This is my family recipe for Chicken Katsu - Japanese style fried chicken. Can also be used to make Tonkatsu, just use pork cutlets instead of chicken. Serve with white rice and tonkatsu sauce.

4 skinless, boneless chicken breast halves - pounded to 1/2 inch thickness
salt and pepper to taste
2 tablespoons all-purpose flour
1 egg, beaten
1 cup panko bread crumbs
1 cup oil for frying, or as needed

Steps:

  • Season the chicken breasts on both sides with salt and pepper. Place the flour, egg and panko crumbs into separate shallow dishes. Coat the chicken breasts in flour, shaking off any excess. Dip them into the egg, and then press into the panko crumbs until well coated on both sides.
  • Heat 1/4 inch of oil in a large skillet over medium-high heat. Place chicken in the hot oil, and cook 3 or 4 minutes per side, or until golden brown.

2 quarts brown sugar
1/2 quart white sugar
2 quarts soy sauce, such as Aloha
Freshly ground black pepper
5 ounces minced garlic
1/2 gallon deep-frying cream-based oil
3 to 5 pounds boneless skin-on chicken thighs
1 pound all-purpose flour mixed with garlic powder, for dusting
Steamed white rice
Tuna macaroni salad
Avocado slices
Sliced green onions
Homemade Garlic Aioli, recipe follows
Furikake
Hawaiian Tangy Chili Peppa Watah, recipe follows
3 large eggs
3 large egg yolks
1 ounce sweet chili sauce
1 ounce minced garlic
1 ounce lemon juice
1 quart soybean oil
Garlic salt
Ground black pepper
1 quart apple cider vinegar
3 ounces sweet chili sauce
2 ounces sriracha
1 ounce garlic cloves
1 ounce sea salt
8 Hawaiian chile peppers

Steps:

  • For the sweet and savory sauce: Combine the brown sugar, white sugar, soy sauce and a sprinkle of black pepper in a braising pan with 4 inch sides. Whisk to dissolve, and then bring to a boil over high heat. Boil for 2 minutes. Let cool to room temperature, then whisk in the garlic.
  • For the fried chicken: Preheat the frying oil in a commercial deep fryer to 350 degrees F.
  • Dust the chicken thighs in the flour-garlic powder mixture. Place in the deep fryer until crispy golden brown, 12 to 15 minutes. Let the fried chicken drain in the deep fryer basket for 2 to 3 minutes.
  • Submerge the fried chicken in the sweet and savory sauce for 2 minutes. Pull the chicken out of the sauce and cut in half.
  • Served the fried chicken with steamed white rice and tuna macaroni salad on a bed of fresh avocado. Garnish with green onions, homemade garlic aioli and a confetti of furikake. Serve with our famous Hawaiian tangy chili peppa watah in a ramekin.
  • Combine the eggs, egg yolks, chili sauce, garlic and lemon juice in a large mixing bowl or bain marie. Mix with an immersion blender. Add the soybean oil gradually and blend for 2 minutes. Season with garlic salt and pepper to your taste.
  • Combine the vinegar, chili sauce, sriracha, garlic, salt and chile peppers in a large bowl. Use an immersion blender to incorporate the ingredients for 3 minutes. Chill for better results.

CHICKEN KATSU CURRY

Curry was introduced to Japan by the British more than a century ago, and has become a favorite dish to make at home. This recipe combines a rich curry sauce with a crispy, fried chicken cutlet. Perfect to serve with steamed Japanese rice and radish pickles. Serve with steamed Japanese rice, red and yellow daikon pickles, tonkatsu sauce, soft-boiled eggs, and Japanese 7-spice seasoning.

1 tablespoon oil
2 medium onions, chopped
3 medium potatoes, chopped
2 medium carrots, chopped
3 ½ cups water, or as needed
1 (3.5 ounce) container curry sauce mix (such as S&B® Golden Curry®)
1 tablespoon ketchup
1 tablespoon Worcestershire sauce
1 tablespoon apricot jam
1 tablespoon soy sauce
1 teaspoon curry powder
4 (5 ounce) skinless, boneless chicken breast halves
kosher salt and ground black pepper to taste
¼ cup all-purpose flour
1 large egg, beaten, or as needed
1 cup panko bread crumbs
½ cup peanut oil for frying, or as needed

Steps:

  • Heat oil in a pot over medium-high heat. Add onions to the hot oil and fry until soft and starting to caramelize, about 8 minutes. Add potatoes and carrots. Pour in water and bring to a boil. Reduce heat to low, cover, and cook until potatoes are soft, about 45 minutes.
  • Remove from the heat and add curry sauce mix; stir well until all pieces are dissolved. If you'd like to add seasonings, add ketchup, Worcestershire, jam, and soy sauce. Simmer for 10 to 15 minutes, or longer if you'd like it thicker.
  • While the curry is infusing, flatten the chicken breasts with a kitchen mallet to a thickness of 1/4 inch. Season with salt and pepper. Drench in flour, then egg, and then coat generously with panko bread crumbs.
  • Heat oil in a separate saucepan to 355 degrees F (180 degrees C). Carefully lower breaded cutlets into the hot oil and fry until golden brown, about 3 minutes per side.
  • While the chicken is cooking, stir 1 teaspoon curry powder into the sauce.
  • Slice cooked chicken into strips and spoon curry sauce over top.

For chicken:
3 eggs
1 package panko
flour
garlic
salt and pepper
1/4 cup water
vegetable oil
For Tonkatsu sauce:
1/3 cup ketchup
1/4 cup soy sauce
2 tsp worcestershire sauce
1/4 tsp pepper

Steps:

  • for chicken: in three different dishes mix flour and salt, pepper and garlic salt to taste. In the second bowl whisk the eggs, water and more garlic salt. In the third dish mix panko and more garlic salt. Heat the oil in a frying pan. Dip boneless chicken breast into the egg, then flour, then egg then panko. Deep fry until golden brown. For the sauce: Combine all ingredients in a small sauce pan and heat to simmer. serve with white steamed rice and shredded cabbage.

Katsu is a Japanese method of breadcrumbing chicken- this version is served with a rich curry sauce

4 skinless chicken breasts
1 large egg, beaten
8 tbsp finely crushed cornflakes or panko crumbs
2 garlic cloves, crushed
1-2 tbsp korma paste
1 tbsp soy sauce
4 tbsp ketchup
2 tbsp honey
2 tbsp cornflour

Steps:

  • Heat oven to 200C/180C fan/gas 6. Dip the chicken in the egg, then coat in the cornflakes or crumbs. Space the chicken out on a non-stick baking tray and cook for 15-20 mins or until cooked through.
  • Put the remaining ingredients in a pan. Pour in 500ml water and heat, stirring, until boiling and thickened. Cover and leave to simmer for 5 mins.
  • Spoon some sauce onto 4 plates, slice the chicken breasts and place on top. Great served with some rice and soya beans with finely sliced red chilli.
