CHERRY TOMATO SALAD



Cherry Tomato Salad image

Cherry Tomato Salad with a simple dressing of white balsamic vinegar and olive oil, complete with fresh mozzarella balls and snippets of fresh basil-simple, tasty, and lovely!

Number Of Ingredients 8

2 lbs. cherry tomatoes, halved
1 ½ cups small fresh mozzarella balls
¼ cup julienned fresh basil
Salt and Pepper to taste
½ cup Extra virgin olive oil
½ cup White balsamic vinegar
¼ teaspoon kosher salt
¼ teaspoon freshly ground black pepper

Steps:

  • Place tomatoes and mozzarella balls in a large bowl. Add salt and pepper and stir gently. Pour in dressing (you may not need all the dressing) and stir gently.
  • Spread the tomatoes on a platter, drizzle with dressing, and sprinkle with the basil. Serve immediately.
  • Place olive oil, vinegar, salt, and pepper in a container with a lid and shake until well blended.

Sauteed Cherry Tomatoes with Garlic and Basil image

Cherry tomatoes take less than 10 minutes to prepare.

2 tablespoons olive oil, divided
2 pints cherry or grape tomatoes
Salt and pepper
2 garlic cloves, minced
1 tablespoon minced fresh basil

Steps:

  • Heat 1 Tb. olive oil in a 12-inch skillet over medium-high flame until it just starts to smoke. Add tomatoes, and season with salt and pepper. Saute, shaking pan frequently, until tomatoes soften and skins just begin to wrinkle, about 2 minutes. Stir in the garlic and continue to shake the pan until garlic is fragrant. Off heat, stir in the basil and remaining 1 Tb. olive oil, then serve.

1/4 cup shallot, chopped
1 garlic clove, chopped
1 teaspoon fresh thyme, minced
2 teaspoons olive oil
2 1/2 cups cherry tomatoes, halved
1/4 teaspoon salt
1/4 teaspoon pepper
4 ounces fresh mozzarella cheese, cut into 1/2-inch cubes

Steps:

  • In large skillet, saute the shallots, garlic and thyme in oil until tender.
  • Add the tomatoes, salt and pepper; heat through.
  • Remove from the heat; stir in cheese.
