My best friend's mom made these when we were kids. They are the best cookies I have ever eaten, and I have yet to screw up a batch! Warning: you may be tempted to eat the entire recipe!!

Ingredients

1 cup butter
1 ½ cups white sugar
2 eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
⅔ cup unsweetened cocoa powder
¾ teaspoon baking soda
½ teaspoon salt
2 cups peanut butter chips

Steps:

Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a medium bowl, cream together the butter and sugar. Stir in the eggs and vanilla. Combine the flour, cocoa, baking soda and salt, stir into the creamed mixture. Finally, fold in the peanut butter chips. Drop cookies by heaping teaspoonfuls onto the prepared cookie sheets.
Bake for 8 to 10 minutes in the preheated oven, until set. Cool on wire racks.

Ingredients

1 1/2 cups firmly-packed brown sugar
2/3 cup Crisco shortening
1 tablespoon water
1 teaspoon vanilla
2 eggs
1 1/2 cups all-purpose flour
1/3 cup cocoa
1/4 teaspoon baking soda
1/2 teaspoon salt
2 cups peanut butter cups, coarsely chopped

Steps:

Pre-heat oven to 375F or 190 degrees C.
Place sheets of foil on the countertop for cooling cookies.
Combine brown sugar, shortening, water and vanilla in a large bowl.
Beat at medium speed with an electric mixer until well blended.
Beat eggs into creamed mixture.
Combine flour, cocoa, baking soda and salt.
Mix into the creamed mixture at low speed just until blended.
Stir in the peanut butter cups.
Drop by rounded measuring tablespoonfuls 2 inches apart onto ungreased baking sheets.
Bake one baking sheet at a time at for 7 to 9 minutes, or until cookies are set.
Be careful not to overbake the cookies.
Cool 2 minutes on the baking sheet and then remove to the foil to cool completely.
