MARSALA CHICKEN WITH SAGE AND CREMINI MUSHROOMS
Our lightened-up version of a Chicken Marsala-a delicious chicken standby-has all the intensity of the original. To preserve mushrooms' earthiness, wipe them clean with a damp paper towel instead of rinsing. To showcase their shape, slice through the stem.

Steps:
- Place flour in a shallow bowl; season generously with salt and pepper. Dredge each piece of chicken in flour, shaking off excess.
- In a large skillet, heat oil over medium. Add chicken, and cook until golden on the outside and opaque throughout, 8 to 10 minutes per side. Transfer to a plate, and cover with aluminum foil to keep warm (reserve skillet).
- Add mushrooms, shallot, sage, and 1/4 cup water to skillet; season with salt and pepper. Cook, tossing frequently, until mushrooms are tender, 3 to 5 minutes. Add wine and cream; simmer over medium-high until slightly thickened, 3 to 5 minutes. Remove from heat, and stir in butter; season with salt and pepper.
- Top chicken with mushroom sauce, and garnish with sage.

- Sprinkle the chicken with the salt and pepper. Heat 1 teaspoon of the oil in a large nonstick skillet over medium-high heat. Add the chicken and cook until lightly browned, about 3 minutes on each side. Transfer to a plate; set aside.
- Add the remaining 1 teaspoon oil to the skillet. Add the mushrooms and cook, stirring, until browned, about 4 minutes.
- Stir together the port, broth, and flour in a small bowl until smooth. Pour into the skillet. Add the garlic and thyme; cook, stirring constantly, until the sauce thickens and bubbles, about 1 minute.
- Return the chicken to the skillet, turning to coat with the sauce. Reduce the heat and simmer, covered, until cooked through, about 3 minutes on each side.

CHICKEN RIESLING
Great recipe adapted from Jean-Georges Vongerichten with a kitchen light show and delicious outcome! Serve with noodles, spaetzle, rice or boiled potatoes and a complex Riesling with some body.

- Melt 2 tablespoons of butter in a large skillet over medium-high heat. Add chicken and season with salt and pepper and cook until somewhat golden browned, about 4 minutes per side. Add shallot and continue cooking and stirring for 1 minute. Add Cognac and carefully ignite it with a long match. When the flames subside, add Riesling, cover and simmer on low until the chicken breasts are just cooked, about 25 minutes. Remove breasts to plate and cover with foil. Cover and simmer the legs until cooked through, about 10 minutes longer. Transfer to the plate.
- Meanwhile, in another skillet, melt 2 tablespoons of the butter. Add mushrooms, season with salt and pepper and cook over low heat until the liquid dissipates, about 7 minutes. Increase heat and continue cooking and stirring, until browned, about 3 minutes.
- In a bowl, blend flour and remaining tablespoon of butter. Stir cream into the large skillet; bring to a simmer. Gradually whisk the flour paste into the cooking liquid and simmer, whisking, until no floury taste remains, 3 minutes. Season with salt and pepper. Return the chicken to the skillet, add the mushrooms and briefly reheat.

Steps:
- Sprinkle chicken breasts with 1/4 teaspoons of salt and 1/4 tsp of pepper and sauté chicken in 1 tablespoons olive oil until browned on both sides, about 5 minutes.
- Set chicken aside, and keep warm.
- Add remaining 1 tablespoons of olive oil to pan and cook onions and garlic 3 to 4 minutes until onions are brown.
- Add mushrooms and cook until softened, about 4 minutes.
- Add wine and cook until most of the liquid is absorbed.
- Add cream and return chicken breasts to pan.
- Cook, covered, over low heat, until chicken is cooked through, about 5 minutes.
- Stir in rosemary, remaining 1/4 teaspoons salt and remaining 1/4 teaspoons pepper.
CHICKEN IN RIESLING WITH CREMINI MUSHROOMS
This is quick enough for after work and nice enough for company's coming. This is nice served with green bean or sauteed cabbage, and noodles. Recipe adapted from the Chicago Tribune 'Good Eating'.

Steps:
- Mix flour, paprika, salt and pepper on a plate. Coat chicken on all sides with the flour mixture.
- Heat butter or olive oil in a large skillet over medium-high heat; add chicken. Cook, turning, until browned on both sides, about 3 minutes per side; reduce heat to low. Cover; cook chicken until no longer pink in the middle, about 10 minutes. Remove chicken to a platter.
- Add mushrooms to skillet; turn heat to high. Cook, stirring, until lightly browned, about 3 minutes. Stir in riesling, scraping up browned bits on bottom of pan. Cook until slightly reduced, about 5 minutes. Stir in cream; heat 1 minute. Season with salt and pepper if needed. Return chicken to the sauce; turn to coat. Heat to warm, about 2 minutes.
- This is great served over noodles.
