ROASTED CAULIFLOWER SALAD

2 heads cauliflower, cut into medium florets
2 tablespoons olive oil
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1/2 cup pine nuts
1/4 cup pesto
3 tablespoons champagne vinegar
6 cups mixed baby arugula, spinach and kale
1/2 cup pitted Castelvetrano olives, halved
1/2 cup pitted kalamata olives, halved
1/2 cup fresh Italian parsley leaves

Steps:

  • Preheat the oven to 450 degrees F.
  • Toss together the cauliflower florets, olive oil, salt and pepper and divide between 2 baking sheets. Roast until the cauliflower is deep golden, 18 to 20 minutes. Allow to cool.
  • Meanwhile, in a dry saute pan over medium heat, toast the pine nuts until lightly toasted, 4 to 5 minutes. Transfer to the baking sheets with the cauliflower.
  • Next, place the pesto and champagne vinegar in a small mason jar. Screw on the lid and shake until well combined.
  • Place the baby greens onto a large platter, top with the cooled cauliflower and pine nuts and then scatter the olives and parsley over the top. Just before serving, drizzle over the dressing and toss.

  • Gather all the ingredients. Preheat the oven to 450ºF (232ºC). For a convection oven, reduce cooking temperature by 25ºF (15ºC).
  • Mix tahini sauce really well before using. Combine 2 Tbsp Tahini Sauce, 4 Tbsp All-Purpose Miso Sauce, and 3 Tbsp rice vinegar in a small bowl or mason jar. All-Purpose Miso Sauce is sweetened. If you use regular miso instead, taste the dressing, and adjust the sweetness by adding sugar/honey to your liking. Each brand/type of miso has different saltiness and flavor. Make sure to taste your dressing (it should taste a bit stronger before combining with salad).

  • Preheat the oven to 425 degrees. Chop the cauliflower head into florets. In a large bowl, toss the cauliflower with 2 tbsp oil and 1 tbsp lemon juice. Sprinkle some salt and pepper on the cauliflower.
  • Spread the cauliflower on a large baking sheet, flat side down if possible. Transfer to the oven and roast for 13 minutes, then flip over the cauliflower. Roast another 12-13 minutes. Remove once the cauliflower looks nice and crispy.
  • Meawhile, make the salad. Place the kale inside a large salad bowl. Place 1 tbsp of oil and 1 tbsp of lemon juice on top of the kale. Gently "massage" or rub the kale leaves with the oil and lemon mixture. This helps to soften up the kale and makes it easier to eat! Now toss in the red onion, raisins, and pine nuts.
  • Make the dressing by combining all of the dressing ingredients in a jar or container with a lid: oil, lemon juice, tahini, red wine vinegar, dijon mustard, and sea salt. Shake vigoroursly until smooth and combined. It may require 1-2 tbsp of water to thin out.
