I was playing around in the kitchen and this is what I came up with, so I decided to share it with you. These nuggets go well with a sweet chili sauce. Enjoy!

2 cups panko bread crumbs
2 tablespoons grated Parmesan cheese
1 teaspoon salt
1 teaspoon ground black pepper
½ teaspoon garlic powder
2 eggs
1 tablespoon milk
1 cup all-purpose flour
1 ½ pounds skinless, boneless chicken breast, cut in bite-sized pieces
oil for frying

Steps:

  • Combine panko bread crumbs, Parmesan cheese, salt, pepper, and garlic powder in a food processor; blend until finely crushed. Put panko mixture in a bowl.
  • Whisk eggs and milk in a separate bowl to make an egg wash. Place flour in a bowl.
  • Coat chicken pieces in flour; dip them into egg wash. Press into panko mixture to coat, shaking off excess.
  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C). Fry chicken in batches, until no longer pink in the center and the juices run clear, about 3 to 5 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

2 cups chopped rotisserie chicken (about 10 ounces)
1 carton (8 ounces) spreadable chive and onion cream cheese
1 cup shredded pepper jack or Monterey Jack cheese
1 can (4 ounces) diced jalapeno peppers
1 sheet frozen puff pastry, thawed
1 large egg, lightly beaten

Steps:

  • Preheat oven to 425°. In a bowl, mix chicken, cream cheese, pepper jack cheese and peppers., On a lightly floured surface, unfold puff pastry; roll into a 13-in. square. Place on a parchment-lined baking sheet. Spread half with chicken mixture to within 1/2 in. of edges. Fold remaining half over filling; press edges with a fork to seal., Brush lightly with beaten egg. Cut slits in pastry. Bake 20-25 minutes or until golden brown. Let stand 10 minutes before cutting.

I saw a picture (no recipe) of "fried chile" on Chef Barbie Flores fb page. I knew I had to try and create this awesome sounding and looking appetizer, so I did a simple popper cheese mix, breaded and deep fried. It's an app you just have to try!!

stuffing size jalapenos
cream cheese
colby jack, monterey jack or any hard cheese you like
finely diced fresh veggies to add to cheese mix, opt
flour
milk and egg dip
frying oil

Steps:

  • Completely combine cream cheese and any grated cheese you like, here is an awesome cheese, veggie mixture I like to use to stuff jalapeno poppers https://www.justapinch.com/recipes/appetizer/appetizer-cheese-appetizer/best-darn-cheese-filling-or-spread.html?r=19. I had leftover cheese mix so I used it as a dip for chips, no loss!! You could also spread on bread and make a grill cheese sammie with the leftovers, if there are any.
  • (The photo is sweet mini peppers, but it illustrates the way to slice off the "top" of the pepper) Slice top off of jalapenos lengthwise. Stuff with cheese mixture pushing cheese down and firmly packing it in jalapeno. I let mine sit in fridge uncovered overnight to allow the cheese to harden up some. Save the "tops" you slice off and bread and fry them as well, they make great jalapeno fries!
  • Lightly flour, then dip in an egg and milk dip, then generously flour again packed the flour to the pepper.
  • Deep fry for about 7-8 minutes till brown. Time will vary depending on size of jalapeno.

2 lbs ground chicken
6 small jalapeno peppers, cut in half length way
8 ounces fat-free cream cheese
1/2 cup breadcrumbs (I prefer Shake and Bake ranch)

Steps:

  • Heat oven to 400°F.
  • Split Chicken into 6 portions.
  • Smash each section flat into an oblong patty.
  • Place a 1/6th of cream cheese into the center of each patty.
  • Place 1 or two halves of the Jalapeno on top of the cream cheese.
  • Roll the patties into oblong balls, ensuring they have full seal completely around them.
  • Season, roll and coat with the Shake 'n Bake mix.
  • Bake for 20 minutes.

It's excellent served with a ranch dressing or sour cream. For an added kick add some chipotle peppers in adobo to the ranch dressing and combine in a blender! By coating the poppers with flour and then deep frying them you will get a great crust on the peppers and the melted cheeses will also stay inside the shell. Feel free to use different types of shredded cheeses or alter the spices in the stuffing. You can also use fine corn meal or rice flour to create a crust with a different texture

1 lb jalapeno pepper
8 ounces cream cheese
4 ounces shredded cheddar cheese
4 ounces shredded monterey jack cheese
5 slices bacon
1 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon ground pepper
1 cup milk, in a small bowl
1 cup flour, in a small bowl
canola oil (for deep frying)

Steps:

  • Fry the bacon in a saute pan until crispy. Let cool slightly and then crumble.
  • Mix the cream cheese, shredded cheese, garlic powder, salt, pepper, and crumbled bacon in a bowl. This mixture will act as the stuffing for the deep fried jalapeno poppers.
  • Cut the stem off of each jalapeno, cut them in half lengthwise, and remove the seeds.
  • Take about a tablespoon or two of the jalapeno popper stuffing mixture and fill each jalapeno half.
  • Working on one jalapeno pepper at a time, briefly dip the pepper into the milk and then roll it in the flour to coat. Set aside and repeat with all the jalapeno poppers. When deep fried the flour will form the crispy outside that mark many jalapeno poppers.
  • Once you have completed step 6 for each pepper repeat it again, starting with the driest peppers.
  • In a dutch oven, large pot, or deep fryer heat the oil to around 365 degrees.
  • Carefully place several of the jalapeno poppers into the oil, being sure not to over-crowd it. Let the peppers cook until the outside is a golden brown, normally about 3 minutes. Remove with a strainer or slotted spoon and let dry on a wire rack.
  • Serve the jalapeno poppers with ranch dressing or sour cream.
