CHICKEN DORITO® CASSEROLE
This recipe is a creation by my great aunt. It sounds crazy, but is definitely delicious! Great by itself.

Steps:
- Bring saucepan of water and Creole seasoning to a boil; cook chicken in the seasoned boiling water until no longer pink in the center, 10 to 15 minutes. Drain and shred chicken.
- Preheat oven to 350 degrees F (175 degrees C).
- Mix mushroom soup, tomatoes with green chile peppers, and corn together in a bowl.
- Spread half the tortilla chips in the bottom of a 9x13-inch casserole dish; top with half the chicken, half the mushroom soup mixture, half the Mexican cheese blend. Repeat layering with the remaining ingredients.
- Bake in the preheated oven until casserole is bubbling and cheese is melted, about 30 minutes.

Was given this recipe by a co worker. My husband says: 'You had me at Doritos®!' You can substitute 1 can Ro-Tel® tomatoes for the salsa.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly spray a 9x13-inch baking dish with cooking spray.
- Spread crushed chips out into the bottom of the prepared baking dish.
- Stir chicken, 1 cup Mexican cheese blend, salsa, cream of mushroom soup, cream of chicken soup, and sour cream together in a bowl. Pour chicken mixture over crushed chips into the baking dish.
- Bake in the preheated oven for 20 minutes. Spread remaining 1 cup cheese over the casserole and bake until cheese is melted and bubbling, about 5 minutes more.

My daughter's pre-K class made a recipie book for mother's day. This was submitted by one of her classmates Great-Aunts. I added the can of chicken to give it some protein for a main dish. Yummy, easy, and fast!!

Steps:
- Mix first four ingredients and heat in a saucepan.
- Spray a 9X9 baking dish.
- Place a layer of Doritos in the bottom.
- Pour 1/2 of heated mixture on top, sprinkle with 1/2 of the grated cheese.
- Repeat.
- Heat in 350 degree oven about 20-30 minutes until hot and bubbly.
- Can be doubled and use a 9X13 pan.
- You won't need to use all the Doritos, but that way you can munch while you cook.
EASY ENCHILADA CASSEROLE WITH DORITOS
I saw this recipe on Good Morning America and it sounded so easy and tasty. And it was! The first time I made it my husband ate almost 1/3 of it in one sitting. Even my toddler son enjoys it. This would be great for those informal group get-togethers also. Add some chiles to give it a bit more zip or a pound of browned ground beef or some chicken for another twist.

- Preheat oven to 375 degrees F.
- Crumble 2/3 of bag of Doritos into mixing bowl.
- Mix in the onion, chili, 1 1/2 C cheese, enchilada sauce and tomato sauce.
- Place into an 8 1/2 x 11-inch casserole dish.
- Bake for 20 minutes.
- Remove from oven and spread on sour cream, remaining Doritos and 1/2 C cheese.
- Bake for 5 minutes or until cheese is melted.
- Serve.

- In a large bowl, stir together the chicken, cream of chicken soup, sour cream, green chiles, chopped green onions, and milk if using until combined (reserve some of the green onions for sprinkling on top of the casserole).
- Spray a 9x9 or 11x7 casserole dish with nonstick spray. Gently crush the Doritos into smaller pieces, and spread half of them in the casserole dish. Spoon half of the chicken mixture over the Doritos, and the top with half of the cheese. Repeat the layers with the remaining Doritos, chicken mixture, and cheese.
- Top casserole with remaining green onions and a few more crushed Doritos. Cover tightly with foil and bake for 30-40 minutes, until hot and bubbly.

- Preheat oven to 350 degrees F. Spread half of the crushed chips in the bottom of an 8-inch or 9-inch square or 11 x 7-inch baking dish.
- In a large bowl, stir together chicken, condensed soup, tomatoes and green chilies, sour cream and taco seasoning. Spread the chicken mixture on top of the chips in the dish. Sprinkle with cheese, cover with foil, and bake for 20 minutes.
