SPICY MARYLAND CRAB DIP
A delicious hot crab and cheese dip that comes straight from the heart of the Chesapeake Bay! Serve with crackers or a warm baguette.

Steps:
- Preheat oven to 325 degrees F (165 degrees C). Lightly grease a 1 quart baking dish.
- In a medium bowl, mix cream cheese, sour cream, mayonnaise, lemon juice, Worcestershire sauce, dry mustard, garlic powder and about 2 tablespoons of the Cheddar cheese. Fold in crabmeat, hot sauce and 2 tablespoons seafood seasoning.
- Transfer the mixture to the prepared baking dish. Top with remaining Cheddar cheese and seafood seasoning. Bake in the preheated oven 30 minutes, or until bubbly and lightly browned.

Steps:
- Preheat the oven to 350° and grease a small casserole dish.
- In a mixing bowl, combine the cream cheese, mayo, sour cream, cheddar, horseradish, Old Bay, lemon juice and Worcestershire. Mix together until well combined. Fold in the crab meat and mix gently. Spread this mixture in the casserole dish and bake in the preheated oven for 30 minutes.
- Remove from the oven and allow to cool for 10 minutes before topping with the green onion and serving with crackers.

- Preheat oven to 325°; in a large bowl, combine the cream cheese, sour cream, lemon juice, mustard, seafood seasoning and garlic salt. Fold in crab. Transfer to a greased 9-in. pie plate. The crab cakes can be formed and chilled a day ahead, and can be fried up to an hour ahead; reheat them in a 250-degree oven on a baking sheet lined with a wire rack just until warmed through, 8 to 10 minutes.

- In a large bowl, whisk together egg, mayonnaise, Old Bay, and 1/2 teaspoon salt. Fold in crabmeat to evenly coat (do not overmix). Generously dust a parchment-lined rimmed baking sheet with cornmeal. Divide crab mixture evenly into 12 portions, forming each into a 2-inch-diameter, 1-inch-thick patty. Transfer to prepared baking sheet. Dust tops of crab cakes generously with cornmeal and chill in refrigerator until set, at least 1 hour and up to 1 day.
- Stir together celery, cucumber, juice of one lime half, and a pinch of salt; set aside.
- Heat 2 tablespoons oil in a large nonstick skillet over medium-high. When oil shimmers, add half of crab cakes and reduce heat to medium. Cook, undisturbed, until a golden-brown crust forms on bottoms of cakes, 4 to 5 minutes. Gently flip and cook until golden brown on other sides, 4 to 5 minutes more. Transfer to a platter and loosely cover with foil to keep warm. Wipe skillet clean and fry remaining cakes in remaining 2 tablespoons oil.
- Squeeze remaining lime half over crab cakes. Serve warm, topped with celery mixture.
BAKED CRAB DIP
We enjoyed this exquisite crab dip at my grandson's wedding reception. It looks fancy but is easy to make. You can even fill the bread bowl early in the day and chill it until serving. Just remove it from the refrigerator 30 minutes before baking. -Marie Shelley, Exeter, Missouri

- In a bowl, beat cream cheese until smooth. Add sour cream; mix well. Fold in crab, cheese and onions. Cut the top third off each loaf of bread; carefully hollow out bottoms, leaving 1-in. shells. Cube removed bread and tops; set aside. Spoon crab mixture into bread bowls. Place on baking sheets. Place reserved bread cubes in a single layer around bread bowls. , Bake, uncovered, at 350° until the dip is heated through, 45-50 minutes. Garnish with green onions if desired. Serve with assorted fresh vegetables, crackers or toasted bread cubes.

I won my first recipe contest with this crab dip recipe in 1980. Do it right - Do NOT use imitation or claw crab meat, BACKFIN only! Do NOT skip the Old Bay seasoning! Taste the authentic dip.

- 1. Heat oven to 350 degrees F.
- 2. In a medium bowl, mix all ingredients, in order, given, except milk, crab and cheese.
- 3. Thin mixture with milk (if desired).
- 4. Scoop mixture into a lightly greased casserole dish (9 X 13 inches)
- 5. Fold in crab meat
- 6. Top with cheese
- 7. Bake at 45 minutes.
- 8. Serve with snack crackers of choice.
