STRAWBERRY AND AVOCADO CHICKEN SALAD RECIPE



Strawberry and Avocado Chicken Salad Recipe image

A tasty and healthy chicken salad recipe that you can cook in under 30 minutes

¼ cup (60ml) balsamic vinegar
3 Tbsp olive oil (extra virgin)
3 Tbsp honey
1/2 tsp sea salt
1/2 tsp pepper
1 tsp smoked paprika
1 tsp fennel seeds
2 boneless chicken breasts (skin on)
8 cups (240g) baby spinach
1 cup (150g) strawberries (hulled and quartered)
1 avocado (sliced)
1/2 red onion (sliced)
¼ cup (40g) feta cheese (crumbled)
1/4 cup (30g) hazelnuts (raw or toasted)

Steps:

  • In a small bowl, whisk the balsamic vinegar with olive oil, honey, smoked paprika, fennel seeds, salt, and pepper, until blended.
  • Place the chicken breasts in a shallow bowl and pour half of the dressing. Cover and refrigerate for 10 minutes to 2 hours.
  • Spray a grill pan or non-stick pan with cooking spray and heat to medium-high. Place the chicken breasts on the hot pan. Cook for 3 minutes then flip them. Cook for another 3 minutes, and turn. Reduce the cooking temperature to medium low and cook the chicken for 15 minutes more, turning every 5 minutes or so. Cooking time depends on the chicken's thickness, but it will be fully cooked when it hits 75C/165F degrees internal temperature. Let it rest for 5 minutes then slice it.
  • Place the spinach, strawberries and red onion in a bowl. Add the avocado, sliced chicken, and top with feta and hazelnuts.
  • Pour the remaining dressing, mix and serve immediately.

This wonderful summer salad that is a meal all in one with grilled chicken, strawberries, avocado, spinach, and romaine lettuce topped with a sweet poppy seed dressing.

½ cup olive oil
¼ cup cider vinegar
2 tablespoons honey
2 teaspoons white sugar
1 ½ teaspoons poppy seeds
½ teaspoon salt
½ teaspoon ground dry mustard
½ teaspoon grated onion
¼ cup Italian-style salad dressing
3 tablespoons teriyaki sauce
2 medium boneless chicken breasts
2 cups baby spinach, torn into bite-sized pieces
2 cups torn romaine lettuce
2 cups hulled and sliced strawberries
1 ripe but firm avocado, pitted and sliced into bite-sized pieces
½ cup toasted pecans

Steps:

  • Combine olive oil, vinegar, honey, sugar, poppy seeds, salt, mustard, and grated onion in a blender. Transfer dressing to a bowl or jar and refrigerate at least 1 hour before serving.
  • Combine Italian dressing and teriyaki sauce in a sealable container and add chicken. Seal and marinate at least 30 minutes to 1 hour before grilling.
  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Remove chicken from marinade and grill until juices run clear, 5 to 8 minutes per side. Remove from heat, let cool about 10 minutes, and cut into bite-sized pieces.
  • Toss grilled chicken, spinach, and romaine lettuce together in a large serving bowl. Gently stir in strawberries and avocado. Refrigerate until ready to serve.
  • Top salad with dressing and pecans when serving.

I made this recently more than once, it is absolutely fantastic! The dressing needs to chill for 1 hour before using.

1/2 cup purchased poppy seed dressing
1/4 cup mayonnaise
1 -2 teaspoon sugar (optional)
3 cups chopped cooked chicken
2 celery ribs, sliced
1 pint fresh strawberries, sliced
1 avocado (cut into about 3/4-inch to 1-inch cubes)
1/2 red onion, thinly sliced
1/2 cup slivered almonds, toasted
1 (10 ounce) package mixed salad greens

Steps:

  • In a bowl whisk together the poppy seed dressing with the mayonnaise until blended add in sugar if desired. Chill dressing for a minimum of 1 hour.
  • In a large glass bowl toss together chicken, celery, sliced strawberries, avocado, red onion slices, almonds and mixed greens.
  • Pour the dressing over and toss to combine.
  • Garnish the inside edges of the bowl with avocado slices and strawberries if desired.
  • Serve immediately.
  • Delicious!
