- In a large bowl, cream sugar and shortening until light and fluffy. Beat in the egg, milk and vanilla. Combine dry ingredients; gradually add to the creamed mixture and mix well. , Form 2 teaspoons of dough into a ball. Flatten ball with a glass coated with cooking spray. Place a cherry in the center; roll dough around cherry. Repeat with remaining dough and cherries. Place balls 2-in. apart on ungreased baking sheets. , Bake at 350° for 10-12 minutes or until set and the edges are lightly browned. Cool 1 minute before removing to wire racks to cool completely. , Grate 2 oz. white candy coating; set aside. In a microwave, melt remaining white coating with 2 tablespoons shortening; stir until smooth. Melt dark coating with remaining shortening in a microwave; stir until smooth. , Dip half the cookies into white coating; allowing excess to drip off. Place on waxed paper. Sprinkle with pecans. Dip the remaining cookies in dark coating; allow excess to drip off. Place on waxed paper. Sprinkle with grated white coating. Let stand until set. Store in a covered container in the refrigerator.

DRIED CHERRY AND ALMOND COOKIES WITH VANILLA ICING

- For the Cookies:
- In a large bowl, with an electric mixer, beat the butter, sugar, vanilla extract, almond extract, cinnamon, and salt until light and fluffy, about 2 minutes, then beat in the egg. Add the flour and beat on the lowest speed until just blended. Using a wooden spoon, stir in the dried cherries and almonds.
- Transfer the dough to a sheet of plastic wrap and shape it into a log, about 12-inches long and 1 1/2-inches in diameter. Wrap the dough in the plastic wrap and refrigerate for at least 2 hours. (Dough can be made up to 3 days in advance).
- Arrange an oven rack in the center of the oven. Preheat the oven to 350 degrees F. Line 2 heavy baking sheets with parchment paper.
- Cut the log crosswise into 1/2-inch thick slices. Transfer the dough slices to the prepared baking sheets, spacing them about 1-inch apart. Bake until the cookies are golden around the edges and puffed, about 15 minutes. Transfer the cookies to a wire rack to cool completely before icing, about 30 minutes.
- For the Icing:
- Put the powdered sugar in a medium bowl. Gradually whisk in the vanilla extract and water, adding more water, 1 teaspoon at a time, until the mixture becomes a drizzling consistency. (Makes about 2/3 cups icing, enough to ice both variations.)
- Put the cooled cookies on a wire rack set over a baking sheet. Using a spoon or a fork, drizzle the cookies with the icing, allowing any excess icing to drip onto the baking sheet. Allow the icing to set before serving, about 1 hour.
- Cook's Note: To toast the almonds, arrange them in a single layer on a baking sheet. Bake in a preheated 350 degree F oven for 6 to 8 minutes until lightly toasted. Cool completely before using.
- Cook's Note Alternative:
- Replace the dried cherries with 1/2 cup coarsely chopped dried apricots and add 2 tablespoons of toasted pine nuts. Also, use 1 teaspoon vanilla extract and omit the almond extract.

- Preheat an oven to 350 degrees F (175 degrees C).
- Line two large baking sheets with parchment paper.
- Combine flour, cocoa powder, baking powder, and salt in a bowl.
- Beat the butter and sugar together in a large bowl with an electric mixer on medium-high speed, until light and fluffy.
- Beat the egg, coffee granules, and vanilla into the butter and sugar mixture until blended.
- Change the speed to low and pour in the flour mixture. Beat until just combined.

- Preheat oven to 350 degrees. Line 2 baking sheets with nonstick baking mats or parchment paper.
- In a small bowl, whisk together the flour, cinnamon, baking soda, nutmeg, and salt; set aside. Place butter, sugar, and honey in the bowl of an electric mixer fitted with the paddle attachment; beat on medium-high speed until light and fluffy, about 4 minutes. These cookies are a family favorite of ours,especially at the holidays,because not only do they look pretty,but they are a buttery and great tasting ccokie anytime too!! I originally got the recipe from my mother in law,who at 92,still assists us in the baking of these at the holidays today!!

- 1. Preheat oven to 350. Mix as per usual for cookies-cream the butter and the sugar.Add the egg yolk,the extract of your choice and the orange rind.Mix together then blend in flour.Put the cherries in a bowl and gently pat dry.
- 2. Once the dough is mixed,take about a walnut size piece of the dough and flatten it out in the palm of your hand.Place a cherry in the center of it and wrap dough around the cherry with your other hand,all while forming a ball (or even a bell!).The dough can be fussy at this point,as cherries try to pop out,but talk nicely to it-they're worth it!
- 3. If you wish,you can dip or roll the cookie in colored sugar or just the tip,all before you bake it.Or you can pre color the dough green or red also for the holidays!
- 4. Place on an UNgreased cookie sheet for about 15-20 min's,but do watch them after 15 so they dont burn. Transfer to a cooling rack when done. Enjoy!
GOOEY CHOCOLATE CHERRY COOKIES

- Heat oven to 190C/fan 170C/gas 5. Beat the butter, sugars and egg until smooth, then mix in the flour, chocolates and cherry pieces and ½ tsp salt. Spoon onto non-stick baking sheets in large rough blobs - you'll get 20 out of this mix. Make sure they are well spaced as the cookies grow substantially as they bake. The raw dough can be frozen.
- Bake for 12-14 mins until just golden, but still quite pale and soft in the middle. If baking from frozen, give them a few mins more. Cool on the sheets for 5 mins, then lift onto racks with a fish slice and leave to cool completely.
