Make perfect Chicken Chow Mein at home and get all the delicious restaurant flavor you'd normally find on the takeout menu. It's a lot easier than you think!

Number Of Ingredients 15

2 teaspoons cornstarch
4 tablespoons low sodium soy sauce or tamari sauce
1 1/2 tablespoons oyster sauce
1 tablespoon granulated sugar
1 1/2 teaspoons sesame oil
fresh ground black pepper, to taste
6 ounces chow mein noodles
2 tablespoons vegetable oil, divided
1 pound boneless, skinless chicken thighs, cut into 1-inch cubes (you can also use chicken breasts)
3 cups shredded green cabbage
1 1/2 cups matchstick carrots
3 cloves garlic, minced
4 green onions, chopped, white and light green parts only ((chop the dark green parts and use for garnish))
1 cup bean sprouts
1/4 cup low sodium chicken broth

Steps:

  • Make the sauce by combining cornstarch and soy sauce in a small mixing bowl; whisk to combine.
  • Whisk in the rest of the ingredients and set aside.
  • Prepare the noodles according to the directions on the package.
  • Heat 1 tablespoon vegetable oil in a wok or a large non-stick skillet over high heat.
  • Add chicken to the hot oil and stir in 2 Tablespoons of the prepared sauce; mix to combine and cook chicken for 3 minutes; turn over and continue to cook for about 3 more minutes, or until chicken is cooked through.
  • Remove chicken from skillet and set aside on a plate.
  • Return wok/skillet over medium-high heat and heat up remaining 1 Tablespoon vegetable oil.
  • Add cabbage and sauté for 2 minutes.
  • Stir in carrots and cook for 1 minute.
  • Stir in garlic and chopped green onions; continue to cook for 2 more minutes or until vegetables are crisp tender.
  • Add in the noodles, previously prepared chicken, sauce, and chicken broth; cook for 1 minute, stirring frequently.
  • Add bean sprouts and cook until bean sprouts start to wilt, about 30 seconds.
  • Remove from heat; garnish with green onions and serve.

My grandmother got this recipe from a friend over 30 years ago, and I have made additions to it. It's delicious! Serve over cooked white rice or crisp noodles.

¼ cup butter
½ cup chopped mushrooms
2 cups chopped celery
2 onions, chopped
¼ teaspoon garlic powder
2 ½ cups chicken broth
1 (15 ounce) can baby corn
½ cup green beans
2 teaspoons soy sauce
2 tablespoons cornstarch
⅓ cup cold water
3 cups cooked, cubed chicken meat

Steps:

  • In a wok or skillet, melt butter or margarine over medium heat. Add mushrooms, celery, onions and garlic powder; cook until the onions have wilted. Add chicken broth and baby corn. Continue cooking until celery is cooked but still crisp. Stir in the green beans or bean sprouts and soy sauce.
  • Mix cornstarch and water together in a small bowl. Slowly stir into vegetables. Sauce should start to thicken a little. Mix in chicken, and heat through.

1 tablespoon cornstarch
2/3 cup reduced-sodium chicken broth
1 teaspoon reduced-sodium soy sauce
1/2 teaspoon salt
1/4 teaspoon ground ginger
1/4 pound sliced fresh mushrooms
2/3 cup thinly sliced celery
1/4 cup sliced onion
1/4 cup thinly sliced green pepper
2 tablespoons julienned carrot
1 teaspoon canola oil
1 garlic clove, minced
1 cup cubed cooked chicken breast
1 cup cooked brown rice
2 tablespoons chow mein noodles

Steps:

  • In a small bowl, combine the cornstarch, broth, soy sauce, salt and ginger until smooth; set aside., In a large skillet or wok, stir-fry the mushrooms, celery, onion, pepper and carrot in oil for 5 minutes. Add garlic; stir-fry 1-2 minutes longer or until vegetables are crisp-tender., Stir cornstarch mixture and add to the pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Add chicken; heat through. Serve with rice; sprinkle with chow mein noodles.

Omit the chilli sauce if you wish, or add a little more to give it extra zing. If you don't have groundnut oil (peanut oil), use vegetable oil, NOT olive oil, which is too strong flavoured. Serves two as a main course, or four as a side dish.

150 g medium egg noodles
1 tablespoon sesame oil
300 g chicken breasts, sliced
1 tablespoon dark soy sauce
1 tablespoon five-spice powder
1 teaspoon chili sauce
1 tablespoon cornflour
2 tablespoons peanut oil
1 red bell pepper, finely sliced
150 g bean sprouts
1 large spring onion, sliced lengthways
2 tablespoons light soy sauce
fresh ground black pepper

Steps:

  • Cook the noodles in boiling water until al dente. Drain, rinse under cold water and drain again. Drizzle with a little sesame oil and toss.
  • Place chicken in a bowl and toss with dark soy, five-spice powder and chilli sauce. Dust with cornflour.
  • Heat a wok until smoking before adding the groundnut oil. Add chicken and cook, stirring, until golden brown and cooked through.
  • Add red pepper, stir fry for a minute, then add onion and beansprouts, cooking for a further 30s. Stir in the noodles and season with light soy sauce, a dash of sesame oil and black pepper, to taste.

1 package fresh celery (sliced)
1 tablespoon olive oil or 1 tablespoon vegetable oil
1 cup bean sprouts
1 (4 ounce) can mushroom pieces, drained
1 (7 ounce) can sliced water chestnuts, drained
2 cups cut up cooked chicken
3 tablespoons cornstarch
1/4 cup water
1 (10 ounce) can condensed chicken broth
1/4 cup soy sauce
hot cooked rice
chow mein noodles

Steps:

  • In a large pot, saute celery in oil for apx 5 minutes or until crisp-tender.
  • Add bean sprouts (if using), mushrooms, water chestnuts, and chicken.
  • In a large bowl, blend cornstarch with water.
  • When smooth, add chicken broth and soy sauce to bowl.
  • Mix well and pour over meat and vegetables.
  • Bring to a boil, stirring until sauce thickens.
  • Reduce heat to low.
  • Cover and simmer 10 to 15 minutes.
  • Serve over hot, cooked rice and chow mein noodles.

6 oz dry chow mein noodles
8 oz boneless skinless chicken breasts (cut into thin strips against the grain)
Salt and pepper
1 tablespoon oil
1 cup sliced cabbage
1/2 cup shredded carrots
3 scallions (sliced)
1 clove garlic (minced)
1 teaspoon minced ginger
3 tablespoons oyster sauce
3 tablespoons low sodium chicken broth or water
1 tablespoon soy sauce
1 tablespoon sesame oil
½ tablespoon corn starch
½ tablespoon granulated sugar

Steps:

  • Cook the noodles according to package directions. Drain and rinse with cold water. Set aside.
  • Meanwhile, season the chicken with salt and pepper.
  • Heat the oil in a large skillet over medium high heat. Add in the chicken and cook until the surface is white and the center is no longer pink. Remove from the skillet onto a plate. Cover lightly with foil to keep warm.
  • Add the cabbage and carrots to the skillet and sauté until softened, about 2-3 minutes. Add in the scallions, garlic, and ginger. Saute for another 1-2 minutes until fragrant.
  • While the veggies are cooking, whisk together the oyster sauce, soy sauce, sesame oil, corn starch, and sugar. Set aside.
  • Add the noodles and chicken back into the skillet. Pour over the sauce and cook, stirring, until the sauce has thickened and coats the noodles. Top with extra green onions, if desired, and serve.

1 teaspoon sesame oil
1 clove garlic, minced
1 pound skinless, boneless chicken breasts, cut into bite-sized pieces
1 tablespoon vegetable oil
1 (8.5 ounce) package chow mein noodles
¾ cup chicken stock
4 tablespoons oyster sauce
½ teaspoon white sugar
2 teaspoons soy sauce
2 teaspoons cornstarch
2 teaspoons vegetable oil
2 cloves garlic, minced
1 medium head bok choy, chopped
1 medium carrot, sliced

Steps:

  • Combine soy sauce, cornstarch, sesame oil, and garlic for marinade in a glass or ceramic bowl. Add the chicken and marinate for at least 30 minutes.
  • Heat 1 tablespoon vegetable oil in a saute pan over medium-high heat. Add the chicken. Stir-fry until lightly browned and cooked through, 3 to 5 minutes. Transfer cooked chicken to a plate for later.
  • Meanwhile, bring a large pot of water to a boil. Add noodles and cook over medium heat until cooked through but still firm to the bite, 4 to 5 minutes. Drain and rinse with cold water.
  • Whisk chicken stock, oyster sauce, soy sauce, and cornstarch together in another bowl. Set aside.
  • Heat 2 teaspoons vegetable oil in the same pan you cooked the chicken in over medium-high heat. Add garlic. Add bok choy and carrot; stir-fry until tender, about 5 minutes. Add the cooked noodles and chicken stock mixture; stir to combine and cook until the sauce has thickened. Add the chicken back to the pan; stir to combine until warm. Serve.
