Bourbon-Soaked Cherry Bread Pudding with Vanilla Glaze image

One 1-pound loaf white bread, cubed
1 1/4 cups sugar
4 large eggs
1 tablespoon cinnamon
2 teaspoons pure vanilla extract
1/4 teaspoon kosher salt
1 stick (8 tablespoons) unsalted butter, melted, plus for greasing baking dish
2 cups milk
1/3 cup bourbon
4 cups pitted tart red cherries (fresh or jarred, drained)
Vanilla Glaze, recipe follows
3 cups confectioner's sugar
4 tablespoons unsalted butter, melted
1 tablespoon pure vanilla extract
1/3 cup bourbon, plus more to taste

Steps:

  • Preheat the oven to 375 degrees F and position a rack in the center of the oven. Grease a 2-quart baking dish with butter and set aside.
  • In a large bowl, combine the cubed bread, sugar, eggs, cinnamon, vanilla, salt, melted butter and milk; mix thoroughly, then transfer to the prepared baking dish. Pour in the bourbon, and gently fold in the cherries.
  • Place in the oven and bake until puffed and golden brown on top, about 45 minutes. Set aside and let cool completely.
  • Pour the vanilla glaze over the bread pudding and serve.
  • Place the confectioner's sugar in a medium bowl. Gradually whisk in the melted butter, vanilla and bourbon until completely combined and smooth. Taste for bourbon; add as needed.

"DREAD" PUDDING WITH CHERRY "BLOOD" SAUCE

One 12-count package Hawaiian sweet rolls, cut into 1-inch cubes
2 cups heavy cream
2 cups almond milk
1/2 cup sugar
1/4 cup dark cocoa powder
1 teaspoon vanilla extract
1/2 teaspoon kosher salt
3 large eggs plus 2 yolks
1 1/2 cups bittersweet chocolate chips
1 cup chopped thawed frozen Bing cherries
3 cups thawed frozen Bing cherries with juice
1/2 cup brandy
2 tablespoons honey
Pinch kosher salt
2 tablespoons unsalted butter
10 rectangular shortbread cookies
1/2 cup white chocolate chips or candy melting wafers
Edible icing letter decorations, for garnish
Edible black food coloring mist spray, for garnish
Edible pearl food coloring mist spray, for garnish
20 fresh mint sprigs, for garnish

Steps:

  • For the "dread" pudding: Preheat the oven to 350 degrees F. Butter ten 6-ounce ramekins with the butter.
  • Spread the sweet roll cubes on a baking sheet in a single layer. Bake until golden and lightly toasted, 10 to 12 minutes. Let cool. Lower the oven temperature to 325 degrees F.
  • Whisk together the cream, almond milk, sugar, cocoa powder, vanilla, salt and eggs and yolks in a large bowl. Transfer the toasted roll cubes to the mixture, toss to coat and allow to sit for 15 minutes.
  • Fold the chocolate chips and cherries into the cream and bread mixture and evenly divide among the buttered ramekins. Bake until the tops are crispy and the custard has set, 30 to 40 minutes.
  • For the cherry "blood" sauce: Meanwhile, combine the cherries, brandy, honey and salt in a blender and blend on high until smooth, about 1 minute. Transfer to a medium saucepan and add the butter. Place over medium heat and cook, stirring occasionally, until thickened and reduced by about half, about 30 minutes.
  • For the shortbread "tombstones:" On a baking sheet lined with parchment, lay the shortbread cookies smooth-side up. Add the white chocolate chips to a small glass or microwave-safe bowl and microwave in 15-second intervals until melted.
  • Pick out icing letters to spell RIP or various names or initials. Using a toothpick, spread the melted white chocolate onto the back of the icing letters and glue them to the shortbread cookies to resemble tombstones. Spray each tombstone with the black food coloring mist spray and let dry for a few minutes. Spray each with the pearl food coloring mist spray and let dry for a few minutes.
  • Serve the "dread" puddings with cherry "blood" sauce and garnish with the shortbread tombstones and mint sprigs.

I had stale Italian bread and a can of tart red cherries. Inspiration struck and this is the result.

about 6 cups of stale bread, cubed
1 tsp ground cinnamon
1 tsp pure vanilla extract
1 dash(es) salt
4 eggs
3 c milk
1 1/2 c sugar
1 can(s) tart red cherries packed in water, drain and reserve juice
1/2 c chopped pecans
SAUCE
reserved cherry juice
1/2 c water
1/2 c sugar
1 Tbsp flour
TOPPING
whipped cream

Steps:

  • 1. Preheat oven to 350, grease a casserole dish
  • 2. Toss the cubed bread with the cinnamon, pecans and cherries and place in casserole dish.
  • 3. Mix the eggs, milk, sugar, salt and vanilla well with a whisk.
  • 4. Pour over the bread mixture and let it sit to absorb for an hour.
  • 5. Bake until set, about an hour. This will depend on the depth of your dish, I like to use a deep dish. If you use a shallow dish check it after 45 minutes.
  • 6. For the sauce:
  • 7. Mix the flour and sugar in a small saucepan.
  • 8. Add the juice and water.
  • 9. Cook over medium heat until thickened. Stir frequently.
  • 10. Set aside to cool.
  • 11. Serve topped with the sauce and whipped cream.

Pinch salt
4 large egg yolks
1/4 cup sugar
1 teaspoon pure vanilla extract
1 dozen old-fashioned plain donuts, cut into 1-inch pieces
1 cup sundried cherries
8 ounces white chocolate, coarsely chopped
1 cup sugar
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
6 large eggs
3 cups heavy cream
1 cup whole milk
2 tablespoons pure vanilla extract
1 stick (8 tablespoons) unsalted butter, cubed

Steps:

  • For the vanilla sauce: Bring the milk and salt to a simmer over medium heat in a 2-quart heavy saucepan. Whisk together the yolks and sugar in a bowl until combined, and then add to the hot milk in a slow stream, whisking. Transfer the custard back to the saucepan and cook over moderately-low heat, stirring constantly with a wooden spoon, until the custard coats back of a spoon, about 5 minutes. Pour through a fine-mesh sieve into a bowl and stir in the vanilla. Cover the surface of the custard with a round of wax paper and chill until cold, at least 1 hour.
  • For the bread pudding: Preheat the oven to 325 degrees F. In large mixing bowl, toss together the donut slices, dried cherries and white chocolate. Set aside. In second large mixing bowl, stir together the sugar, cinnamon and nutmeg. Measure out 1/4 cup of spiced sugar into a small bowl and set aside.
  • In a third large mixing bowl, whisk together the eggs, cream, milk and vanilla. Whisk the eggs into the large bowl of spiced sugar, and then pour over the bread-chocolate mixture and stir to combine. Pour the batter into a 9-by-13-by-2-inch baking pan and sprinkle with the reserved 1/4 cup spiced sugar. Scatter the butter cubes over top and bake until golden brown and just set in middle, 50 to 60 minutes. Serve with the vanilla sauce.

5 tablespoons packed dark brown sugar
1 cup heavy cream
1 cup whole milk

Finely grated zest of 1/4 orange
Seeds of 1/2 vanilla bean
1/4 teaspoon fine sea salt
5 tablespoons granulated sugar
6 slices soft white bread, cut into 1/2-inch cubes
1/2 cup (about 3 ounces) milk chocolate chips
1/2 cup dried cherries
Nonstick cooking spray
1 tablespoon Turbinado sugar

Steps:

  • Put the dark chocolate chips in a large heatproof bowl. In another large bowl, whisk together the eggs and brown sugar until well combined.
  • In a medium saucepan, bring the cream, milk, brandy, orange zest, vanilla seeds, salt, and granulated sugar to a boil; stir until the sugar is dissolved. Pour the hot liquid over the dark chocolate chips and whisk until melted and smooth. While whisking constantly, pour the dark chocolate mixture into the eggs, mixing until combined. Add the bread and toss gently to coat. Transfer the bread mixture to the refrigerator and cool to room temperature. Stir in the chocolate chips and dried cherries. Cover and refrigerate overnight.
  • Position a rack in the center of the oven and preheat to 350 degrees F. Put eight 4-ounce ramekins on a baking sheet and lightly coat them with cooking spray.
  • Stir the bread pudding mixture to evenly distribute the chocolate chips and cherries. Divide the mixture among the prepared ramekins. Sprinkle a little Turbinado sugar over the top of each pudding and bake until puffed and set, about 30 minutes. Serve warm or at room temperature.

I am a big fan of never wasting things, so of course when I have old bread around I don't wanna waste it. So I'm always playing around with different bread pudding recipes. You can't go wrong with chocolate and cherries.

1 cup heavy cream
1 cup milk
48 jarred wild cherries, such as Amarena Fabbri, plus 1/2 cup liquid from the jar
1/2 cup maple syrup
Pinch fine salt
5 large eggs
1 cup dark chocolate (63 percent)
1 baguette, medium diced
1 cup cold heavy cream
2 tablespoons brandy
2 tablespoons granulated sugar

Steps:

  • For the pudding: Preheat the oven to 350 degrees F.
  • In a medium pot add the cream, milk, liquid from the cherries, maple syrup and salt and bring to a boil.
  • In a separate bowl crack and whisk the eggs. In a larger bowl add the dark chocolate.
  • Pour the warm liquid into the dark chocolate and whisk until the chocolate has melted. Slowly whisk in the eggs. Mix in the diced baguette and let it sit for 30 minutes.
  • Place a cherry into each of eight 4-ounce ramekins, then fill the ramekins with the bread pudding mixture.
  • Place ramekins on a baking sheet and bake for 30 minutes.
  • For the brandy whipped cream: Whip the cream, brandy and granulated sugar until it holds stiff peaks. Serve the puddings topped with the cream.

1 1/2 pounds fresh cherries, washed, stemmed and pitted
1/3 cup sugar
2/3 cup water
2 tablespoons fresh lemon juice, plus more to taste
8 2/3-inch slices stale coarse country-style bread, crust removed
2 tablespoons unsalted butter, melted
Confectioners' sugar

Steps:

  • Place the cherries in a nonreactive saucepan and sprinkle with the sugar. Let stand for 30 minutes, stirring often. Stir in the water, place over medium-high heat and bring to a boil. Reduce heat and simmer gently for 10 to 15 minutes. Remove from heat and let cool.
  • Stir in lemon juice. Refrigerate until cold.
  • Preheat broiler. Lightly butter a 9-inch nonreactive skillet, preferably one that would be attractive to serve from. Brush 1 side of each bread slice with butter and place, buttered side up, in the skillet, slightly overlapping, in 1 layer. Set under broiler to lightly toast the bread. Cool completely.
  • Strain the cherries, reserving the juice. Ladle the cherry juice over the bread and make sure that all of the bread is completely saturated with juice. Scatter the cherries over the top. Place the skillet over medium heat and bring the juices to a boil. Cover with foil and cook for 5 minutes. Remove from heat and let the pudding cool to room temperature in the pan. Sprinkle the top with confectioners' sugar and serve.

12 ounces Italian bread

3/4 cup light brown sugar

Steps:

  • In 2-quart saucepan over high heat, heat dried cherries and 3/4 cup water to boiling. Reduce heat to low; cover and simmer 10 minutes or until cherries are tender.
  • Meanwhile, grease shallow 3-quart casserole. Cut bread into 1-inch-thick slices.
  • In very large bowl, with wire whisk or fork, mix milk, brown sugar, vanilla extract, cinnamon, egg whites, and eggs until well blended. Drain cherries, adding any liquid to egg mixture. Set cherries aside. Add bread slices to egg mixture; let soak 10 minutes, carefully turning slices occasionally for even soaking.
  • Preheat oven to 350 degrees F. Arrange enough bread slices in bottom of casserole, in one layer, pushing slices together, to cover bottom. Sprinkle all but 1/4 cup cherries over bread in casserole. Arrange remaining bread, overlapping slices to fit, on top. Pour any egg mixture remaining in bowl over bread in casserole.
  • Bake bread pudding 1 hour and 30 minutes or until knife inserted in center comes out clean, covering loosely with foil during last 10 to 15 minutes of baking if top of pudding begins to brown too quickly. Top with remaining cherries. Sprinkle with confectioners' sugar if you like. Serve warm. Or, refrigerate to serve cold later.

This is inspired by a recipe by the French baker Jacquy Pfeiffer, whose French Pastry School in Chicago is the only school of its kind in the country. Jacquy's recipe, called a bettelmann, is a traditional Alsatian dish made with day-old brioche. This version, made with regular or whole-wheat bread, is not as rich.

4 ounces stale white or whole-wheat bread, crusts removed (weigh after removing crusts)
1 cup low-fat milk (2 percent)
1 teaspoon vanilla extract
Softened butter for the baking dish
3 eggs, separated
50 grams (1/2 cup) almond flour
1/2 teaspoon cinnamon
2 tablespoons mild honey, like clover
1/4 cup sugar
3/4 pound cherries, pitted
2 tablespoons sliced almonds, lightly toasted
1 teaspoon kirsch (optional)

Steps:

  • Cut the bread into 3/4-inch squares. Combine the milk and vanilla and toss with the bread in a medium bowl. Cover and refrigerate for 2 hours or longer.
  • Preheat the oven to 375 degrees. Butter a 9-inch ceramic tart pan or 2-quart baking dish. Arrange the pitted cherries in the dish.
  • Remove the soaked bread from the refrigerator and beat with a whisk or an immersion blender until it becomes a mush. Beat in the egg yolks, almond flour, cinnamon, kirsch if using, and honey.
  • In a clean, dry bowl or the bowl of a stand mixer fitted with the whip attachment, begin beating the egg whites on low speed. Gradually add the sugar, turn up the speed to high and whip until the egg whites form a soft meringue, about 1 minute. Be careful not to overbeat, as you do not want the mixture to dry out. Using a rubber spatula, gently fold the egg whites into the bread mixture. Scrape into the baking dish. Sprinkle the sliced almonds on top.
  • Bake 40 minutes, until puffed and golden brown. Serve warm.
