CHICKEN SALAD WITH PINE NUTS AND RAISINS



Chicken Salad With Pine Nuts and Raisins image

This chicken salad recipe with pine nuts and raisins has a honey mustard style dressing and is topped with onions and croutons. If you don't have olive oil spray, you can just use any non-stick cooking spray.

1 ½ cups cubed French bread
½ cup sour cream
⅓ cup mayonnaise
2 tablespoons lemon juice
2 teaspoons Dijon-style prepared mustard
2 teaspoons honey
1 tablespoon chopped fresh rosemary
⅛ teaspoon salt
¼ teaspoon ground black pepper
1 pound skinless, boneless chicken breasts
2 stalks celery, chopped
⅓ cup golden raisins
1 tablespoon lemon zest
6 leaves romaine lettuce
6 leaves Radicchio, raw
2 teaspoons lemon juice
1 teaspoon olive oil
3 slices red onion
⅓ cup pine nuts, toasted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a baking sheet with olive oil or non-stick cooking spray.
  • Prepare the croutons by spreading bread cubes over prepared baking sheet. Lightly spray cubes with oil or cooking spray and bake for 20 minutes or until golden brown. Remove from oven and cool.
  • Prepare the dressing by whisking together the sour cream, mayonnaise, lemon juice, mustard, honey, rosemary, salt and pepper. Cover and refrigerate until ready to serve.
  • Prepare the salad by placing the chicken in a pan and cover with water. Bring just to a boil, cover and reduce the heat to medium-low. Cook 10 minutes, or until chicken is cooked through. Remove from heat, drain and cool; dice or pull into shreds.
  • Combine the chicken with the celery, raisins and lemon peel.
  • When ready to serve, stir together the lemon juice and olive oil. Tear the lettuce into small pieces and toss with the lemon and oil mixture. Divide between plates and top with the chicken salad. Garnish with onion rings, a sprinkling of pine nuts and the croutons.

This recipe uses canned chicken, but if you want to use leftover chunked chicken or turkey, it 's even better. A dab of sweet relish is a nice taste surprise, and we love the apples, pecans, and raisins. The creamy salad dressing finishes it off nicely.

1 large apple, cored and diced
⅔ cup raisins
½ stalk celery, chopped
½ cup chopped pecans
3 tablespoons plain fat-free Greek yogurt
1 teaspoon sweet pickle relish
salt and ground black pepper to taste

Steps:

  • Mix chicken, apple, raisins, celery, pecans, yogurt, and relish together in a bowl; season with salt and pepper.
  • Cover bowl with plastic wrap and refrigerate until chilled, at least 30 minutes.

What to do with leftover chicken? This recipe is from my heros at America's Test Kitchens. Since the chicken was already cooked, it was just a matter of putting together the sauce, which takes only minutes. I used dried cranberrys in place of the raisins. We used the salad in pita bread. Now I'm posting for safekeeping and to provide an option to everyone else asking what to do with leftover chicken. I'm posting the instructions as published in Cook's magazine, which include cooking the chicken.

2 whole bone-in skin-on chicken breasts (large, at least 1 1/2 pounds each)
1 tablespoon vegetable oil
table salt
2 medium celery ribs, cut into small dice
2 medium scallions, white and green parts, minced
2 tablespoons minced fresh cilantro leaves or 2 tablespoons fresh parsley leaves
3/4-1 cup mayonnaise
1 tablespoon lemon small lemon, juice of
6 tablespoons golden raisins
2 teaspoons curry powder
1 tablespoon honey
table salt & fresh ground pepper

Steps:

  • Adjust oven rack to middle position and heat oven to 400 degrees. Set breasts on small, foil-lined jelly roll pan. Brush with oil and sprinkle generously with salt. Roast until meat thermometer inserted into thickest part of breast registers 160 degrees, 35 to 40 minutes. Cool to room temperature, remove skin and bones, and shread meat into bite-sized pieces (about 5 cups). (Can be wrapped in plastic and refrigerated for 2 days.).
  • Mix all salad ingredients (including chicken) together in large bowl, including salt and pepper to taste. Serve. (Can be covered and refrigerated overnight.).

1 medium apple (whatever is your favorite)
1/4 cup raisins (you could also use any dried fruits cranberry, blueberry etc.)
1 cup chicken, cubed (you can use the can or just a medium chicken breast)
1 tablespoon mayonnaise (I prefer miracle whip)
1/4 cup raspberry pecan vinaigrette (or your favorite salad dressing)

Steps:

  • - cut apple into 1/2" cubes.
  • - cut chicken into 1" cubes.
  • - mix apples, raisins, and chicken together.
  • - In a separate bowl whisk together Raspberry vinaigrette and mayonnaise until smooth.
  • - pour over the chicken mixture and toss to coat everything.

3 tablespoons extra-virgin olive oil
4 boneless, skinless chicken breasts (about 1 1/2 pounds total)
Salt and freshly ground black pepper
1/2 cup mayonnaise, plus extra, if you like, for spreading
1 teaspoon curry powder
1/2 lemon, juiced
1/4 cup chopped, blanched almonds, toasted
1/4 cup raisins
A handful fresh basil leaves, torn
8 slices good-quality, dense white bread such as Tuscan

Steps:

  • Preheat the oven to 400 degrees F.
  • Heat the oil in a large ovenproof skillet over medium-high heat until smoking. Sprinkle the chicken breasts on both sides with salt and pepper. Put them in the pan in a single layer, and brown them 2 minutes on each side. Put the skillet in the oven and roast until the chicken is just cooked through, about 15 minutes. Remove from the oven and cool.
  • Chop the cooled chicken and put it into a large bowl. Add the rest of the ingredients and toss. Season with salt and pepper.
  • Spread 4 bread slices with mayonnaise, if you like, and spread with the curried chicken. Top with another slice of bread and serve.

1 large green bell pepper
3 scallions, thinly sliced
2 tomatoes, medium, peeled, seeded, cubed
1/2 cup dark raisin
1 1/2 cups cooked chicken, diced
2 tablespoons stuffed green olives, sliced
1/4 cup virgin olive oil
2 tablespoons lemon juice
1 garlic clove, minced
1/4 teaspoon salt
1/8 teaspoon ground pepper

Steps:

  • Char green pepper in broiler, turning frequently, then place in paper bag & let stand 10 minutes.
  • Hold pepper under running water & rub off the skin, before cutting the flesh of the pepper into 1" squares. Discard seeds & stem.
  • In a salad bowl, combine green pepper, scallions, tomatoes & raisins, then mix in the chicken.
  • Mound chicken mixture in center of bowl & sprinkle with olives.
  • For the dressing, combine the last 5 ingredients & pour over the chicken salad.
  • Serve at room temperature or chill before serving.
