Easy recipe that tastes like you cooked all day. Chicken breasts are wrapped around ham and mozzarella cheese for a change in this version of the classic baked dish.

6 skinless, boneless chicken breast halves - pounded to 1/2 inch thickness
6 string cheese sticks
6 slices ham
½ cup butter, melted
1 cup seasoned dry bread crumbs
toothpicks

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Lay out the pounded chicken breasts on a clean surface. Place a slice of ham on each piece, then one stick of cheese. Roll the chicken up around the cheese and ham, and secure with toothpicks. Dip each roll in melted butter, then roll in bread crumbs. Place in a shallow baking dish.
  • Bake for 40 minutes in the preheated oven, or until chicken is browned and juices run clear.

Traditionally made with swiss cheese, this new twist on Chicken Cordon Bleu will impress anyone at your dinner table!

Number Of Ingredients 10

2 -4 ounces fresh goat cheese, such as Chavrie
4 -6 ounces boneless skinless chicken breast halves
4 slices serrano ham
1 tablespoon chopped fresh parsley
1 cup all-purpose flour
3 eggs
2 tablespoons milk
2 cups panko breadcrumbs or 2 cups breadcrumbs
2 cups vegetable oil
salt and pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • Place chicken breast flat on a cutting board, using a sharp knife, about 1/3 of the way down the thick side, cut a deep pocket horizontally into the center of the meat about 3/4 of the way down, being careful not to cut through to the other side. Repeat with the remaining breasts. Wash hands well.
  • Season each pocket with salt and pepper.
  • Place a slice of ham in each pocket.
  • Cut the Fresh Goat Cheese Log in quarters. Wrap each cheese slice with ham. Place each wrapped quarter into each pocket that was made in the chicken breasts.
  • Wrap each stuffed chicken breast and place in refrigerator to chill for 30 minutes.
  • Set up a standard breading procedure using 3 shallow containers. Put flour in the first one, eggs and milk in the second, and Panko or bread crumbs in the third one.
  • Beat the eggs and water together.
  • Dredge each of the stuffed Chicken Breasts first in flour, then egg wash and then in the Panko or bread crumbs.
  • In a large, oven-proof skillet, heat the oil over medium-high heat. Add the chicken and sear until golden brown, 2 to 3 minutes on each side.
  • Place the pan in the oven and bake in the oven until the chicken is cooked through, 7 to 10 minutes.
  • Split each chicken breast in half and serve.

8 boneless skinless chicken breasts
1/2 cup honey Dijon mustard
2 cups panko breadcrumbs
6 tablespoons salted butter, melted
1 tablespoon kosher salt
1 teaspoon freshly ground black pepper
12 slices Swiss cheese, cut into quarters
24 rounds Canadian bacon (about 1 pound), cut into half-moons

Steps:

  • Preheat the oven to 425 degrees F.
  • At a slight angle, cut 6 slits into each of the chicken breasts, making sure not to cut all the way through. You should leave roughly 1/4 inch unsliced. Brush the top of each chicken breast with 1 tablespoon of the mustard.
  • Mix together the breadcrumbs, butter, salt and pepper in a bowl. Sprinkle the breadcrumb mixture evenly over the chicken, using your hands to press the mixture into the mustard. Place a quarter piece of cheese and a half-moon piece of Canadian bacon into each of the slits in each chicken breast. Transfer the stuffed chicken breasts to a baking sheet.
  • Bake until the chicken is cooked through and the breadcrumbs are golden, 20 to 22 minutes. Serve warm with your favorite sides.
  • Freezing instructions: Once the uncooked chicken breasts are assembled, place 4 onto a wax paper-lined baking sheet; repeat with the remaining chicken breasts on a separate lined baking sheet. Transfer the baking sheets to the freezer until the chicken breasts are frozen through, at least 3 hours. Transfer the chicken breasts to 2 wax paper-lined foil pans. Label, date and freeze until ready to eat.
  • When ready to eat, preheat the oven to 425 degrees F. Bake the chicken breasts from frozen until the chicken is cooked through and the breadcrumbs are golden, about 40 minutes. Serve as directed above.

¼ teaspoon salt
⅛ teaspoon ground black pepper
6 slices Swiss cheese
4 slices cooked ham
½ cup seasoned bread crumbs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Coat a 7x11 inch baking dish with nonstick cooking spray.
  • Pound chicken breasts to 1/4 inch thickness.
  • Sprinkle each piece of chicken on both sides with salt and pepper. Place 1 cheese slice and 1 ham slice on top of each breast. Roll up each breast, and secure with a toothpick. Place in baking dish, and sprinkle chicken evenly with bread crumbs.
  • Bake for 30 to 35 minutes, or until chicken is no longer pink. Remove from oven, and place 1/2 cheese slice on top of each breast. Return to oven for 3 to 5 minutes, or until cheese has melted. Remove toothpicks, and serve immediately.

8 slices Swiss cheese
1 (10.75 ounce) can condensed cream of chicken soup
1 cup sour cream

1 teaspoon salt
1 teaspoon ground black pepper
1 (6 ounce) package herb-seasoned dry bread stuffing mix

Steps:

1/2 to 3/4 teaspoon rubbed sage
6 slices thinly sliced deli ham
6 slices part-skim mozzarella cheese, halved
1 medium tomato, seeded and chopped
1/3 cup dry bread crumbs
2 tablespoons grated Parmesan cheese
2 tablespoons minced fresh parsley
4 tablespoons butter, divided

Steps:

  • Preheat oven to 350°. Pound chicken breasts with a meat mallet to 1/8-in. thickness; sprinkle with sage. Place ham, mozzarella cheese and tomato down the center of each; roll up chicken from a long side, tucking in ends. Secure with toothpicks., In a shallow bowl, toss bread crumbs with Parmesan cheese and parsley. In a shallow microwave-safe dish, microwave 3 tablespoons butter until melted. Dip chicken in butter, then roll in crumb mixture. Place in a greased 11x7-in. baking dish, seam side down.
