HOMEMADE SOFT PRETZEL RECIPE
Best ever homemade soft pretzel recipe! These are so chewy and good- perfect with a sprinkling of salt and a dunk in grainy mustard.

Steps:
- Stir the warm water, brown sugar, and dry yeast together in a small bowl.
- Place the bread flour & salt in a large mixing bowl and whisk together.
- When the yeast mixture looks foamy, stir it into the flour mixture.
- Stir in the beer until a stiff dough forms.
- Knead the dough for 10 minutes, or until it feels silky and elastic.
- Place the dough in an oiled bowl, cover with plastic wrap, and allow to rise in a warm place for 90 minutes, or until doubled in bulk.
- Punch down the dough, and divide it into 8 equal portions.
- Roll each portion of dough into a rope about 20-inches long.
- Twist into a pretzel shape and place on an oiled baking sheet.
- Cover loosely with plastic wrap, and allow to rise for 30 minutes.
- Preheat the oven to 450 degrees F.
- Bring a large pot of water to a simmer, and add the baking soda (liquid will foam up and then settle back down).
- Boil the pretzels (one or two at a time) in the liquid for 1 minute on each side.
- Drain on clean towels, then transfer to parchment-lined baking sheets.
- Brush with egg wash, and sprinkle with salt.
- Bake for 18 to 22 minutes, or until dark brown and shiny.

- Dissolve yeast in warm water. In a large bowl, combine sugar, salt, yeast mixture and 2 cups flour; beat on medium speed until smooth. Stir in enough remaining flour to form a stiff dough. , Turn dough onto a floured surface; knead until smooth and elastic, about 5 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch down dough; divide and shape into 12 balls. Roll each into a 22-in. rope; shape into a pretzel., Preheat oven to 425°. Place water and baking soda in a large saucepan; bring to a boil. Place pretzels, 1 at a time, in boiling water for 30 seconds. Remove; drain on paper towels that have been lightly sprayed with cooking spray. , Place on greased baking sheets. Brush with egg; top as desired. Bake until golden brown, 12-14 minutes. Remove from pans to wire racks; serve warm.

CHEWY MALL PRETZELS
I have tried tons of recipes in my quest to duplicate "Auntie Anne's" pretzels. I found this one on the net, and it really tastes VERY similar to the real thing, best one so far. I have tried experimenting with add-ins and toppings. One of my faves is adding dried italian seasoning to the dough and sprinkling with parmesan cheese, garlic powder, and coarse salt, dipping

Steps:
- In a large mixing bowl, dissolve the yeast, brown sugar and salt in 1 1/2 cups warm water.
- Stir in flour, and knead dough on a floured surface until smooth and elastic, about 8 minutes.
- Place in a greased bowl, and turn to coat the surface.
- Cover, and let rise for one hour.
- Combine 2 cups warm water and baking soda in an 8 inch square pan.
- After dough has risen, cut into 12 pieces.
- Roll each piece into a 3 foot rope, pencil thin or thinner.
- Twist into a pretzel shape, and dip into the baking soda solution.
- Place on greased or sprayed cookie sheets.
- Brush pretzels with melted butter and sprinkle with garlic powder, parmesan cheese, sugar/cinnamon, coarse salt, etc.
- (get creative;) Let rise 15 to 20 minutes.
- Bake at 450 degrees for 8 to 10 minutes, or until golden brown.
- Brush with additional melted butter, if desired.

Steps:
- In a 2 quart or larger pan stir together beer, cornmeal and molasses.
- Bring to a boil over high heat, remove and cool to 110*.
- In a large bowl sprinkle yeast over warm water and let stand 5 minutes.
- Stir in beer mixture, oil, table salt and rye flour until well blended.
- Stir in 3 1/2 cups flour until smooth.
- Knead bread until smooth and elastic, around 15 minutes, a dough hook around 10.
- Place in a greased bowl, turning once to cover with oil, cover with plastic wrap and set in a warm place until doubled, about 1 to 1 1/2 hours.
- Punch down, turn out onto a floured board and knead for a few turns to release the air.
- At this point you can shape into rolls, or a loaf, 1 large or 2 small, or shape into a pretzel shape for sandwiches later.
- Which ever you do, cover with plastic wrap and let rise until puffy, around 30 minutes.
- Remove plastic, brush top with egg and sprinkle with coarse salt.
- For bread and Pretzel shaped bread bake at 350* for about 30 minutes, rolls 15 to 20.
- Cool on a rack.

- Preheat oven to 400 degrees F ( 200 degrees C ). Grease a 15x10x1 inch jellyroll pan.
- In a heavy saucepan combine the sugar and eggs. Cook over medium heat, stirring constantly until sugar is dissolved. Remove from heat, stir in the flour, salt, vanilla, and pecans.
- Spoon mixture into the prepared baking pan and bake for 15 minutes in the preheated oven. Cool and cut into squares.
