Two 3 1/2- to 4-pound chickens, cut in eighths
Kosher salt and freshly ground black pepper
All-purpose flour
1/2 cup good olive oil
8 whole garlic cloves
1 1/2 pounds assorted wild mushrooms, such as porcini and cremini, stems removed and (1 1/2-inch) diced
8 sprigs fresh thyme, tied with kitchen string
1/4 cup dry sherry
1 tablespoon minced garlic (3 cloves)
2 cups white wine, such as Pinot Grigio
2 cups good chicken stock, preferably homemade
3 tablespoons unsalted butter, at room temperature

Steps:

  • Preheat the oven to 325 degrees.
  • Pat the chicken dry with paper towels and sprinkle both sides liberally with salt and pepper. Place 1/2 cup flour in a bowl and dredge the chicken in the flour. In a large (12-inch) ovenproof pot such as Le Creuset, heat the oil. Add the chicken in three batches (don't crowd them!) and brown lightly over medium-high heat for 3 to 5 minutes on each side. Remove the chicken to a plate and continue until all the chicken is browned.
  • Add the whole garlic cloves, mushrooms, and thyme to the pot and cook over medium heat for 5 minutes, stirring occasionally. Add the sherry and cook for 1 minute, scraping up the brown bits. Add the minced garlic and cook for 2 more minutes. Add the wine, chicken stock, 1 tablespoon salt, and 1 teaspoon pepper and bring to a simmer. Add the chicken (large pieces first), cover, and place in the middle of the oven for 30 to 35 minutes, until the chicken is cooked through (about 165 degrees on an instant-read thermometer).
  • Remove the chicken to a bowl and discard the thyme. With a fork, mash together the butter and 1/4 cup flour and add it to the sauce. Simmer, stirring constantly, over medium heat for 5 minutes, until slightly thickened. Season to taste (it should be highly seasoned), put the chicken back in the sauce, and serve hot.

These are not your average blintzes. Elegant and savory, they are as good for a midnight supper as they are for brunch. Though the recipe is a bit complex, it can be parceled out into a series of small, manageable chores; both the pancakes and filling can be prepared up to 2 days ahead, and once the blintzes are assembled, they can wait in the fridge as well. The final step of browning and crisping the blintzes in butter is almost no work at all.

130 grams all-purpose flour (1 cup)
1/2 teaspoon salt
2 large eggs, lightly beaten
1 cup whole milk, more if needed
2 tablespoons melted butter, for frying pancakes
1 whole chicken, about 3 1/2 pounds, or use 2 pounds chicken thighs
Salt and pepper
1 small bunch thyme, plus 2 teaspoons chopped thyme leaves
2 tablespoons olive oil
8 ounces chanterelle mushrooms, roughly chopped
3 small garlic cloves, minced
1/2 ounce dried black trumpet mushrooms, soaked in warm water 10 minutes, rinsed, drained and patted dry
4 tablespoons butter, more as needed
1 medium onion, finely diced
2 cups finely diced leeks
2 tablespoons all-purpose flour
1 cup hot chicken broth
1/4 cup white wine
1/2 cup crème fraîche, for garnish
2 tablespoons finely slivered chives

Steps:

  • Make the batter: Put flour and salt in medium mixing bowl. Whisk in eggs and milk and beat until smooth. Refrigerate for at least 30 minutes (overnight if you wish). Thin with a little more milk if necessary; mixture should have the consistency of heavy cream.
  • Put an 8-inch skillet or crepe pan over medium high heat. Brush lightly with melted butter, then pour in a scant 1/4 cup batter. Tilt pan and swirl batter so it fills pan to maximum circumference. Fry pancake on one side only until lightly browned. Lay pancakes browned side down on a plate, stacking pancakes as you go. Continue until all batter is used. Pancakes can be made ahead and kept wrapped in refrigerator for up to 2 days.
  • Make the filling: Heat oven to 400 degrees. Season chicken inside and out with salt and pepper. Put thyme bunch in cavity. Place on a rack in a roasting pan and roast breast side down for about 1 hour, until juices run clear at thickest part of thigh when pierced with skewer. Let cool, then tear meat from carcass in large chunks. Remove skin and bones (you can reserve for making broth). Chop meat in rough 1/2-inch cubes. Set aside.
  • Put oil in a skillet over medium high heat. Add chanterelles and season with salt and pepper. Cook for about 2 minutes until lightly colored. Add garlic and chopped thyme leaves, stir and cook 1 minute more. Remove chanterelles from pan with a slotted spoon. Add black mushrooms to pan and season lightly with salt. Lower heat and cook gently for 2 minutes. Mix half the black mushrooms with all of the chanterelles; cut remaining black mushrooms into strips and reserve for garnish.
  • Melt 2 tablespoons butter in wide skillet. Add onion and cook over medium high heat, until softened, about 2 minutes. Add leeks, season with salt and pepper and cook, stirring, for another 2 minutes. Add chicken and mushroom mixture and stir to combine. Sprinkle with flour and stir again. Add broth and wine and let simmer for 2 minutes. Taste and adjust seasoning, then let cool completely and refrigerate for 1 hour or up to 1 day ahead.
  • Assemble blintzes: Lay pancakes browned side up on a board. Fill each pancake with about 3 tablespoons chicken mixture. Fold pancake around filling to make a rectangular package. Place packages seam side down on a baking sheet. Packages can be covered and refrigerated for up to 1 day.
  • In a wide skillet over medium heat, working in batches, gently fry blintzes on both sides with remaining 2 tablespoons butter for 2 minutes on each side, until crisp and golden. (You may need to add a bit more butter as you go.) Keep fried blintzes warm in a low oven. Serve 2 or 3 blintzes per person on warmed plates. Dab each blintz with a spoonful of crème fraîche and sprinkle with chives. Garnish with reserved black mushrooms, warmed through.

A good roasted chicken is a simple pleasure, but a braised chicken dish is always more interesting. Here, dried wild mushrooms, smoked bacon and red wine perfume the sauce to give these chicken legs depth and character, with a flavor nearly similar to a game bird. Using turkey broth makes this braise even more heady. For a quick, concentrated broth, simmer 2 pounds of meaty turkey wings with 6 cups water for about an hour. Finding a dried wild mushroom is not like hunting for its fresh counterpart in the forest. Most Italian delis and nearly all supermarkets sell little packets of dried wild mushrooms.

1 ounce dried porcini
1 ounce dried morels
6 large chicken legs (about 4 pounds)
Salt and pepper
4 tablespoons unsalted butter (1/2 stick)
2 cups finely diced onion
3 ounces thick-cut bacon, sliced crosswise 1/4-inch wide
1 tablespoon tomato paste
2 garlic cloves, minced
Pinch of cayenne
2 tablespoons all-purpose flour
1 cup red wine
4 cups turkey or chicken broth
1 bay leaf
1 large thyme sprig
1 1/2 pounds small yellow-fleshed potatoes
3 tablespoons chopped parsley

Steps:

  • Rinse porcini with warm water (they are often sandy), then place in a small bowl, cover with hot water and soak until softened, about 15 minutes. In a separate bowl, soak the morels in hot water.
  • Heat oven to 400 degrees. Place chicken legs on a baking sheet in one layer. Season generously on both sides with salt and pepper. Roast, uncovered, for about 20 minutes, or until nicely browned. Remove and set aside. Turn oven to 350 degrees.
  • Meanwhile, make the sauce: Melt 2 tablespoons butter in a Dutch oven or heavy-bottomed pot over medium-high heat. Add onions and cook, stirring, until softened and beginning to color.
  • Add bacon and tomato paste, stir to incorporate with onions, and cook for about 1 minute, then stir in garlic and cayenne. Sprinkle with flour and stir to coat. Add wine and cook for 1 minute, then whisk in turkey broth and bring to a simmer. The sauce will thicken slightly. Add bay leaf and thyme sprig. Drain porcini and morels and add to sauce.
  • Submerge browned chicken legs in sauce and bring to a brisk simmer. Cover and transfer pot to oven. Bake for about 1 hour, until chicken is tender. Remove from oven and keep covered.
  • While chicken bakes, make the potatoes: Put potatoes in a saucepan and cover with 1 inch of water. Add 1 teaspoon salt and bring to a boil over high heat. Reduce to a brisk simmer and cook until tender, about 15 minutes.
  • Drain potatoes and let cool. Peel potatoes with a paring knife and return to saucepan. (Alternatively, potatoes may be peeled before cooking, or you may opt to leave skins on.) Add remaining 2 tablespoons butter and 1 cup water. Bring to a simmer over high heat to warm potatoes through, then set aside, covered.
  • To serve, divide legs among 6 warm plates. Spoon sauce and mushrooms over each serving. Sprinkle parsley over potatoes and place a few potatoes on each plate. Transfer remaining potatoes and buttery juices to a serving dish. Serve remaining sauce in a gravy boat if desired.

This comforting one-pot dinner is reminiscent of a rich French onion soup, but made in less time and with lighter ingredients. Cooking the onions in a hot, dry pan forces them to release their moisture, so that they shrink and become silky and sweet in 30 minutes. Serve everything directly from the pan, with some crusty bread to soak up all the juices, or shred the chicken and pile it on top of buttered noodles. For something green, stir in some spinach to wilt at the end or serve alongside a simple green salad or roasted broccoli.

5 tablespoons olive oil
2 tablespoons plus 2 teaspoons sherry vinegar
2 teaspoons honey
1 teaspoon Dijon mustard
1/4 teaspoon red-pepper flakes

1 1/2 pounds boneless, skinless chicken thighs, cut into 3-inch pieces
2 medium yellow onions, thinly sliced (about 4 cups)
3/4 pound cremini mushrooms, stems removed and thinly sliced (about 4 cups)
1/2 cup fresh flat-leaf parsley or dill leaves and fine stems, roughly chopped
1/4 cup grated Parmesan or pecorino (optional)
Bread or cooked pasta, for serving

Steps:

  • In a large mixing bowl, combine 2 tablespoons oil, 2 tablespoons vinegar, the honey, mustard, red-pepper flakes and 1 teaspoon salt; whisk until smooth. Pat the chicken dry and season with salt and pepper, then add to the mixture, coating it well. Set aside at room temperature, stirring it once while you make the onions.
  • Heat a 12-inch cast-iron or heavy skillet over medium-high until very hot, 1 1/2 to 2 minutes, then add the onions in an even layer. Season with salt, then cook, mostly undisturbed, for 4 minutes more, stirring every minute or so. Add the mushrooms, season with salt, and stir to combine. (It will look crowded, and that's OK.) Allow to cook mostly undisturbed until the mushrooms shrink and start to brown, about 4 minutes, stirring every minute or so.
  • Stir in the remaining 3 tablespoons olive oil and allow the onions to cook until they start to color, stirring and lowering the heat as necessary to avoid burning, about 2 minutes. Push the onions and mushrooms to the edges of the skillet, then add the chicken pieces to the center. Pour any remaining marinade (there will be very little) over the onions and mushrooms. Cook undisturbed for 4 to 5 minutes, then combine the chicken and vegetables and cook, stirring occasionally, until the chicken is cooked through, about 10 minutes more. (Reduce the heat to medium if the onions look like they are burning at any point.)
  • Add the remaining 2 teaspoons sherry vinegar, stirring and scraping up anything on the bottom of the skillet. Season to taste with salt.
  • Remove from the heat and top with the parsley and cheese, if using. Serve with bread or pasta.

25g dried cep
50g butter , softened
small handful tarragon , leaves torn
4 chicken breasts , skin on
1 tbsp olive oil
150ml white wine
100g crème fraîche

Steps:

  • Soak the mushrooms in 300ml hot water for 10 mins until plump. Drain, reserving the soaking liquid, and chop. Mix with the butter and half the tarragon, then stuff under the skin of the chicken.
  • Heat oven to 200C/180C fan/gas 6. Heat the oil in a large flameproof dish, add the chicken and brown on all sides. Transfer to the oven for 20 mins. Remove from the oven; the chicken should be cooked by now. Remove from dish and keep warm.
  • Return the dish to the heat, add the wine and simmer until nearly reduced. Add the reserved mushroom liquid and simmer to reduce by half. Stir in the crème fraîche and simmer for 1-2 mins more. Add the remaining tarragon and season. Return the chicken to the dish, heat through for 1 min more, then serve.

1 cup boiling water
1/2 oz dried porcini mushrooms
1 tablespoon butter
1 tablespoon olive oil
1 cut-up broiler-fryer chicken (3 to 3 1/2 lb)
2 large onions, chopped (2 cups)
5 cloves garlic, finely chopped
6 medium button mushrooms, sliced
2 medium carrots, chopped (1 cup)
2 medium stalks celery, chopped (1 cup)
2 dried bay leaves
2 fresh thyme sprigs or 1 teaspoon dried thyme leaves
5 tablespoons chopped fresh parsley
1 cup chicken broth
1/2 cup dry white wine or chicken broth
1 can (14.5 oz) diced tomatoes, undrained
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper

Steps:

  • Adjust oven rack to middle position. Heat oven to 300°F.
  • In small bowl, pour boiling water over dried mushrooms. Let stand 30 minutes to allow mushrooms to rehydrate (if mushrooms float to surface, place small saucer in bowl to keep them submerged). Use slotted spoon to remove rehydrated mushrooms from water; set aside. Reserve mushroom water.
  • In 4- or 5-quart ovenproof Dutch oven, heat butter and oil over medium-high heat until butter is melted. Add half of the chicken pieces and cook 6 minutes, turning occasionally, until chicken is deep golden brown (you are not cooking the chicken, just giving it color). Remove chicken from Dutch oven and place on plate. Repeat with remaining chicken.
  • Reduce heat to medium and add onions and garlic. Cook 5 minutes, stirring occasionally, until soft. Add rehydrated and sliced button mushrooms, carrots, celery, bay leaves, thyme and 3 tablespoons of the parsley. Cook 5 minutes, stirring occasionally, until vegetables are softened and mushrooms give up their juices.
  • Add reserved mushroom water and heat to a simmer. Simmer uncovered 10 minutes (you are trying to concentrate the flavor of the liquid). Add chicken (along with any juices that may have accumulated on plate), broth, wine, tomatoes, salt and pepper.
  • Cover pan and place in oven. Bake 1 1/2 hours or until chicken is very tender and there is a good amount of broth. Remove and discard bay leaves and thyme sprig. Place 2 pieces chicken into each of 4 large, flat serving bowls and ladle broth over. Sprinkle with remaining 2 tablespoons parsley.

10 garlic cloves , crushed
100g butter
zest 2 lemons , juice of ½
2 thyme sprigs, leaves picked
1 whole chicken (about 1.8kg/4lb)
50ml olive oil
4 onions , quartered
85g dried mushroom
3 bay leaves
2 tbsp white wine
small bunch parsley , leaves chopped

Steps:

  • Heat oven to 180C/160C fan/gas 4. Mix together the garlic, butter, lemon zest and juice, and half the thyme. Season well.
  • Gently separate the skin from the chicken breast by easing your fingers between the two, then push as much butter mixture under the skin as possible. Rub whatever is left into the creases between the thighs and the breast.
  • Heat the oil in a large casserole dish that will fit the chicken. Add the onions, mushrooms and bay leaves, cook over a medium heat for a few mins.
  • Rub the chicken with the remaining thyme leaves and some salt and pepper. Pour the wine and 20ml warm water into the cavity of the chicken and place in the dish. Cook in the oven for 1 hr 40 mins; it will brown and steam at the same time and the juices will rehydrate the mushrooms.
  • Remove from the oven and drain any liquid from inside the chicken back into the dish. Place the chicken on a board to rest. Meanwhile, bring the juices to the boil, season to taste and stir in the chopped parsley. Serve the chicken with the mushrooms, onions and pan juices.
