CREAMY ITALIAN CHICKEN PASTA
This Italian Chicken Pasta is a pasta lovers dream! With a rich and creamy red sauce nestling penne pasta and tender pan seared chicken breast, it is easy to see why this is a family favorite!

Steps:
- In a large skillet, on med-high heat, heat 1 tbsp olive oil until hot. Season chicken with half of the Italian Seasoning, salt, and pepper. Cook 1-2 minutes on each side to sear, then cover, reduce heat to low and continue cooking until cooked through. Remove chicken from the pan and keep chicken warm.
- Add the remaining 1 tbsp olive oil to the skillet over medium high heat, garlic, and remaining Italian seasoning. Flash cook the garlic, about 1 minute, and then add crushed tomatoes.
- Add heavy cream and bring to a simmer. Add shredded Parmesan cheese then immediately reduce to low heat and stir continuously, until the cheese melts and the sauce is smooth and stir in the spinach giving it 2-3 minutes to wilt. Remove from heat and toss pasta with the sauce.
- Slice chicken into 1/2 inch strips and top pasta with chicken, OR cut the chicken into cubes and stir into the pasta. Garnish with additional parmesan and/or fresh basil. Enjoy!

ITALIAN CHICKEN PASTA
Steps:
- Cook the spaghetti to your liking, drain and set aside.
- In a Ziploc bag, combine ½ cup flour, 1 tsp. Salt ¼ tsp pepper, 1 tsp garlic powder and 2 tsp Italian seasoning. Shake to combine.
- Add the chicken to the Ziploc back and shake to coat well.
- Heat the oil in a large skillet over medium high heat on the stove and add the chicken. Saute until browned on each side and cooked through. Remove and set aside.
- To the skillet, add the butter and reduce the heat to medium.
- Mix in the onions and saute until softened.
- Add in the tomatoes and garlic and saute for 30 seconds.
- Sprinkle in the flour and stir to combine.
- Pour in the white cooking wine and saute for several minutes.
- Stir in the red pepper flakes and Italian seasoning.
- Whisk in the heavy whipping cream and parmesan cheese. Saute until the sauce thickens.
- Stir the cooked spaghetti into the sauce and add the chicken back into the skillet before serving.

- In a small bowl, combine the oregano, garlic powder, 1/8 teaspoon salt and 1/8 teaspoon pepper; rub over chicken. - Bring a large pot of lightly salted water to a boil. Add the penne pasta and cook until al dente, 8 to 10 minutes. Drain, and reserve pasta.
- Whisk the cornstarch and chicken broth together in a bowl until smooth. Set aside until needed.
- Heat the olive oil in a skillet over medium heat. Add the garlic and chicken; stir and cook until the chicken is no longer pink and juices run clear, about 10 minutes. Stir in the onion, and green and red peppers; cook until tender, about 5 minutes. Stir in the tomatoes, and simmer for 10 minutes. - Begin by marinating the chicken. In a bowl, add cubed chicken, milk, lemon juice, mustard, pepper, and Italian herb. Mix and set aside for 20 minutes
- Next, put a large pot of water on the boil for the pasta. Add heaping amounts of salt, a dash of oil, and put on the lid.Tip: To cook the perfect pasta, make sure you boil the pasta right.a. The larger the pot, the better the pasta will boil.b. Add heaps of salt, enough to make the water taste like seawater. This will add the right flavor to your pasta.
- Meanwhile, in a pan, heat olive oil and sauté the crushed garlic until golden.
- Now add in the marinated chicken and cook until tender, stirring every two minutes.
- Add the chicken stock to it, and let simmer until it reduces.
- While the chicken stock reduces, put the pasta to boil and boil until al dente.
- Once the chicken stock has reduced, and the chicken has fully cooked, add in the cooked pasta.
- In case the sauce looks too dry, you can also add in a tablespoon or two of the pasta water to bring out the right consistency.
- Next, beat three eggs in a bowl, and stir them into the pasta on high flame.
- Let it sit on the flame for two minutes or until the egg slightly foams up.
- Sprinkle some parmesan on top and serve hot.

ITALIAN CHICKEN PASTA
I really like this recipe because the combination of artichokes, roasted peppers and olives gives it a great flavor and it is quick and easy to do. I originally found it in Bon Appetit years ago and it has been a favorite ever since. I sometimes add sun-dried tomatoes in oil but it is really good the way it is- even cold the next day for lunch. I also sometimes use penne or other shaped pasta. This is my first recipe posting and I hope you enjoy it.

- Heat oil in large, heavy skillet over medium heat.
- Add onion and garlic and cook until onion is translucent, stirring and taking care not to brown the garlic, about 10 minutes.
