WHITE CHICKEN CHILI



White Chicken Chili image

This White Chicken Chili is hearty, warming, creamy and perfectly comforting. It's a great alternative to traditional beef chili and makes a simple, yet completely delicious dinner! Makes about 8 cups.

1 small yellow onion (, diced)
1 tbsp olive oil
2 cloves garlic (, finely minced)
2 (14.5 oz) cans low-sodium chicken broth
1 (7 oz) can diced green chilies
1 1/2 tsp cumin
1/2 tsp paprika
1/2 tsp dried oregano
1/2 tsp ground coriander
1/4 tsp cayenne pepper
salt and freshly ground black pepper (, to taste)
1 (8 oz) pkg Neufchatel cheese (aka light cream cheese), (cut into small cubes )
1 1/4 cup frozen or fresh corn
2 (15 oz) cans cannellini beans
2 1/2 cups shredded cooked rotisserie or left-over chicken*
1 Tbsp fresh lime juice
2 Tbsp chopped fresh cilantro, (plus more for serving)
Tortilla chips or strips, monterrey jack cheese, sliced avocado (for serving (optional))

Steps:

  • Heat olive oil in a large pot over medium-high heat. Add onion and saute 4 minutes minutes. Add garlic and saute 30 seconds longer.
  • Add chicken broth, green chilies, cumin, paprika, oregano, coriander, cayenne pepper and season with salt and pepper to taste. Bring mixture just to a boil then reduce heat to medium-low and simmer 15 minutes.
  • Drain and rinse beans in a fine mesh strainer or colander then measure out 1 cup. Set whole beans aside, transfer 1 cup beans to a food processor along with 1/4 cup broth from soup, puree until nearly smooth**.
  • Add Neufchatel cheese to soup along with corn, whole beans and pureed beans and stir well. Simmer 5 - 10 minutes longer.
  • Stir in chicken, fresh lime juice and cilantro. Serve with Monterrey Jack cheese, more cilantro, avocado slices and tortilla chips if desired.

2 tablespoons avocado oil
½ small onion, chopped
1 green pepper, chopped
2 teaspoons garlic, minced
5 cups chicken broth
2 tablespoons butter
3 chicken breasts, boneless and skinless
1 can Rotel Tomatoes & Green Chilies
1 can whole sweet corn, drained
2 cups Mexican Blend shredded cheese
1 cup heavy whipping cream
8 oz cream cheese
1 teaspoon garlic pepper
1 teaspoon cayenne pepper
1 teaspoon dried sage
3 teaspoons chili powder
2 teaspoons cumin
2 teaspoons paprika
2 teaspoons pink salt
1 teaspoon oregano
1 teaspoon dried chive
½ teaspoon garlic powder

Steps:

  • Sauté onions and green pepper in avocado oil in a large pot. Then, add minced garlic and sauté for 1 minute.
  • Add chicken broth and butter and bring to a boil.
  • Add chicken breasts and boil until cooked through, about 10-15 minutes.
  • Remove chicken and shred or cut into bite sized pieces, set aside.
  • Remove 1 cup broth and place in a blender with cream cheese; blend until creamy.
  • Add creamy cheese mixture and shredded chicken back to soup. Then, stir in all remaining ingredients.
  • Bring to a boil, then reduce heat and simmer for 5-10 minutes.
  • Serve over cooked white rice, cauliflower rice, or tortilla chips.

1 1/2 lbs chicken pieces (breasts, thighs, or wings)
1/2 teaspoon salt
1/2 cup maple syrup
1 tablespoon chili powder

Steps:

  • For immediate cooking: Pre-heat oven to 350°F Place all ingredients into a large baking dish, turn chicken to coat. Bake until chicken juices run clear (45-60 minutes for chicken pieces, or 20-30 minutes for chicken breasts).
  • For freezing: Place all ingredients into a 1 Gallon freezer bag. Lay flat in freezer.
  • To thaw and cook: Take the bag out of the freezer the night before, make sure the bag is sealed completely.
  • For the oven: Preheat the oven to 350°F Empty the contents of the bag into a large baking dish and bake until the juices run clear (45-60 minutes for chicken pieces, or 20-30 minutes for chicken breasts).
  • For the crockpot: cook on low for 6-8 hours or on high for 4-6 or until done.
  • On the grill: cook over medium heat until juices run clear.

This is Top Secret Recipes version of The Soup Nazi's Mexican Chicken Chili. The secret to this soup seems to be the long simmering time. If you like, you can substitute turkey breast for the chicken to make turkey chili.

1 lb chicken breast fillet (4 fillets)
1 tablespoon olive oil
10 cups water
2 cups chicken stock
1/2 cup tomato sauce
1 potato, peeled & chopped
1 small onion, diced
1 cup frozen corn
1/2 carrot, sliced
1 stalk celery, diced
1 cup canned diced tomato
1 (15 ounce) can red kidney beans, plus liquid
1/4 cup diced canned pimiento
1 jalapeno, diced
1/4 cup chopped Italian parsley
1 garlic clove, minced
1 1/2 teaspoons chili powder
1 teaspoon cumin
1/4 teaspoon salt
1 dash cayenne pepper
1 dash basil
1 dash oregano
sour cream
1 pinch chopped Italian parsley
grated cheddar cheese (optional)

Steps:

  • Sauté the chicken breasts in the olive oil in a large pot over medium/high heat.
  • Cook the chicken on both side until done-- about 7-10 minutes per side.
  • Cool the chicken until it can be handled.
  • Do not rinse the pot.
  • Shred the chicken by hand into bite-sizes pieces and place the pieces back into the pot.
  • Add the remaining ingredients to the pot and turn heat to high.
  • Bring mixture to a boil, then reduce heat and simmer for 4-5 hours.
  • Stir mixture often so that many of the chicken pieces shred into much smaller bits.
  • Chili should reduce substantially to thicken and darken (less orange, more brown) when done.
  • Combine some chopped Italian parsley with sour cream and serve it on the side for topping the chili, if desired.

1 bunch (6 ounces) watercress, large stems trimmed
2 scallions, thinly sliced lengthwise and cut crosswise into 2-inch pieces

Steps:

  • In a 3-quart saucepan, bring broth, bell peppers, soy sauce, and chili sauce to a simmer; cook until peppers are crisp-tender, about 6 minutes.
  • Add chicken and watercress; cook 1 minute. Ladle into bowls, and top with scallions.

I finally got around to putting this recipe on Recipezaar! This is our family's favourite recipe. It is very kid friendly (no heat) so feel free to add something to spice it up if you like it spicy. I am posting this mainly so that I can access this recipe on "my shopping list" which is a feature I use here on Recipezaar all the time!

1 lb ground beef
1 small onion, chopped
1 (28 ounce) can white beans, in tomato sauce
1 (19 ounce) can kidney beans, drained
2 (10 ounce) cans condensed tomato soup
1 teaspoon taco seasoning
1 teaspoon cumin
1 teaspoon chili powder
1 cup cheddar cheese

Steps:

  • Brown ground beef, (I like to do a huge batch of ground beef using Tish's recipe#31008 and it works perfectly) place into a Ziploc bag and throw into the freezer.
  • The night before serving, defrost overnight.
  • (I usually don't, but some people argue that cooking frozen meat in the crock pot is not safe.).
  • Throw everything into the crock pot and cook for 3-4 hours on high or 6-7 hours on low.
  • Garnish with cheddar cheese and serve.
  • I will sometimes serve this on buns as sloppy Joe's.
  • **If desired you can make the entire recipe and freeze already made, then heat to serve. This recipe freezes great!**.

  • Heat a large 5 or 6 quart Dutch oven or soup pot over medium heat. Add the sausage, and cook until browned. Transfer to a bowl.
  • Add one tablespoon of the the oil, plus the butter or ghee. When shimmering, add the aromatics (onions through mushrooms) and saute until soft, about 8 minutes.
  • Scoot the veggies to one side and add the remaining oil to the cleared side. Add the spices (chili powder through cumin) and 1 teaspoon kosher salt to the oil, and stir to create a paste. Mix into the vegetables. Add a splash of chicken broth if the mixture is too dry. Sprinkle the masa over the vegetables, if using, and stir.
  • Return the sausage to the pot, and add the tomato sauce, diced tomatoes, broth, herbs, sugar, and Worcestershire sauce. Mix well. Increase heat slightly and bring the soup to a gentle boil.
