CHICKEN CAESAR PIZZA

1 tube (13.8 ounces) refrigerated pizza crust
1 tablespoon olive oil
1 pound boneless skinless chicken breasts, cut into 1/2-inch cubes
1-1/2 teaspoons minced garlic, divided
6 tablespoons creamy Caesar salad dressing, divided
2 cups shredded Monterey Jack cheese
1/2 cup grated Parmesan cheese
2 cups hearts of romaine salad mix
2 green onions, thinly sliced
2 plum tomatoes, chopped

Steps:

  • Preheat oven to 400°. Unroll pizza crust and press to fit into a greased 15x10x1-in. baking pan, pinching edges to form a rim. Bake 10 minutes or until edges are lightly browned., Meanwhile, in a large skillet, heat oil over medium-high heat. Add chicken and 1/2 teaspoon garlic; cook and stir until chicken is no longer pink. Remove from heat; stir in 2 tablespoons salad dressing. , Spread crust with 3 tablespoons salad dressing; sprinkle with remaining garlic. Top with half of the cheeses and all of the chicken. Sprinkle with remaining cheeses. Bake for 10-15 minutes or until crust is golden brown and cheese is melted., In a small bowl, toss salad mix and green onions with remaining dressing. Just before serving, top pizza with salad and tomatoes.

Number Of Ingredients 9

2 13.8-ounce cans premade pizza crust dough
4 tablespoons olive oil
2 teaspoons minced garlic
2 cups shredded mozzarella cheese (about 8 ounces)
2 cups shredded cheddar cheese (about 8 ounces)
1 bell pepper, cored, seeded, and cut into strips
1 red onion, sliced vertically
3 boneless, skinless chicken breast halves, grilled and diced
6 slices bacon, cooked until crisp and crumbled

Steps:

  • Preheat the oven to 350°F.
  • Roll the pizza dough out and fit onto two 15-inch pizza pans. Drizzle 1 tablespoon of olive oil and 1 teaspoon of garlic on each pizza crust, followed by 1/2 cup each of the mozzarella cheese and 1/2 cup of the cheddar cheese. Scatter half of the bell pepper, sliced onion, chicken, and bacon on top of the cheeses.
  • Sprinkle another 1/2 cup mozzarella cheese and 1/2 cup cheddar cheese over each pizza and drizzle each pizza with 1 tablespoon more of olive oil. Bake the pizzas for 20 to 25 minutes, or until the crusts are lightly browned. Slice each pizza into 8 pieces.

I love making up new pizzas. Here's my most recent! Spaghetti sauce or plain tomato sauce can also be used. I happened to have some farmers market garlic cheddar that I used but any of your favorite cheeses will work. And...I love using the rotisserie chickens from the grocery store, cooked and shredded up!

pizza dough, Pillsbury
1 1/2 cups pizza sauce, Ragu
1/2 cup barbecue sauce
2 cups cooked chicken, shredded
1 1/2 cups cheddar cheese, shredded
mozzarella cheese, sliced
tomatoes, thinly sliced
salt
pepper

Steps:

  • Spread dough out on pizza sheet.
  • Warm pizza sauce with BBQ sauce for a couple min on stovetop.
  • Spread sauce mixture on dough.
  • Add chicken and cheeses.
  • Top with the tomato slices.
  • Salt & Pepper.
  • Cook pizza per directions on package, usually 10-12 minutes.

1/2 cup ranch dressing (I prefer ranch with bacon)
1 tomatoes, seeded and diced
1/4 cup green onion, chopped with tops
1 cup shredded mozzarella cheese
1 cup shredded cheddar cheese
8 ounces boneless skinless chicken breast halves, diced
1 teaspoon salt (to taste)
1 teaspoon pepper (to taste)

Steps:

  • Preheat oven to 425°F.
  • Lightly spray 8x12-inch cooking pan with vegetable oil cooking spray.
  • Unroll dough and press into prepared pan.
  • Bake crust 7 minutes or until it turns slightly brown.
  • Remove from oven.
  • Spread dressing over partially baked crust.
  • Sprinkle wit mozzarella cheese, tomatoes, green onions, chicken and cheddar cheese.
  • Return to oven for twenty minutes or until cheese has melted.
  • My kids love this!
