Sunday Pork Roast is an easy to make comfort food that is hearty, filling, and can easily feed the whole family for Sunday dinner. This recipe includes instructions for a classic oven braise as well as cooking in a slow cooker or Instant Pot.

3 to 5 pound pork shoulder or butt roast
2 tablespoons vegetable oil
2 teaspoons salt
2 teaspoons black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
2 large white onions (cut into 2 inch chunks)
1 pound baby carrots
1 1/2 pounds baby red potatoes
2 cups apple juice
1 sprig fresh rosemary
salt and pepper (to taste)

Steps:

  • Preheat oven to 450 degrees.
  • Rub oil onto pork roast. In a small bowl, stir together salt, pepper, garlic powder, onion powder, and paprika. Sprinkle seasoning mixture onto pork roast. Place fatty side up in a roasting pan or large cast iron dutch oven.
  • Roast, uncovered, in the 450 degree oven for 30 to 45 minutes. Reduce the oven temperature to 350 degrees and continue cooking an additional 1 hour.
  • Remove roast from oven and place the onion chunks, carrots, and potatoes around the meat. Pour apple juice on vegetables. Season vegetables with salt and pepper. Place rosemary sprig on top.
  • Cook an additional 1 to 1 1/2 hours, or until vegetables are tender and meat shreds easily with a fork. Season vegetables with additional salt and pepper to taste and serve hot.

2 tablespoons Dijon mustard
1 tablespoon apple cider
One 6-bone pork roast, loin and rack of ribs separated
2 tablespoons smoked paprika
Kosher salt and freshly ground black pepper
Olive oil, for drizzling
2 carrots
2 parsnips
2 Yukon gold potatoes
2 turnips
1 head garlic, separated into cloves with skins on
Small bundle thyme
2 tablespoons all-purpose flour
1 cup apple cider
Fresh flat-leaf parsley, finely chopped

Steps:

  • Preheat the oven to 450 degrees F.
  • For the pork: Mix together the mustard and apple cider and brush all sides of the pork loin and ribs with the mixture. Liberally sprinkle the pork loin and ribs with the smoked paprika, 1 tablespoon salt and 2 tablespoons cracked black pepper. Add some oil to a cast-iron skillet or roasting pan, then place the rack of ribs, curved-side down, in the skillet and place the loin, fat-side up, on top of the ribs. Roast until the internal temperature of the loin reaches 145 degrees F, about 30 minutes.
  • While the pork begins to roast, cut the carrots, parsnips, potatoes and turnips into wedges using an oblique cut: Place a vegetable on a cutting board and hold your knife at a 45-degree angle to the vegetable. Cutting roughly 1-inch slices on the diagonal, roll the vegetable a quarter turn toward you each time you make a cut so you're cutting point to point until the vegetable is completely cut. Add the carrots, parsnips, potatoes, turnips, garlic and thyme to the skillet with the pork roast. Drizzle with some olive oil and sprinkle with salt and pepper. Return the skillet to the oven and continue to cook until the loin reaches 145 degrees F.
  • Transfer the pork loin to a cutting board to rest and tent with foil. Return the skillet to the oven and cook until the ribs and vegetables are cooked through, about 30 minutes.
  • Remove the skillet from the oven, transfer the vegetables to a platter and transfer the ribs to a cutting board.
  • For the pan gravy: Heat the same skillet over medium heat. Add the flour and whisk until it absorbs the fat in the skillet. Slowly whisk in the cider and 1 cup water and bring to a simmer, whisking constantly to smooth out any lumps, until the sauce thickens slightly, about 2 minutes. Stir in the parsley and set aside.
  • Cut the rack of ribs into individual ribs and scatter over the roasted vegetables. Slice the pork loin and shingle onto the platter. Spoon the pan gravy over the top and serve.

1 boneless pork loin roast
6 garlic cloves, cut in half
3 bay leaves, cut in half
3/4 teaspoon salt
1/2 teaspoon pepper
2 tablespoons olive oil
1 cup dry marsala
1/2 cup water

Steps:

  • Preheat oven to 475. Make 12 slits in pork and stud pieces of garlic. Sprinkle with bay leaves.
  • Put pork in roasting pan. Rub with salt, pepper and olive oil.
  • Roast pork 15 minutes. Turn oven down to 350 and roast for 1 hour longer, turning once. Remove meat to carving board and over with foil to keep warm.
  • Skim fat from pan juices. Set pan over low heat, add marsala and water, bring to a boil, scraping brown bits from the bottom of the pan. Boil until liquid is reduced to ¾ cup, about 5 minutes.
  • Slice pork and drizzle pan juices over meat.

lb. Pork Roast
3-4 cups of orange juice
4-5 Garlic cloves
2 Tablespoons extra virgin olive oil
All purpose flour
2/3 cup dry Marsala wine
1/3 cup orange juice
Salt and pepper to taste
Orange zest, for garnish
Parsley, for garnish

Steps:

  • Marinate the roast in orange juice and 4-5 large garlic cloves for a minimum of 2 hours and up to overnight. Depending on the size of the roast, marinate in a sufficient amount of orange juice - enough to cover. Put all purpose flour on a large dinner plate/ baking sheet. Dredge roast in the flour. Pour olive oil in a deep skillet, enough to cover the bottom of the skillet. Heat oil on medium-high heat until hot, the bottom of a wooden spoon should create tiny bubbles when placed in the oil. Sear the pork roast in the oil on all sides, turning after 3-4 minutes. This should create a chestnut brown color on all sides. Remove roast from the pan, place on a plate and sprinkle with salt and pepper. Deglaze the skillet with the Marsala wine, scraping the bottom and sides with a wooden spoon. After one minute, enough time to burn off the alcohol of the wine, add orange juice to pan. Place the roast back in the pan at Medium-Low heat. Cover the roast, leaving the lid slightly askew. If the liquid becomes too dense, add water. Cook for 25-30 minutes, turn once after 15 minutes. Once the pork is done, place on a warm platter and let it rest for about 5 minutes.
