Ingredients

1 pound ground beef
1 medium sweet red pepper, chopped
1 small onion, chopped
1 can (16 ounces) refried beans
1 jar (16 ounces) mild salsa
2 cups shredded part-skim mozzarella cheese
2 cups shredded cheddar cheese
1 jar (5-3/4 ounces) sliced green olives with pimientos, drained
Tortilla chips

Steps:

In a large skillet, cook the beef, pepper and onion over medium heat until meat is no longer pink, 5-7 minutes, crumble meat; drain. Transfer to a greased 3-qt. slow cooker. Add the beans, salsa, cheeses and olives. Cover and cook on low 3-4 hours or until cheese is melted, stirring occasionally. Serve with chips.

Ingredients

1 (4 ounce) package cream cheese, softened
1/2 cup cheese spread (like Cheez Whiz)
2 teaspoons Worcestershire sauce
1/4 teaspoon garlic salt
8 pimento stuffed olives, chopped

Steps:

Combine cheeses, Worcestershire sauce and garlic salt in a small bowl; beat until smooth.
You could also do this in a food processor.
Stir in the chopped olives; pulse in lightly if using food processor.
Pack into a small serving bowl and refrigerate for at least 2 hours to let flavours blend.
Garnish with additional sliced green olives if you wish and serve with an assortment of crackers and raw veggies.

Ingredients

5 ounces green olives (with pimentos)
16 ounces cream cheese (2 packages)
1/2 cup mayonnaise
1 small onion

Steps:

In a food processor, blend the cream cheese and mayonnaise and a few thin slices of onion (to taste) until smooth. Thin the mixture to your liking by adding some of the juice from the olive jar. Add olives and pulse until they are chopped, but not pureed. Serve chilled with chips, crackers or vegetables.

I don't remember where I got this one, but it is a hit at get-togethers. I prefer to dice my whole olives, rather than use chopped, just for appearance. Serve with pita chips, bread rounds, fresh veggies, or as a sandwich spread. Cook time includes chill time.

1 small garlic clove

2 ounces feta cheese
1 teaspoon red wine vinegar
1/4 teaspoon white pepper
1 (4 1/4 ounce) can black olives, diced
3 tablespoons roasted red peppers, diced

Steps:

Peel garlic and place in food processor with cream cheese, process until blended thoroughly.
Add feta, red wine vinegar, and pepper, process until smooth.
Stir in olives and pepper by hand.
Chill 2-4 hours.

1 1/2 cups pimento stuffed olives, finely chopped
3/4 cup ripe olives, finely chopped
1 cup mayonnaise
3 small green onions, finely chopped

Steps:

Combine all of the ingredients in a bowl, and stir well.
Place in an ungreased 1 qt.
baking dish.
Bake, uncovered, at 350 degrees for 25 minutes, or thoroughly heated.
Serve with Doritos, or corn chips, or crackers.
