin and then chopped
2 medium english cucumbers, quartered and chopped
3 green onions, sliced thin
1 small carrot, finely shredded

Steps:

  • 1. Combine the yogurt, ginger, garlic, and curry powder in a shallow mixing bowl, stir to combine. Place the chicken strips in the yogurt marinade and gently toss until well coated. Cover and let the chicken marinate in the refrigerator for up to 2 hours.
  • 2. Thread the chicken pieces onto the soaked skewers working the skewer in and out of the meat, down the middle of the piece, so that it stays in place during grilling. Place a grill pan over medium heat and brush it with oil to prevent the meat from sticking. Grill the chicken satays for 3 to 5 minutes on each side, until nicely seared and cooked through.
  • 3. Serve the satays on a platter lined with lettuce leaves and cilantro; accompanied by a small bowl of peanut sauce on the side.
  • 4. PEANUT SAUCE: In a bowl, first whisk together the peanut butter along with water. Add the remaining wet ingredients and whisk well. Finally add the sugar, ginger and the chill sauce until incorporated. Keep refrigerated.
  • 5. THAI CUCUMBER RELISH: Mix all ingredients together and chill until serving.

MEAL PREP CHICKEN SKEWERS WITH OLIVE, CUCUMBER AND HERB YOGURT SAUCE

Meal Prep Chicken Skewers with Olive, Cucumber and Herb Yogurt Sauce image

Recipes that get even better with time, whether by making sauces in advance or marinating proteins, are a meal prepper's dream. Not only do you get ahead, but you also build flavor and tenderness without any extra effort. Couple that with using the same ingredients in different ways, and you get recipes with easy shopping and simple preparation. Yogurt, paprika, lemon and feta all get used in many ways throughout these recipes.

Provided by Food Network

Categories     main-dish

Time 1h30m

Yield 8 to 12 servings (about 24 skewers and 1 1/4 cups yogurt sauce)

Number Of Ingredients 20

1 Persian cucumber
1/2 cup plain yogurt
1/3 cup roughly chopped green olives, such as Castelvetrano or Cerignola (about 8 olives)
1/4 cup crumbled feta
1/4 cup lightly packed fresh flat-leaf parsley, roughly chopped
3 tablespoons extra-virgin olive oil
2 tablespoons fresh lemon juice
1 teaspoon honey
1/2 teaspoon fresh oregano leaves
1/4 teaspoon smoked paprika
1 clove garlic, smashed
Kosher salt
3 cups plain yogurt
1 tablespoon plus 1 teaspoon smoked paprika
2 teaspoons onion powder
1 teaspoon garlic powder
2 lemons, zested
Kosher salt and freshly ground black pepper
6 pounds boneless, skinless chicken breasts (about 8 large or 12 small), cut into 1/2-inch pieces
Vegetable oil, for the pan

Steps:

  • For the olive, cucumber and herb yogurt sauce: Grate the cucumber on the large holes of a box grater into a clean kitchen towel or fine-mesh sieve set over a bowl. Squeeze or push against the sides of the sieve to remove excess water; set aside. Put the yogurt, olives, feta, parsley, olive oil, lemon juice, honey, oregano, paprika, garlic and 1 teaspoon salt in a blender and process until evenly combined and smooth. Transfer to a bowl and stir in the grated cucumber. Season with salt to taste. Serve immediately or store in an airtight container in the refrigerator for up to 4 days; the sauce just gets better as it sits.
  • For the chicken skewers: Whisk together the yogurt, paprika, onion powder, garlic powder, lemon zest, 4 1/2 teaspoons salt and 1 teaspoon pepper in a large bowl. Add the chicken, stir to coat evenly, cover and marinate for at least 1 hour or up to overnight in the refrigerator.
  • Skewer the chicken pieces onto twenty-four 8- to 10-inch metal skewers (see Cook's Note), about 6 pieces per skewer.
  • Heat a large grill pan over medium heat and lightly grease with vegetable oil.
  • Working in batches, cook the chicken skewers, flipping halfway through when they release naturally from the pan, until charred all over and cooked through but still tender, 9 to 10 minutes total. Serve immediately with the yogurt sauce, or cool completely, then remove the chicken from the skewers. The chicken can be stored in an airtight container in the refrigerator for up to 4 days or frozen for up to 3 months. Reheat the chicken in the oven at 350 degrees F for about 20 minutes if frozen and 10 to 12 minutes if refrigerated.
