12 ounces roasted red peppers, rinsed and drained
2 tablespoons tomato paste
1 tablespoon mild paprika
1 1/2 teaspoons olive oil
2 medium onions, chopped
4 garlic cloves, minced
2 green bell peppers, diced
3/4 teaspoon dried dill or 3 tablespoons fresh dill
1 1/4 cups chicken broth
1/2 teaspoon salt
1 lb boneless skinless chicken breast, cut into 2 inch chunks
8 ounces wide egg noodles
1/3 cup plain nonfat yogurt
2 tablespoons flour
3 tablespoons light sour cream

Steps:

  • In a food processor,combine the roasted peppers,tomato paste and paprika and puree until smooth-set aside.
  • In a large,nonstick skillet,heat oil over medium heat and add onions and garlic.
  • Cook stirring frequently until the onions are lightly golden,about 4 minutes.
  • Add the peppers and dill and cook for 3 minutes.
  • Stir in the pepper puree,broth and salt and cook for 1 minute.
  • Add the chicken,bring to a boil,reduce to a simmer,cover and cook until the chicken is cooked through,about 5 minutes.
  • Meanwhile,in a large pot of boiling water,cook the noodles until tender and drain well.
  • In a small bowl,combine the yogurt and flour,stir into the chicken mixture and cook,uncovered,until the sauce is just thickened,about 3 minutes.
  • Place the noodles on 4 plates,spoon the chicken goulash on top and serve with a dollop of sour cream.

1 (6 ounce) package egg noodles
2 cups frozen mixed vegetables
2 (8 ounce) cans white meat chicken, cubed
1 (10 3/4 ounce) can low-fat cream of mushroom soup
2 tablespoons tomato paste
1 teaspoon paprika

Steps:

  • Bring the water to a boil and add the egg noodles.
  • Cook until the noodles begin to soften.
  • Add the remaining ingredients.
  • Reduce heat to medium-low, cover, and cook for 20 minutes, stirring occasionally.
  • Salt to taste.

12 ounces boneless skinless chicken thighs, cut into 1-inch pieces
1/2 cup onion, chopped
1 garlic clove, minced
1 -2 tablespoon cooking oil
2 medium potatoes, peeled and diced
water
1 1/2 teaspoons paprika
1/2 teaspoon salt
1/4 teaspoon caraway seed
1/4 teaspoon dried marjoram, crushed
1/4 teaspoon fresh ground pepper
1 pinch dried thyme, crushed
2 tablespoons all-purpose flour
2 tablespoons water
hot cooked noodles or spaetzle noodles
sour cream (optional)

Steps:

  • In a large skillet cook chicken, onion, and garlic in 1 tablespoon hot oil for 3-4 minutes; or till chicken is tender and no pink remains.
  • Drain off fat. Add potatoes, tomatoes, 1/4 cup water, paprika, salt, caraway seed, marjoram, pepper and thyme. Bring to a boil; reduce heat. Cover and simmer for 10-12 minutes, or till potaotes are tender.
  • Stir together the flour and 2 tablespoons water; stir into chicken mixture. Cook and stir till thickened and bubbly. Cook and stir for one minute more. Serve over hot noodles or spaetzle. If desired serve with sour cream.

1 (6 ounce) box rice pilaf mix (curry flavor or add 1/2 tsp curry powder to regular rice pilaf)
1 (14 ounce) can diced tomatoes, drained
8 ounces frozen peas
1/2 cup unsalted cashews

Steps:

  • Prepare the rice according to package directions.
  • After 15 minutes of simmering, stir in the chicken, tomatoes, and peas.
  • Simmer for 10 to 15 minutes more, until the rice is tender and most of the liquid is absorbed.
  • Top with the cashews.

1 teaspoon coarse salt
1 teaspoon cracked black pepper
1/2 teaspoon hot red pepper flakes
1 tablespoon garlic, chopped
1 tablespoon fresh rosemary, chopped
1 fresh lemon, juice of
1/4 cup extra virgin olive oil

Steps:

  • To prepare this you will need 2 clean bricks.
  • Rinse and dry the breasts.
  • sprinkle them with salt, pepper, red pepper, garlic, and rosemary,.
  • place in a baking dish, pour on lemon juice, and olive oil and refrigerate for 30 min to an hour.
  • wrap each of the bricks in aluminum foil.
  • brush the grill with a stiff wire brush.
  • dip a paper towel (folded into a small square) in oil and holding it with tongs rub it over the rods of the grill to oil them.
  • Then place the chicken at a 45 degree angle to the rods, put the bricks on top.
  • Cook over high heat for 4 to 6 minutes per side reorienting each breast every 2 minutes for a crosshatching effect.
