Chili is easy, one-pot, comfort food that you can enjoy all year long. Let it simmer for the right amount of time so the flavours really blend. Serve this chili as written or with a variety of other toppings such as chopped green onions, whole cilantro leaves, diced avocado, reduced-fat shredded cheese or nonfat plain Greek yogurt (toppings are not included in the recipe's Points value).

1 tbsp(s) Vegetable oil
6 medium Sweet red pepper(s) diced small
2 medium Uncooked red onion(s) finely diced
1 medium Jalapeño pepper(s) seeded, finely chopped
2 pound(s) Uncooked 99% fat-free ground turkey breast
2 tbsp(s) Chili powder or to taste
4 pinch Table salt or to taste
3 pinch Ground cumin or to taste
45 oz Canned diced tomatoes (fire-roasted with garlic recommended for heat)
15 oz Canned black beans rinsed and drained
15 oz Canned pinto beans rinsed and drained
15 oz Fat free no sugar canned refried beans
0.5 cup(s) Water
0.5 cup(s) Cilantro chopped

Steps:

  • In a large pot, heat oil over medium heat. Add red peppers, onions, and jalapeno; cook, stirring frequently, until onions are translucent and somewhat caramelized, about 10-15 minutes.
  • Add turkey, chili powder, salt, and cumin; cook, stirring and breaking apart turkey as it cooks, until meat is just browned, 2-3 minutes.
  • Stir in remaining ingredients, except cilantro, and bring to a boil over high heat, gently stirring to combine all ingredients and make sure nothing sticks to the bottom. Reduce heat to medium-low; simmer, stirring occasionally, until chili is sufficiently thickened, about 45 minutes. Serve garnished with cilantro.
  • Serving size: about 1 1/3 cup

1 lb lean ground turkey, raw
1 (29 ounce) can tomato sauce
1 (14 1/2 ounce) can diced tomatoes, drained
1 (15 ounce) can chili beans, undrained (pinto beans in chili sauce)
1 (15 ounce) can red kidney beans, drained and rinsed
3/4 cup sweet corn, canned, drained
4 -5 chipotle chiles in adobo, canned, chopped, sauce reserved
2 bell peppers, chopped (in different colors)
1 large onion, chopped
2 carrots, chopped
2 teaspoons garlic, minced
2 teaspoons Worcestershire sauce
1 teaspoon chili powder
1 teaspoon ground cumin
1/2 ounce dark chocolate (70% broken into small pieces cacao)
1 dash salt, to taste
1 dollop nonfat sour cream

Steps:

  • Bring a large pan sprayed with nonstick spray to medium heat on the stove. Add turkey and spread it around in the pan to break it up a bit. Cook and crumble until meat is brown and cooked through, about 6 minutes. Drain any fat or liquid, and then transfer turkey to the crock pot.
  • Add all other ingredients except for the chocolate to the crock pot. Add 1 tablespoon adobo sauce (from the canned chipotles). Mix well to combine.
  • Cover and cook on high for 2 hours, and then reduce heat to low and cook for an additional 3 hours. (OR cover and cook on low for 6 - 7 hours straight.)
  • Add chocolate and stir until pieces melt and disappear into chili. Cover and cook for 1 hour longer on low. Add salt to taste. If you like, top each serving with a little sour cream. Mmmmm!

1 lb raw lean ground turkey
1 29oz can tomato sauce
1 14.5oz can diced tomatoes
1 15oz can chili beans (pinto beans in chili sauce), undrained

1/2 oz VERY dark chocolate (70% + cacao), broken into small pieces
salt to taste.
Optional topping: fat-free sour cream

I recently purchased the new Hungry Girl Cookbook and this is one of the first recipes that I am going to try. Here is what the book says: "Not to sound like a cheesy commercial, but this soup is so thick, it "eats like a meal." It's almost too easy to prepare a super-sized batch, and it tastes even better the next day! (HG Tip: Freeze leftovers in individual servings for microwavable, super-filling, guilt-free snacks)." UPDATE NOTE 9/7/2008: I made this recipe today for dinner but I made just a couple changes: 1) I used 16 ounces Perdue Ground Chicken (hubby wanted more meat!) and 2) I cooked it all in my crockpot on Low for about 8 hours. Hubby and I had it for dinner and it was awesome! I posted a picture also. The change to the ground chicken changed the points value to 4 points per generous 1 cup serving. I hope you all enjoy as much as we did!

Steps:

  • Pour the tomatoes and corn into a large pot. Add remaining ingredients and stir thoroughly. Bring to a boil.
  • Reduce heat to low and let simmer for 15 minutes.
  • Remove from heat and allow soup to sit for at least 5 minutes. Add salt and pepper to taste.
