Kebab Marinade
1 tablespoon fajita seasoning
2 pounds boneless, skinless chicken thighs cut into 24 pieces
1 onion cut into 16 wedges
2 bell peppers cut into 16 pieces
8 (10-inch) skewers
chopped cilantro

Steps:

  • Combine marinade and fajita seasoning in a large bowl. Stir in boneless, skinless chicken thigh pieces, onion wedges, and bell pepper pieces. Cover; chill at least 4 hours or up to 12 hours.
  • Skewer onto 8 (10-inch) skewers. Discard marinade. Preheat grill to medium-high (400°F to 450°F). Place kebabs on oiled grates. Grill, covered, until chicken is cooked, 8 to 10 minutes, turning halfway through cook time. Sprinkle with chopped cilantro.

Chicken isn't generally the go-to meat for fajitas (flavorful skirt steak is the deserving star usually), but this flavor-packed marinade made with cilantro, tart lime juice, brown sugar, cumin, and crushed red pepper makes it a worthy stand-in. Here, we thread the chicken pieces onto skewers and cook them kebab-style. It's everything there is to love about chicken fajitas on one stick, minus the tortilla, of course.

1/2 cup packed coarsely chopped cilantro leaves and tender stems
1/3 cup lime juice from about 6 limes
1/3 cup extra-virgin olive oil
4 medium cloves garlic, peeled
1 tablespoon dark brown sugar
2 teaspoons kosher salt
1 1/2 teaspoons ground cumin
3/4 teaspoon crushed red pepper flakes
2 pounds skinless, boneless chicken thighs, cut into 1 1/2-inch cubes (see note)
1 large red bell pepper, stemmed, seeded, and cut into 1 1/2-inch pieces
1 large green bell pepper, stemmed, seeded, and cut into 1 1/2-inch pieces
1 large white onion, cut into 1 1/2-inch cubes and separated into 3-layer segments
Wooden skewers, soaked in water for at least 30 minutes prior to use

Steps:

  • Place cilantro, lime juice, olive oil, garlic, brown sugar, salt, cumin, and crushed red pepper in the jar of blender. Pureé until smooth. Place chicken cubes in a large resealable plastic bag. Pour in marinade and seal bag, removing as much air as possible. Place in refrigerator and marinate for at least 1 and up to 5 hours.
  • Thread chicken onto skewers, alternating with pepper and onion squares.
  • Light one chimney full of charcoal. When all charcoal is lit and covered with gray ash, pour out and spread the coals evenly over entire surface of coal grate. Alternatively, set all the burners of a gas grill to high heat. Set cooking grate in place, cover grill and allow to preheat for 5 minutes. Clean and oil the grilling grate. Grill skewers until well browned on all sides and center of chicken registers between 160-165°F on an instant read thermometer, 3-4 minutes per side. Transfer skewers to platter and let rest for 5 minutes. Serve immediately.

Kabob-style chicken fajitas make for an easy, versatile meal hot off the grill.

1 lb boneless skinless chicken breasts
1 package (1 oz) Old El Paso™ original taco seasoning mix
1/4 cup canola oil
3 bell peppers, any colors you like
1 onion

Steps:

  • Cut chicken into 1-inch strips, then cut each strip into 1-inch chunks. Mix in medium bowl with taco seasoning mix and oil; set aside.
  • Cut tops and bottoms off bell peppers. Remove seeds and ribs, and cut each pepper into 1-inch chunks; set aside. Peel and cut onion into 1-inch chunks; set aside. Alternately thread chunks of seasoned chicken, bell peppers and onion onto skewers.
  • Heat gas or charcoal grill. Place skewers on grill over medium-high heat. Cover grill; cook skewers 4 to 5 minutes on each side or until chicken is no longer pink in center.
  • Serve with tortillas and any of your favorite fajita fixings or on top of a salad.

  • In a small bowl or measuring cup, whisk together the canola oil, lime juice and zest, chili powder, cumin, garlic, jalapeno, and salt. Pour over the chicken, seal the bag, the gently “squish” the bag so that the chicken is coated with the marinade. Place the bag in a baking dish to catch any accidental drips, then refrigerate for 30 minutes or overnight. If using wooden skewers, soak the skewers in water for at least 20 minutes prior to use.
  • When ready to cook, heat your grill to medium-high. Cut the bell peppers and onion into 3/4-inch chunks, then thread onto skewers with the marinated chicken pieces, alternating the chicken with the vegetables. Lightly oil the grill, then place the kabobs on the grill, cover, and let cook until the chicken is fully cooked and no longer pink, about 6 to 8 minutes, turning the chicken once or twice throughout so that it cooks evenly.
  • Remove the chicken kebabs to a serving plate and sprinkle with cilantro and a few squeezes of fresh lime juice. Serve warm, garnished with salsa, sour cream, or guacamole as desired.
