My dad made this for me a while back and I loved it. Now, I found the recipe and he told me to submit it. Chicken, bananas, and coconut rum make one interesting, tasty, tropical dish. Great for Luau parties. Serve with steamed vegetables and rice.

Ingredients

½ cup butter
6 tablespoons brown sugar
1 pound skinless, boneless chicken breast halves - cut into 1 inch cubes
salt and pepper to taste
¼ cup all-purpose flour
2 small bananas, sliced
2 (1.5 fluid ounce) jiggers amaretto liqueur
¾ cup coconut-flavored rum

Steps:

Melt the butter in a large skillet over medium heat, and stir in the brown sugar. Season the chicken with salt and pepper, and toss with flour to coat. Add chicken and bananas to the skillet, and cook stirring occasionally until chicken is almost cooked through. Stir in the amaretto and rum, and heat through. Remove from the burner, and use a long match or lighter to flambe. Allow to burn until the alcohol cooks off and the flame goes out. Serve and enjoy!

Bananas Foster, a flambéed dessert of halved bananas in a syrupy rum sauce, is a New Orleans favorite that never fails to please. Don't forget the ice cream.

Ingredients

2 bananas, peeled
1 tablespoon fresh lemon juice
2 tablespoons unsalted butter
¼ cup dark brown sugar
⅛ teaspoon ground cinnamon
2 tablespoons banana liqueur
¼ cup white rum
1 pint vanilla ice cream

Steps:

Slice the bananas in half lengthwise and brush with the lemon juice. Melt the butter with the sugar in a flat chafing dish or 10-inch skillet. Add the bananas and sauté until just tender. Sprinkle with the cinnamon.
Remove from the heat and add liqueur and rum. Carefully ignite with a long match. Use a large long-handled spoon to baste the bananas with the warm liquid until the flame burns out.
Divide the ice cream among four dishes. Top each one with a banana half and some of the sauce. Serve immediately.

A delicious twist to the traditional version of Bananas Foster. It's always a hit for dinner parties and there's never a drop left. Best served over vanilla ice cream or pudding. If traditional version of Bananas Foster is preferred, just omit the Amaretto & replace with 1 oz. dark rum & 1 oz. banana liquor. This can be flambe'd at the end when adding the alcohol, however - this is only recommended for the experienced cook.

3 bananas, ripe
3 tablespoons butter
3/4 cup light brown sugar
3/4 teaspoon cinnamon
1 teaspoon vanilla extract
1 dash salt
1 1/2 ounces Amaretto

Steps:

Melt butter in pan then add bananas. Stir over medium high heat until blended.
Stir in brown sugar, cinnamon, vanilla, and salt and continue to cook, stirring constantly.
Add Amaretto, reduce heat, and stir until mixed through then remove from heat.
Serve immediately over vanilla ice cream or vanilla pudding.

Yes I mixed Chicken and Bananas with a banana foster recipe and it worked. My husband loved it. You can also add medium size shrimp already prepared to go in if you like. I serve on top of angelhair plain pasta slightly buttered or plain rice just slightly buttered. Enjoy

1 c butter softened slightly
6 Tbsp dark brown sugar
6 Tbsp light brown sugar
3 lb boneless/skinless chicken breasts cut into 1 inch cubes
salt and pepper to taste
1/2 c flour
4 bananas sliced
3 oz. amaretto liqueur
3/4 c malibu(coconut)rum

Steps:

1. This recipe goes fast so have all ingrediants ready. Melt the butter in a large skillet over medium to low heat, stir in the sugars. Season the chicken with salt and pepper(I use very little)and toss with the flour to coat. Add chicken to skillet and cook low and slow until almost cooked through. Add the bananas and stir add the amaretto and rum and stir and heat through and cook very low 15 to 20 minutes. If chicken is done already only cook 10 minutes. At this point if you wish use a long match and light the liqueur and allow to burn until alcohol cooks off (about a minute) Serve.
2. I serve over plain rice or plain angel hair pasta or just alone with a simple vegetable, bread and salad.
