My favorite soda is Diet Cherry Coke and one of my favorite fruits of the fall is apples. I was very anxious to try this recipe that pairs the two. I loved it! The only thing I tweeked was the use of raisins. I'm not much on those.

1/2 cup raisins or 1/2 cup other dried fruit, if desired
2 tablespoons chopped walnuts
1/2 cup splenda brown sugar
1/2 teaspoon ground cinnamon, divided
4 medium granny smith apples, cored
3/4 cup diet cherry soda
2 teaspoons butter

Steps:

  • Preheat oven to 375 degrees.
  • In a small bowl, combine raisins, walnuts, sugar, and 1/4 teaspoons cinnamon. Place apples in baking dish. Fill the center with the fruit/nut mixture.
  • Pour the soda over the apples. Dot each apple with 1/2 teaspoons butter. Sprinkle with the remaining cinnamon.
  • Bake until apples are tender, about 45 minutes. Serve with sauce from the baking dish.

4 medium Rome or Braeburn apples
1 can diet black cherry soda
1 teaspoon granulated sugar
1/4 teaspoon cinnamon, plus more, for optional topping
2 tablespoons fat-free whipped topping (from an aerosol can)

Steps:

  • Preheat the oven to 375 degrees F.
  • Core apples. Place them in a casserole dish. Pour the entire can of soda over the apples.
  • Sprinkle sugar and cinnamon over the apples. Place the dish in the oven and bake for 45 minutes or until the apples are tender.
  • Top with whipped topping. Sprinkle with additional cinnamon, if you like. Enjoy!

This is sweet, crunchy, hot and cinnamonie. Is that a word? Go ahead and use your favorite choice of nuts. You can replace the rum with apple juice if you don't want the booze. But remember the alcohol will burn off. Ice cream goes sooooo well with the hot soft apples.

6 granny smith apples, cored almost through the apple 1 inch wide hole, peeled optional (The apple does burst open so if you want you can poke a couple of holes in the skin to let the air e)
1/2 cup pecans, chopped
1/4 cup raisins, soaked in
dark rum, to cover
1/2 teaspoon cinnamon
1/4-1/2 cup brown sugar
3 tablespoons butter

Steps:

  • Mix nuts, strained raisins reserving the rum, cinnamon, and sugar ingredients,stuff into apples.
  • Place into a shallow baking dish that's greased with butter.
  • Pour remaining rum on apples.
  • Dot each apple with 1/2 tablespoon butter.
  • Bake in a 350 degree oven for 45 minutes.
  • Till fork tender.
  • Serve hot with a side of vanilla ice cream. (A yummy Must).

You've never had baked apples like this before! This is an old family recipe that is 'required' at Thanksgiving but eaten all year round.

3 -4 granny smith apples
butter
cinnamon sugar
1 1/2 tablespoons flour
1/4 cup sugar
1/2 cup milk
1 teaspoon vanilla
cinnamon
nutmeg (optional)

Steps:

  • Peel& core apples, cut in eights.
  • (I use my apple corer/slicer and then just peel the slices) Place in a baking dish, and dot with butter.
  • Sprinkle generously with cinnamon-sugar.
  • Bake in microwave on HIGH for about 10 minutes or until fork inserts easily, stirring at least once.
  • Remove from microwave and set aside.
  • In saucepan bring flour, sugar and milk to a boil over medium heat (it will be thick) stirring constantly.
  • Remove from heat, add vanilla and stir well.
  • Pour over apples and sprinkle with cinnamon and nutmeg if you desire.
  • Serve hot or let cool some.

This comes from my Hungry Girl cookbook, these are my personal changes - i prefer slicing the apples before baking, and i also use Gala apples (since that's what I normally eat), and i used enough soda to cover the apples (more than 12 oz.), so adapt to your preferences :-)

I have a recipe here posted for Cherry Cola Apples, but I have also found one that I like just as much. This recipe uses diet cola, but are strawberry-flavored. They're different for sure, but I thought they were delicious. I'm always looking for different ways to use anything that can be used in a diabetic diet. This one came from Lifescan, which is the company that produces my blood sugar monitor.

1 (12 ounce) can diet strawberry soda (I use Diet Big Red)
1 cup fresh strawberries, sliced
1 tablespoon Splenda granular
1 (8 ounce) container sugar-free Cool Whip

Steps:

  • Core the apples and place in a casserole dish.
  • In a small bowl, combine the strawberries and Splenda.
  • Stuff the middles of the apples with the berries.
  • Pour the soda over the apples.
  • Bake at 350 degrees until the apples are tender, anywhere from 30-45 minutes, depending on the apples.
  • Top with the Cool Whip.
