CHERRY COLA FLOAT
A twist on the classic coke float! Prep time does not include time to chill cherry cola or to chill the glasses.

Steps:
- Chill the cherry cola and place 4 mugs or glasses in the freezer to chill.
- Once chilled, in a pitcher combine the cherry cola and vanilla extract.
- Place two scoops of fudge ripple ice cream in each of four chilled glasses.
- Pour the cola over the ice cream; top each float with whipped cream and a maraschino cherry. Enjoy!
BLACK MACARONS

Steps:
- For the macarons:
- In the food processor, mix the almond powder and icing sugar together until it's reduced into a very fine powder, for about 2 minutes. Add 2 egg whites and process until smooth.
- Cook's Note: the texture will be similar to almond paste.
- Add the food coloring and continue processing until the color is all blended in. You can add a few more drops just until you get the color you want. Transfer the mixture to a large bowl and put aside.
- In a stockpot, bring the water and sugar to a boil and cook for about 15 minutes, until reduced by 1/2 and syrup is coating the back of a spoon when dropped in cold water or until a candy thermometer reads 230 degrees F.
- Using a stand or hand mixer, beat the egg whites until soft peaks form. Slowly add 1/2 of the hot syrup and continue beating until firm peaks form and the meringue has cooled.
- With a spatula, gently fold in 1/4 of the meringue into the almond mixture. Continue folding the meringue until completely incorporated. The mixture will be shiny and smooth.
- Fit a piping bag with a 3/8-inch/1 cm round tip. Pipe the batter onto the baking sheets. Tap the underside of the baking sheet to remove air bubbles. Let dry at room temperature for 1 hour to allow skins to form.
- For the butter cream:
- Bring the water and sugar to a boil and cook it until it reaches 242 degrees F on a candy thermometer, approximately 4 minutes.
- Using a stand or hand mixer, pour in egg yolks and crack in one extra egg. While beating, gradually pour the remaining hot syrup on the egg yolks. Beat until cooled, light and fluffy, approximately 10 minutes.
- Add the butter and continue beating until smooth. Add the vanilla. Put aside.
- Preheat the oven to 275 degrees F.
- Bake the macarons for 20 minutes. Rotate the baking sheet after 10 minutes for even baking.
- Remove the macarons from the oven and transfer parchment to a cooling rack.
- Pair the macarons of similar size, and pipe about 1/2 teaspoon filling onto one of the macarons. Top with the other macaron to sandwich the filling.
JELLY DOUGHNUTS

Steps:
- Bloom the yeast: Pour the warm milk into the bowl of a stand mixer. Sprinkle the yeast on top and stir to dissolve; let stand until foamy, about 5 minutes. Make the dough: Add the sugar, salt, vanilla and eggs to the bowl and whisk until blended. Add 2 cups flour and mix with the dough hook to combine, stopping to scrape down the bowl. (The dough will be sticky; if it's too wet, add the remaining 1/4 cup flour.) Add the butter and mix until smooth. Let it rise: Brush a large bowl with vegetable oil; add the dough and cover with plastic wrap. Let rise in the refrigerator, at least 4 hours or overnight.
- Cut out the doughnuts: Line 2 baking sheets with parchment and dust with flour. Dust a clean surface with flour; turn out the dough onto the surface. Dust the dough with flour, then gently pat it out to make it easier to roll. Using a rolling pin, roll out the dough until about 1/2 inch thick. Cut the dough into 1 1/2-inch rounds with a cookie cutter; transfer to the prepared baking sheets. Reroll the scraps and cut out more rounds. Dust the dough rounds lightly with flour, cover with plastic wrap and let rest 1 hour in a warm place.
- Fry them: Heat 2 to 3 inches vegetable oil in a large pot until a deep-fry thermometer registers 360 degrees F. Working in batches, fry the doughnuts, turning, until golden brown, 1 to 1 1/2 minutes total. Using tongs or a skimmer, remove to paper towels to drain.
- Fill with jelly: Fit a pastry bag with a 1/8-inch-round tip; place the bag in a glass and cuff the open end over the glass. Fill the bag with jelly. Insert the pastry tip into the side of a doughnut and gently squeeze to fill. Repeat with the remaining doughnuts. Dust with confectioners' sugar and serve warm. Photograph by David A. Land
CHERRY COLA FLOAT
Steps:
- In a small pan over medium heat, add the sugar and 2 cups water and stir to dissolve. Bring to a boil, remove from the heat, and cool.
- In the saucepan with the cooled sugar syrup, whisk in the maraschino cherry syrup, half-and-half, and vanilla. Pour into an 8 by 8-inch cake pan and freeze for at least 2 hours or overnight.
- Fill 4 tall glasses 3/4 full with cola. Add 2 scoops of the frozen cherry mixture to each glass and top with a cherry. Add 1-ounce vanilla vodka, if using, to each glass.
- Scrape the remaining frozen cherry mixture into a resealable freezer container and keep in the freezer for up to 1 week.
GINGER RUM SHANDIES

- Make the ginger syrup: Combine the sliced ginger, sugar and 1 cup water in a small saucepan over medium-high heat. Bring to a boil, stirring until the sugar dissolves; reduce the heat to medium and cook until syrupy, 15 to 20 minutes. Strain and let cool.
- For each cocktail, combine 2 tablespoons each of the ginger syrup and apple juice, 1 1/2 ounces rum and 3 or 4 gratings of ginger in a cocktail shaker with ice. Shake well and pour into a short glass. Top with 1/2 cup beer and garnish with apple slices.
CAPTAIN MORGAN CHERRY VANILLA COLA FLOAT RECIPE BY TASTY

- Make the cherry vanilla syrup: Add the frozen cherries, maple syrup, cherry juice, and vanilla bean seeds to a small saucepan and bring to a simmer over medium heat. Cook for 6-7 minutes, or until the cherries are very soft. Using a potato masher or a fork, smash the cherries as much as possible. Reduce the heat to medium-low and continue cooking for 15-20 minutes, until the syrup has reduced and is thick enough to coat the back of a spoon.
- Strain the syrup into a small bowl and stir in the Captain Morgan Cherry Vanilla Spiced Rum. Let cool to room temperature, then cover and refrigerate until the syrup is cold, at least 1 hour or up to overnight.
- Make the white chocolate cornflake bark: Line a baking sheet with parchment paper.
- Spread the cornflakes in an even layer on the prepared baking sheet. Using a spoon, generously drizzle the melted white chocolate over the cornflakes in a single direction, making sure the cereal is almost, but not completely, covered. Freeze the bark until solid, at least 20 minutes or up to overnight.
- Break the bark into playing card-sized pieces and store in the freezer until ready to serve.
- Make the cola float: Add 1½ ounces of Captain Morgan Cherry Vanilla to each of 2 float glasses. Pour 12 ounces of cola into each glass, then top each with 2 scoops of vanilla ice cream and drizzle with half of the cherry vanilla syrup. Garnish each float with a few pieces of cornflake bark and finish with the maraschino cherries. Serve immediately.
