20-MINUTE CHICKEN RAMEN STIR-FRY

20-Minute Chicken Ramen Stir-Fry image

Chicken Ramen Stir-Fry is tender, springy ramen noodles with chicken and broccoli in a sweet and savory sauce. It tastes better than take-out, has less than 400 calories, and comes together in about 20 minutes.

Provided by Jess Smith via Inquiring Chef

Categories     Main Dish

Time 20m

Number Of Ingredients 12

1/4 cup Low-Sodium Soy Sauce
1 Tbsp Cornstarch
1/3 cup Low-Sodium Chicken Stock ((substitute water))
1 Tbsp Rice Vinegar
2 Tbsp Brown Sugar
3 cloves Garlic, chopped
6 oz Ramen Noodles ((Instant Ramen works best, but discard flavor packets))
2 Tbsp Cooking Oil, divided
1 lb Boneless, Skinless Chicken Breast, chopped
8 oz Broccoli Florets, fresh or frozen
2 Green Onions, chopped ((optional))
1 Tbsp White Sesame Seeds ((optional))

Steps:

  • In a small mixing bowl, whisk together the soy sauce and cornstarch until no lumps remain. Add chicken stock, rice vinegar, brown sugar, and garlic and whisk until evenly combined.
  • Heat a pot or bowl of water in the microwave or on the stove until steaming. Add noodles and set let them soak until just tender. (Check the package instructions for the recommended timing, but reduce by one minute since noodles will continue to cook slightly more when added to the stir-fry.) When the noodles are tender, drain.
  • While noodles soak, toss chicken with some salt and pepper.
  • Heat a wok or non-stick pan over medium-high heat. Add 1 Tbsp oil and then chicken. Saute until chicken is cooked through, 4 to 5 minutes. Set chicken aside.
  • Return wok to medium-high heat. Add 1 Tbsp oil and then broccoli. Saute broccoli until it turns bright green and then continue cooking until broccoli is tender (if using frozen broccoli, just saute it until it's heated through and the excess water cooks off).
  • Add sauce to the pan and toss to coat broccoli. Continue cooking until sauce reduces slightly, 1 to 2 minutes.
  • Add chicken and noodles to the pan and toss everything to coat in sauce.
  • Remove from heat and add green onions and sesame seeds, if using. Serve immediately!

Number Of Ingredients 14

2 packets ramen or other instant noodles (, discard seasoning (Note 1))
1 tbsp oil
2 garlic cloves (, minced)
1/2 onion (, sliced)
200g / 7oz chicken thighs, cut into bite size pieces ((Note 2))
1 1/4 cups (315 ml) water, plus more as needed
1 carrot (, cut into matchsticks)

Finely sliced green onion / shallots

Steps:

  • Add Sauce and cook for 1 minute until chicken is quite caramelised.
  • Add carrot and capsicum, cook for 1 minute (chicken should now be nicely caramelised, see video).
  • Push chicken and veg to the side to make enough space for the noodles. Add water, place noodles in water.
  • When the water starts simmering on the edges, leave noodles for 45 seconds then turn.
  • Leave for 30 seconds, then untangle the noodles, then toss through the chicken and veg.
  • Add cabbage, toss for 1 minute until sauce reduces to coat the noodles and the noodles are cooked. (Note 6)
  • Serve immediately, garnished with green onions.

TUNA NOODLE DUMP DINNER

Tuna Noodle Dump Dinner image

This creamy tuna-noodle dump dinner is made entirely in one baking dish, egg noodles included. It tastes just like the casserole you grew up eating but requires less equipment (and cleanup). Instead of using the classic cream of mushroom soup, we opted for a combination of cheese, broth, heavy cream and sour cream, which provides the same velvety texture.

Provided by Food Network Kitchen

Categories     main-dish

Time 1h20m

Yield 4 to 6 servings

Number Of Ingredients 13

Nonstick cooking spray
2 1/2 cups low-sodium chicken broth
3/4 cup heavy cream
1/2 cup sour cream
4 ounces cream cheese, at room temperature (about 1/2 cup)
1 tablespoon Dijon mustard
2 scallions, thinly sliced
Kosher salt and freshly ground black pepper
One 12-ounce bag wide egg noodles
Two 5-ounce cans white albacore tuna, drained and flaked
6 ounces cremini mushrooms, thinly sliced (about 2 cups)
1 1/2 cups frozen peas, thawed
8 ounces mild Cheddar, shredded (about 2 cups; preferably from a block and not pre-shredded)

Steps:

  • Preheat the oven to 425 degrees F. Generously spray the bottom and sides of a 9-by-13-inch casserole dish with nonstick spray.
  • Whisk the chicken broth, heavy cream, sour cream, cream cheese, mustard, scallions, 1 1/2 teaspoons salt and a few grinds of pepper in a large bowl until smooth and no lumps of cream cheese remain.
  • Spread half the noodles in an even layer in the bottom of the prepared dish. Scatter half of the tuna, mushrooms and peas over the pasta. Pour half of the broth mixture over the top, then sprinkle with 1 cup of the Cheddar. Repeat to make a second layer with the remaining noodles, tuna, mushrooms and peas.
  • Cover tightly with foil and bake until the noodles are al dente, about 40 minutes. Uncover and sprinkle the remaining 1 cup Cheddar evenly on top. Bake until the cheese has melted and the sauce has thickened slightly, 10 to 12 minutes. Let the casserole sit for about 10 minutes before serving.

Two 10-ounce cans diced tomatoes with chiles, such as Rotel
1 cup chicken broth
1 tablespoon chili powder
1 teaspoon ground cumin
1/2 teaspoon kosher salt
One 15.5-ounce can black beans, drained and rinsed
One 10-ounce bag frozen corn
5 cups shredded cooked chicken (from about 1 small rotisserie chicken)
12 small corn tortillas, cut into quarters
One 8-ounce block Monterey Jack cheese, shredded (about 2 cups)
1/2 cup sour cream

Steps:

  • Preheat the oven to 375 degrees F. Brush a 9-by-13-inch casserole dish with the oil.
  • Stir together the diced tomatoes with chiles, chicken broth, chili powder, cumin and salt in a large bowl. Provided by Campbell's

Categories     Lunch

Time 30m

Yield 1 serving

Number Of Ingredients 13

1 boneless, skinless, chicken breast
2 scallions, whole, plus 1, sliced on the bias, divided
3 ½ cups water
1 tablespoon olive oil
1 teaspoon grated fresh ginger
1 clove garlic, grated
¼ cup diced carrot, fresh or frozen
¼ cup edamame, fresh or frozen
¼ cup red bell pepper, fresh or frozen
1 can Campbell's® Cream of Chicken Soup
1 tablespoon soy sauce
4 oz ramen noodle, cooked
1 poached egg

Steps:

  • Add the chicken breast and whole scallions to a medium pot and cover with the water. Bring to a simmer over medium-high heat, then cover and cook, frequently skimming off the white foam that rises to the surface, until the internal temperature of the chicken reaches 165°F (75°C), 8-10 minutes. Remove the chicken and scallions from the poaching liquid and reserve 1½ cups of the liquid. Shred the chicken and discard the scallions and remaining liquid.
  • Heat the olive oil in a medium pot over medium heat. Add the ginger and garlic, and cook for 1 minute, until fragrant. Add the carrots, edamame, and red bell pepper, and sauté for 3-4 minutes, until the vegetables are starting to become tender.
  • Stir in the Campbell's® Cream of Chicken Soup and soy sauce, and bring to a simmer. Whisk in the reserved chicken poaching liquid until smooth. Return to a simmer and cook for 3-4 minutes, until the vegetables are tender. Fold in the ramen noodles and shredded chicken.
  • Carefully transfer the ramen to a bowl and top with the poached egg and sliced scallions.
  • Enjoy!
