Cherry Pie Crumb Bars Recipe - quick and easy crumb bars with fresh cherry filling. Buttery crumb topping and sweet fruit filling make this a perfect summer dessert!This recipe makes 9 bars.

1/2 cup unsalted butter melted (, cooled to room temperature)
1/2 cup granulated sugar
1.5 cup all-purpose flour
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
2 cups fresh cherries (, pitted, each sliced in half)
1 Tablespoon cornstarch
1 Tablespoon lemon juice
1 tsp granulated sugar

Steps:

  • Preheat oven to 375 degrees F.
  • Line a square 8" baking pan with parchment paper. Butter the sides and bottom of lined pan. Set aside.
  • In a medium mixing bowl, stir together cherries, cornstarch and lemon juice.
  • In a large mixing bowl, stir together melted butter and sugar. Add flour, baking soda, baking powder and salt and stir with a fork until the mixture resembles crumbs.
  • Reserve 3/4 cup of mixture.
  • Press remaining crumb mixture into the bottom of prepared pan.
  • Spread cherry filling over the crust.
  • Sprinkle remaining crumb mixture over cherries.
  • Sprinkle sugar over crumb topping.
  • Bake bars for 23 to 25 minutes OR until the top is golden.
  • Cool completely before cutting.

2 1/2 c flour
2/3 c sugar
1/2 tsp salt
16 Tbsp unsalted butter, cut into 1/2 inch pieces
2 c frozen sweet cherries
1 c cherry preserves
2 tsp lemon juice
1/4 tsp almond extract
pinch salt
1/2 c old fashioned rolled oats
1/2 c crushed almonds
1/4 c brown sugar
2 Tbsp unsalted butter, softened

Steps:

  • 1. CRUST Heat oven to 375 Cover 9x13 pan with two sheets of aluminum foil over hanging on sides Spray with vegetable spray
  • 2. Process flour, sugar and salt in food processor, until combined, about 5 seconds Add butter and pulse until mixture resembles wet sand, about 15 pulses
  • 3. Transfer 1 1/4 cups dough to medium bowl and set aside. Transfer remaining dough to prepared pan and use your hands to evenly distribute it over the bottom of pan.
  • 4. Bake until light golden brown, 16 to 18 minutes, rotating pan halfway through baking
  • 5. CHERRY FILLING Pulse thawed frozen cherries, cherry preserves, lemon juice, pinch of salt and almond extract until finely chopped, about 7 pulses; set aside
  • 6. STREUSEL Add oats, almonds and brown sugar to reserved dough and toss to combine Add butter and rub mixture beween your fingers until butter is fully incorporated and mixture forms small clumps. Set aside
  • 7. Transfer filling to pan and spread evenly over crust (which needn't be cool)
  • 8. Sprinkle streusel evenly over filling (not not press)
  • 9. Bake until filling is bubbling and streusel is deep golden brown 24 to 28 minutes, rotating pan halfway
  • 10. Transfer pan to wire rack and let bars cool completely. Using foil overhang, lift bars out of pan. Cut into 35 squares and serve

Crust
1 1/2 cups old-fashioned oats
1 1/2 cups all purpose flour
1 cup firmly packed brown sugar
1/2 teaspoon baking soda
1 cup (2 sticks) chilled unsalted butter, cut into small pieces
Filling
1 12-ounce package frozen blueberries, thawed
2/3 cup raspberry jam
5 teaspoons all purpose flour
1 1/2 teaspoons minced lemon peel

Steps:

  • For crust:
  • Preheat oven to 375°F. Butter 13x9x2-inch glass baking dish. Combine first 4 ingredients in medium bowl. Add butter; rub with fingertips until mixture resembles coarse meal. Press half of crumb mixture onto bottom of prepared pan. Bake crust until light brown, about 15 minutes. Cool slightly.
  • For filling:
  • Mix blueberries, jam, flour and lemon peel in bowl.
  • Spread filling over crust. Sprinkle remaining crumb mixture over. Bake until topping is golden, about 35 minutes. Cool in pan. Cut into squares and serve.

2 cups sugar
1 teaspoon salt
4 large eggs, room temperature
1 teaspoon vanilla extract
1/4 teaspoon almond extract
3 cups all-purpose flour
2 cans (21 ounces each) cherry pie filling
GLAZE:
1 cup confectioners' sugar
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
2 to 3 tablespoons 2% milk

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter, sugar and salt until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in extracts. Gradually add flour., Spread 3 cups dough into a greased 15x10x1-in. baking pan. Spread with pie filling. Drop remaining dough by teaspoonfuls over filling. Bake 35-40 minutes or until golden brown. Cool completely in pan on a wire rack., In a small bowl, mix confectioners' sugar, extracts and enough milk to reach desired consistency; drizzle over top.
