STRAWBERRY-BANANA CEREAL TREATS

Strawberry-Banana Cereal Treats image

These sweet and tangy cereal treats get a flavor punch from freeze-dried fruit (often sold in pouches at specialty food stores).

Categories     dessert

Time 50m

Yield 24 servings

Number Of Ingredients 8

4 tablespoons unsalted butter, plus more for greasing
One 10-ounce bag mini marshmallows
1 tablespoon honey
1 teaspoon pure vanilla extract
Kosher salt
6 cups toasted whole-grain oat cereal, such as Cheerios
1 1/2 cups freeze-dried strawberries, crushed
1 1/2 cups freeze-dried bananas, crushed

Steps:

  • Line a 9-by-13-inch baking dish with enough foil so that there's a 2-inch overhang on all sides. Grease the foil with butter.
  • Melt the butter in a large pot over medium heat. Add the marshmallows and honey and cook, stirring occasionally, until the marshmallows melt completely, about 5 minutes. Remove from the heat and stir in the vanilla and a pinch of salt. Add the cereal and 1 cup each of the crushed strawberries and bananas. Stir with a rubber spatula, making sure to scrape up the bottom, until the cereal is completely coated. Transfer to the prepared baking dish and pat down into an even layer. Scatter the remaining crushed fruit on top and press into the top (use the bottom of a measuring cup to help). Let sit at room temperature until firm, about 30 minutes.
  • Cut into 24 bars. Store at room temperature in an airtight container for up to 3 days.

CEREAL TREATS I

Cereal Treats I image

This version has no chocolate topping, but it would be easy to melt chocolate chips and spread them over the top. We have a nut allergy in our family and I omit the peanut butter and substitute 1/2 cup of butterscotch chips melted with the margarine instead.

CRISPY RICE CEREAL-COATED FRIED CHICKEN

Crispy Rice Cereal-Coated Fried Chicken image

Rice cereal is not just for breakfast. It also happens to be a great coating for fried chicken. (Just make sure you don't buy the frosted rice cereal.)

Provided by Kardea Brown

Categories     main-dish

Time 1h15m

Yield 4 servings

Number Of Ingredients 13

Vegetable or peanut oil, for frying
2 cups all-purpose flour
1 tablespoon Miss Brown's House Seasoning, recipe follows
1/2 cup whole milk
3 large eggs
4 cups crispy rice cereal, coarsely crushed
Kosher salt and freshly ground black pepper
8 chicken drumsticks (about 2 1/2 pounds)
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon sweet paprika
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper

Steps:

  • Pour the oil halfway up the sides of a very large cast-iron skillet. Heat the oil to 350 degrees F.
  • Line a rimmed baking sheet with parchment paper. Line a second rimmed baking sheet with a cooling rack. While the oil heats, combine the flour and House Seasoning in a shallow dish. Whisk together the milk and eggs in a separate shallow dish. Place the crushed cereal in a third shallow dish. Season the cereal with salt and pepper.
  • Sprinkle the drumsticks with salt and pepper. Dip the chicken in the seasoned flour and coat completely. Dip in the egg mixture, then dredge in the rice cereal, pressing to coat evenly. Place on the parchment-lined baking sheet.
  • Fry the chicken, in batches, in the hot oil until golden brown and an instant-read thermometer inserted in the thickest portion (avoiding bone) registers 165 degrees F, 18 to 20 minutes. Remove to the wire rack to drain.
  • Stir together the garlic and onion powders, paprika, salt and pepper in a small bowl. Store in an airtight container.

Time 55m

Yield 4

Number Of Ingredients 6

4 cups crispy rice cereal squares (such as Rice Chex®)
1 ½ teaspoons garlic salt
1 ½ teaspoons seasoned salt

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C); grease a 9x12 inch baking dish.
