FRESH CHERRY CAKE

A white cake made with fresh cherries and cherry juice. My wife's favorite!

2 cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
1 ½ cups white sugar, divided
½ cup butter, softened
1 cup milk
1 teaspoon vanilla extract
4 cups halved and pitted cherries
1 ¼ cups cherry juice

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a deep 9x13-inch baking dish.
  • Whisk flour, baking powder, and salt together in a bowl.
  • Place 1 cup sugar and butter in a separate bowl; beat with an electric mixer until light and fluffy, 4 to 5 minutes. Stir in milk and vanilla extract. Add flour mixture to butter mixture; mix until batter is well blended and thick, 2 to 3 minutes.
  • Spread batter in the prepared baking dish; arrange cherries on top. Drizzle cherry juice over the cherries. Sprinkle remaining 1/2 cup sugar over the surface.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, 40 to 45 minutes.

In the 1950's, when cake mixes first came out, there was only chocolate, white or spice. To make something special, I came up with this.

Number Of Ingredients 5

1 (18 ounce) box white cake mix
1/3 cup vegetable oil
4 egg whites (or 3, per cake mix directions)
1 1/4 cups water (*see directions)
1 (8 ounce) jar maraschino cherries

Steps:

  • Preheat oven to 350.
  • Grease or Spray bottom of two 8 or 9 inch cake pans.
  • *Drain juice from cherries and add water to make 1 1/4 cups.
  • Chop cherries in half.
  • Beat cake mix, cherry juice/water, oil, egg whites and cherries in large bowl on low speed 30 seconds; beat on medium speed 1 1/2 minutes
  • Pour into pans.
  • Bake 30- 35 minutes or until toothpick inserted in center comes out clean.
  • Cool 10 minutes in pans.
  • Run knife around sides of pans before removing.
  • Cool completely before frosting.
  • A White Mountain icing is very good.

Great little loaves to have handy in the freezer for when unexpected, or expected company arrives. This is from the Company's Coming - Cooking for Two cookbook. It's moist, tasty, and very easy to prepare. They say it makes one small 7 x 7 cake, but I baked it in two mini loaf pans for 40 - 45 minutes. Freezes well too. I also tried substituting 1 for 1, whole wheat flour for the all purpose. Not a good idea ;)

1 cup flour
1/2 teaspoon baking powder
1/4 cup ground almonds
1/3 cup red glazed cherries, chopped

Steps:

  • Preheat oven to 350°.
  • Cream butter and sugar together.
  • Beat in eggs, one at a time.
  • Add extract and blend well.
  • Stir in flour, baking powder, ground almonds and cherries.
  • Pour into 2 greased mini loaf pans.
  • Bake for approximately 40 minutes or until wooden pick comes out clean.

1 box angel food cake mix
1 can(s) cherry pie filling

Steps:

  • 1. Firstly, preheat the oven at 350degrees. Now mix the pie filling and boxed cake mix together. Be careful because it can get messy!
  • 2. Nextly, put the mixed cake in a 9 in by 13in cake pan. Of you use a smaller pan, remember this is a angel food cake so it will expand.
  • 3. Once your oven is preheated, cook for 25 to 30 mins. I suggest checking on the cake because with different ovens you'll have a varied cook time. You'll want golden brown edges, but not burnt!

1 cup buttermilk or 1 cup sour milk
3/4 cup cocoa powder
2/3 cup boiling water
1 1/2 cups flour
1 1/4 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter, softened at room temperature
1 cup white sugar
1 teaspoon vanilla extract
1/2 teaspoon almond extract
3 large eggs
3 cups whipping cream
1/2 cup icing sugar
16 ounces cherry pie filling (sweet or sour, drained & chopped)
1/2 cup white chocolate chips

Steps:

  • Preheat oven to 350 degrees.
  • Butter and flour 2 x 9" round pan.
  • Combine sour cream, cocoa and water, blend well (set aside).
  • Mix flour, baking soda, baking powder and salt into bowl (set aside).
  • In a large bowl beat butter and sugar on medium high speed for 2 minutes until light and fluffy.
  • Lower speed and add vanilla and almond extracts, add eggs one at a time, blend well.
  • Add flour 3 times to butter mixture, alternating 2 times with milk mixture-- starting and ending with flour.
  • Mix well.
  • Pour batter evenly into both pans and bake in a 350 degree oven for 20- 25 minutes.
  • Cool on racks for 20 minutes before removing pans.
  • Cool completely before frosting.
  • Beat whipping cream with icing sugar until stiff but not dry.
  • Place one cake on platter, frost with 1 cup whipped cream to 1/2" from edge of cake, sprinkle white chocolate chips on top of whipped cream and top with the chopped and drained cherries.
  • Put 2nd cake overtop of first cake and frost the top and sides with the remaining whipped cream.
  • You can add chocolate curls or marashino cherries to decorate if desired.

1 1/2 cups sugar
4 eggs
4 cups flour
2 teaspoons baking powder
16 ounces cherries, dried, glazed (baking cherries)
1 teaspoon almonds
1 teaspoon vanilla
1 teaspoon lemon flavoring
1 cup warm milk
1 teaspoon salt

Steps:

  • Mix dry ingredients together and set aside.
  • Cream together butter and sugar, add eggs, vanilla, almond and lemon flavoring and continue to beat.
  • Add dry ingredients and warm milk a little at a time till well mixed. Add the glazed cherries.
  • Bake at 325 for 1 hour or until done.
