Garden-fresh zucchini and cherry tomatoes are tastefully combined in these colorful appetizers. Writes Amy Frombach of Bradford, Pennsylvania, "Folks tend to hang around the appetizer tray whenever I serve these pretty party bites."

5 medium zucchini (about 6 inches long)
4 ounces blue cheese, crumbled
3 tablespoons grated Parmesan cheese
1 teaspoon dried basil
1/8 teaspoon pepper
1 pint cherry tomatoes, thinly sliced

Steps:

  • Cut zucchini into 3/4-in. slices. Using a melon baller or small spoon, scoop out the insides and discard, leaving the bottom intact. Place zucchini on an ungreased baking sheet; spoon 1/2 teaspoon crumbled blue cheese into each. , Combine Parmesan cheese, basil and pepper; sprinkle half over blue cheese. Top each with a tomato slice; sprinkle with remaining Parmesan mixture. , Bake at 400° for 5-7 minutes or until cheese is melted. Serve warm.

Number Of Ingredients 12

1-2 tablespoons olive oil
2 medium zucchini ((chopped small))
1 clove minced garlic
1/4 cup water
3/4 cup shredded firm mozzarella ((1 cup if you like it extra cheesy))
2 tablespoons freshly grated parmesan cheese
1 egg ((large))
1/4 cup + 2 tablespoons bread crumbs
1-2 tablespoons fresh chopped Italian parsley
1/4 teaspoon salt
1-2 dashes pepper
1/4 cup bread crumbs ((approximately for rolling))

Steps:

  • In a medium frying pan add the olive oil, chopped zucchini, minced garlic, salt and water. Cook covered on medium low heat for approximately 10-15 minutes (make sure the zucchini does not brown, you want it tender), remove cover and continue to cook on low until the water has evaporated and zucchini is tender.
  • Then remove from heat place in a large bowl and squish with a fork. To the bowl add the shredded mozzarella, parmesan cheese, egg, bread crumbs (1/4 cup + 2 tablespoons), parsley and pepper, combine gently until compact.
  • Form into 19 balls, then roll the zucchini balls in the 1/4 cup of bread crumbs, place on a plate, cover with plastic and refrigerate for at least an hour**.
  • Remove from the fridge and either deep fry in hot oil (350 F / 180 C) until golden, or pan fry in a little hot oil, turn once or twice until golden, or bake in a pre heated 350F / 180C oven for approximately 25-30 minutes. Sprinkle with a little salt before serving. Enjoy/!

3 cups thinly sliced unpeeled zucchini (4 small)
1 cup Original Bisquick™ mix
1/2 cup finely chopped onion
1/2 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley
1/2 teaspoon salt
1/2 teaspoon seasoned salt
1/2 teaspoon dried marjoram or oregano leaves
1/8 teaspoon pepper
1 garlic clove, finely chopped
1/2 cup vegetable oil
4 eggs, slightly beaten

Steps:

  • Heat oven to 350°F. Grease bottom and sides of rectangular pan, 13x9x2 inches.
  • Stir together all ingredients. Spread in pan.
  • Bake about 25 minutes or until golden brown. Cut into 2-inch squares; cut squares diagonally in half into triangles.

My best friend and I are eating low carb. I had forgotten about these recipes that I got from a little book from Taste of Home. We had these today at work for a snack. They are very good and very easy!!

5 medium zucchini

3 tablespoons grated parmesan cheese

Steps:

  • Cut zucchini into 3/4 inches slices. Using a melon baller or small spoon, scoop out the insides and discard, leaving the bottom intact.
  • Place zucchini on an ungreased baking sheet; spoon 1/2 teaspoon of crumbled blue cheese into each (I don't like blue cheese so I used Queso Fresco which is Mexican cheese yummy!).
  • Combine the Parmesan cheese, basil and pepper; sprinkle half over the blue cheese. Top each with a tomato slice (I cut them in half and put on top).
  • Sprinkle with remaining Parmesan mixture. Bake at 400 for 5-7 minutes or until cheese is melted. Serve warm.
