CHERRY TOMATO FIVE-MINUTE SAUCE image

Number Of Ingredients 7

1/4 cup extra virgin olive oil
2 quarts ripe cherry tomatoes (red, orange or both), halved
Leaves from 1 branch basil
1 teaspoon granulated sugar
1/2 teaspoon (or more) crushed red pepper flakes (recipe used more, but this was still zingy)
2 garlic cloves, thinly sliced
Kosher salt and freshly ground black pepper, to taste

Steps:

  • Heat oil in large, deep skillet over high heat until hot. Add tomatoes, basil, sugar, pepper flakes and garlic and cook until tomatoes come to a full boil. Cook 5 minutes more, until most tomatoes have collapsed, crushing them with back of a wooden spoon (I used a potato masher). Using a food mill, puree sauce back into the cooking pan. Simmer until thickened. Meanwhile, boil some fresh pasta in salted water for 2 or 3 minutes. Drain and place in serving dish. Pour sauce over and add freshly grated parmesan cheese.

With just a few ingredients you can easily make tomato sauce using cherry tomatoes. Cherry tomatoes infused with fresh garlic and Italian seasonings make this cherry tomato sauce perfect for pasta, on top of roasted vegetables, or with a side of artisan bread.

3 tablespoons olive oil
3 garlic cloves minced
2 pints cherry tomatoes
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 tablespoon Italian seasoning
fresh basil, (to garnish and extra flavor)

Steps:

  • In a large skillet over medium-high heat, add the oil and heat through for about one minute.
  • Add the garlic and cook for 1 minute until fragrant and softened.
  • Add the tomatoes, salt, pepper, Italian seasoning, and fresh basil if you desire.
  • Cook and stir sauce the sauce for 10-15 minutes. Allow the sauce to simmer on medium-low heat until the tomatoes burst.
  • Mash the tomatoes using a mashing utensil until desired consistency. You can also use the back of a fork to mash the tomatoes.
  • Garnish with fresh basil. Serve over pasta, with a side of bread, or add meat.

1 pound pasta
Kosher salt
1/2 cup olive oil
2 large garlic cloves, finely chopped
3 pints cherry tomatoes
1/2 teaspoon freshly ground black pepper
Pinch of sugar
1 cup coarsely chopped fresh basil
Freshly grated Parmesan (for serving)

Steps:

  • Cook pasta in a large pot of boiling salted water, stirring occasionally, until al dente; drain and transfer to a large bowl.
  • Meanwhile, heat oil in a 12" skillet or wide heavy saucepan over medium-high. Add garlic, then tomatoes, pepper, sugar, and 1 tsp. salt. Cook, stirring occasionally, until tomatoes burst and release their juices to form a sauce, 6-8 minutes.
  • Toss pasta with tomato sauce and basil. Top with Parmesan.

  • Heat ½ cup oil in a large heavy pot over low. Add garlic and cook, stirring, until softened and fragrant but not browned, about 2 minutes. Increase heat to medium and add tomatoes, red pepper flakes, basil sprigs, and 1½ tsp. salt. Cook, stirring to coat, until tomatoes begin to burst, about 4 minutes. Smash some but not all of the tomatoes with the back of a wooden spoon to help create a sauce, then continue to cook, stirring occasionally, until a chunky, thickened sauce comes together and about half the tomatoes are completely broken down and half remain in tact, 10–12 minutes. Taste and adjust seasoning, adding sugar if sauce seems tart. Pluck out and discard basil sprigs.
  • Meanwhile, cook pasta in a large pot of boiling salted water, stirring occasionally, until al dente. Drain pasta, add to pot with sauce, and cook over medium heat, stirring, until coated, 1–2 minutes. Remove from heat and stir in 1 oz. Parmesan.
