CHOCOLATE-CHERRY CUPCAKES

If you're a fan of chocolate and cherry, then these cupcakes are for you! Start by making a quick cherry compote to use in both the cupcakes and the frosting for maximum cherry flavor! The cherry buttercream recipe makes enough to generously frost the cupcakes, so keep that in mind when making it!

2 ½ cups frozen tart cherries, pitted
½ cup white sugar
1 tablespoon lemon juice
1 tablespoon cornstarch
2 cups all-purpose flour
1 cup unsweetened cocoa powder
2 teaspoons baking soda
1 teaspoon baking powder
½ teaspoon salt
1 cup firmly packed dark brown sugar
½ cup unsalted butter, softened
½ cup white sugar
2 large eggs, at room temperature
2 teaspoons vanilla extract
1 cup sour cream, at room temperature
½ cup strongly brewed coffee, cooled to room temperature
1 cup unsalted butter, softened
4 cups powdered sugar, or as needed
1 teaspoon vanilla extract
¼ teaspoon salt
2 tablespoons heavy cream

Steps:

  • Bring cherries, sugar, and lemon juice to a simmer in a medium pot over medium-low heat. Cook until sugar is dissolved, stirring frequently. Remove 2 tablespoons of cherry juice from the pot and place in a small bowl. Stir in cornstarch until thoroughly combined. Add cornstarch mixture to the pot and simmer until thickened and slightly reduced, about 5 minutes more.
  • Remove compote from heat and cool completely. Measure out 1 cup for the cupcake batter. Reserve remaining compote, about 6 tablespoons, for the frosting.
  • Preheat the oven to 350 degrees F (175 degrees C). Line or grease two standard 12-cup muffin tins.
  • Whisk flour, cocoa powder, baking soda, baking powder, and salt together in a medium bowl. Set aside.
  • Beat brown sugar, butter, and white sugar together in a large bowl until light and fluffy. Beat in eggs one at a time, mixing well after each addition. Stir in vanilla extract. Mix in 1/3 of the flour mixture, stirring until just combined. Pour in 1/2 of the sour cream and cooled coffee; mix until just combined.
  • Continue alternating additions of the flour mixture with sour cream and coffee, beginning and ending with the flour mixture, until batter is smooth. Do not overmix. Gently fold in 1 cup cherry compote. Fill each prepared muffin cup 2/3 full of batter.
  • Bake in the preheated oven until the tops of the cupcakes spring back lightly when touched, 15 to 18 minutes. Cool in the tins for a few minutes before removing to a wire rack to cool completely.
  • Prepare cherry buttercream while the cupcakes are cooling. Beat butter in a large bowl until light and fluffy. Add powdered sugar, 1 cup at a time, beating well after each addition. Mix in vanilla and salt. Add 2 tablespoons of cherry compote and beat on medium-high speed until thoroughly combined. Repeat twice more with remaining cherry compote, beating well after each addition. Add heavy cream and beat until frosting is fluffy, 2 to 3 minutes.
  • Spread or pipe frosting over the cooled cupcakes.

Yellow food coloring
Miniature semisweet chocolate chips, red shoestring licorice and candy corn

Steps:

  • Prepare cake batter mix according to package directions for cupcakes; cool completely., In a small bowl, tint frosting yellow. Frost cupcakes. Press two chocolate chips into each cupcake for eyes. For mouths, cut licorice into 1-in. pieces; bend slightly to curve. Press one licorice piece into each cupcake. Add candy corn around edges of cupcakes.

1/4 cup brown sugar
1 tablespoon vegan butter substitute
2 teaspoons cinnamon, plus more for sprinkling

2 teaspoons cinnamon
1/2 teaspoon sea salt
1/4 teaspoon ground cloves
1 1/4 cups granulated sugar
1/2 cup vegan butter substitute, softened
1 cup vanilla soy milk
1/2 cup unsweetened applesauce
1 tablespoon vanilla extract
1 tablespoon distilled white vinegar
Nonstick cooking spray, for spraying cupcake pan
1 1/2 cups all-purpose flour
1/2 cup vegetable or canola oil
2 tablespoons soy milk
2 tablespoons granulated sugar, plus more for sprinkling
1/2 teaspoon salt
1/2 teaspoon vanilla or almond extract, optional
Cinnamon, for sprinkling
2 large Granny Smith apples, peeled and diced
1/2 cup moonshine
1/4 cup brown sugar
1 teaspoon vanilla extract
3/4 cup vegan butter substitute
1/4 cup vegan shortening
2 teaspoons vanilla extract
3 cups confectioners' sugar
1 tablespoon cinnamon
Soy milk, for thinning, optional
1 small jar maraschino cherries with juice
1/2 cup moonshine
1/4 cup granulated sugar
2 tablespoons cornstarch
12 fondant fingers (or plastic novelty fingers)

Steps:

  • For the streusel: Combine the pecans, brown sugar, vegan butter, cinnamon, vanilla and salt in a bowl and mix well. Set aside.
  • For the cake batter: Preheat the oven to 350 degrees F; line a cupcake pan with 12 paper liners.
  • Sift together the flour, baking powder, cinnamon, salt and cloves in a large bowl and set aside. In the bowl of a stand mixer or using a hand mixer, mix the granulated sugar and vegan butter together on medium-low speed until fluffy, about 5 minutes; scrape down the bowl. Slowly mix in the soy milk, applesauce and vanilla and mix for 2 more minutes. Slowly add the flour mixture, and then fold in the vinegar.
  • Divide half of the batter among the liners, sprinkle on some of the streusel and then top with the remaining batter. Top off with more of the streusel and a sprinkle of cinnamon. Bake until an inserted toothpick comes out clean, about 18 minutes. Cool the cupcakes completely before frosting.
  • For the shortbread crust: Turn over a cupcake pan and spray the bottoms with nonstick spray.
  • Combine the flour, oil, soy milk, granulated sugar, salt and vanilla if using in a medium bowl and mix together with a fork; the dough will be crumbly. Refrigerate for 20 minutes in the bowl or wrapped in plastic wrap.
  • Roll out the dough to 1/4 inch thick and use a circle cutter or a coffee cup to cut out circles. Cut out a very small circle in the middle of each dough circle. Place the dough circles on the bottoms of the cupcake pan and bake for 10 minutes. Once out of the oven, sprinkle with cinnamon and sugar while still hot.
  • For the apple compote: Put the apple pieces in a medium saucepan, add the moonshine, brown sugar and vanilla and place over medium heat. Bring to a simmer and simmer for 10 minutes. Set aside to cool.
  • For the cinnamon frosting: Using a stand mixer with a whisk attachment, mix the vegan butter and shortening until light and fluffy, about 5 minutes. Scrape down the bowl, add the vanilla and mix for 2 more minutes. Add the confectioners' sugar and cinnamon and mix until a whipped fluffy texture, another 3 to 5 minutes. Add a splash of soy milk if needed.
  • For the cherry moonshine reduction: Put the maraschino cherries with their juices in a small saucepan, add the moonshine and granulated sugar, place over medium heat and bring to a small boil. Immediately add the cornstarch and let simmer for 2 to 4 minutes. Set aside to cool slightly, about 5 minutes, and then pour the mixture through a strainer. Let cool for 15 minutes.
  • To assemble: Using an apple corer or paring knife, cut out the center of each cupcake. Put a generous amount (about 1 tablespoon) of the apple compote in each cupcake. Frost with a small amount of cinnamon frosting. Place a shortbread crust on top of the frosting on each cupcake. Where the hole is cut out, place a fondant finger or plastic novelty finger through the crust. Drizzle some cherry moonshine reduction over each.

This yummy sounding recipe came to me in one of the fabulous cookbooks I got from my partner MuffinGoddess in the recent Cookbook Swap. These cupcakes have chocolate, cherries and lots of creamy frosting, yum!

1 (18 1/4 ounce) box chocolate cake mix
3 eggs
1 1/3 cups water
1/2 cup vegetable oil
1 (21 ounce) can cherry pie filling
1 (16 ounce) can vanilla frosting

Steps:

  • Preheat oven to 350 degrees.
  • Prepare cake mix according to package directions, using the eggs, water, and oil.
  • Spoon batter into 24 paper-lined muffin pan cups, filling two-thirds full.
  • Remove 24 cherries from cherry pie filling and set aside.
  • Spoon generous teaspoon of remaining cherry filling onto center of each cupcake.
  • Bake in preheated 350 degree oven for 20-25 minutes.
  • Cool in pans on wire racks for 10 minutes, then remove from pan and let cool completely.
  • Frost cupcakes with vanilla frosting, and garnish each one with a reserved cherry.

Frosting:
1-1/2 sticks unsalted butter, softened
6 oz cream cheese, softened
3 cups confectioners' sugar
1 tsp vanilla extract
1/3 cup cherry jam or preserves
1/3 cup finely chopped fresh cherries, pitted

Steps:

  • To prepare the cupcakes, position an oven rack in the middle-lower level and preheat to 350°F. Line a 24-cup muffin pan with cupcake liners. Set aside. Fit a stand mixer with the wire whip attachment. Beat the cake mix, soda, and zest until creamy and the mixture has no lumps. Spoon the cake mixture into the muffin cups, filling no more than 2/3 of the way. Bake for 17-19 minutes, or until a toothpick inserted in the middle comes out clean. Remove the cupcakes from the oven and let them cool completely before icing. To prepare the frosting, fit a stand mixer with the paddle attachment. Beat the cream cheese and butter until creamy. Add the confectioners' sugar and vanilla and mix until evenly combined and the mixture has no lumps. Add the preserves and mix until just incorporated. Fold in the cherries until evenly distributed. Pipe or spread a thin layer of frosting on top of each cupcake, dividing evenly among the cupcakes. If desired, garnish each cupcake with a fresh cherry and a lemon twist.
