CHEESY ITALIAN MEATLOAF
Steps:
- Preheat the oven to 350°F. Liberally spray a bundt pan with cooking spray. Have nearby a foil lined sheet pan.
- In a medium-size mixing bowl mix together the ground beef, onion, green pepper, bread crumbs, Parmesan, pasta sauce, parsley, Worcestershire, Italian seasoning, steak seasoning, garlic and salt. Add eggs.
- Using your hands mix until fully combined and the ingredients are evenly distributed. Divided in half.
- Press 1/2 of meatloaf mixture in pan. Arrange the mozzarella cheese over the meatloaf then top with the remaining meatloaf mixture. Press evenly.
- Bake for 45 minutes. Remove from oven. Drain liquid from bundt pan. (Use oven mitts the pan will be hot.) Center foil lined sheet pan on top, then flip to Invert meatloaf onto the pan. Arrange cheese slices overlapping on top.
- Increase oven temperature to 375°F. Return to oven baking for an additional 15 minutes or until cooked through and cheese has melted. Rest on pan for 10 minutes then transfer to a platter or cake stand.
- Serve slices with additional warm pasta sauce on the side.

- In a large bowl, combine 1/2 cup spaghetti sauce, egg, bread crumbs, garlic and rosemary. Crumble meat over mixture and mix well. , Press half into a greased 8x4-in. loaf pan. Place two pieces of cheese, side by side, near one end of loaf. Cut the remaining piece of cheese in half; place side by side on opposite end of loaf. Top with remaining meat mixture; press down firmly to seal., Bake, uncovered, at 350° for 1-1/4 to 1-1/2 hours or until meat is no longer pink and a thermometer reads 160°; drain. - Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x5-inch (or larger) loaf pan with nonstick spray.
- Mix together ground beef, bread crumbs, mozzarella cheese, Parmesan cheese, ketchup, eggs, hot sauce, garlic salt, thyme, salt, and pepper until well combined. Press mixture into the prepared loaf pan.
- Bake in the preheated oven until no longer pink in the center, about 1 hour 15 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

- Preheat an oven to 375 degrees F (190 degrees C).
- Combine ground beef, eggs and 2 tablespoons of ketchup in a large bowl. Mix well, then add bread crumbs, Parmesan cheese, garlic powder, salt, oregano, basil, pepper, and onion. Set mixture aside. Line the bottom of a 9x13 inch pan with bacon, widthwise. Place half of the meat mixture across the top of the bacon. Lay 3 of the 4 pieces of Cheddar cheese across the center of the meat, lengthwise. Cover the cheese with the second half of the meat mixture and mold the meat into a loaf shape. Pull the ends of the bacon up and around the loaf. Spread 1 tablespoon of ketchup thinly over the loaf.
- Bake in the preheated oven until no longer pink in the center, about 60 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Remove from the oven.
- Cut the final piece of Cheddar cheese into slices and place on top of the meat loaf. Return the meat loaf to the oven and continue baking until the cheese is melted, about 5 minutes. Remove from the oven and allow the meat loaf to rest for 5 minutes before serving.

I came up with this recipe today, and it has turned out great! I wanted to make something simple and inexpensive, that the kids would like. It's always a battle getting my eldest son to eat meat, so this was one of my great triumphs! Lol

- Combine meat, stuffing mix, water and egg in a bowl. Make sure it is well mixed, then set aside for 15 minutes.
- Lay out a rectangle of baking paper, and press the meatlof mixture out to form on large flat rectangle, on the paper.
- Combine the ricotta and garlic, and spread over the meat. Sprinkle with shredded cheese.
- Using the paper to help, roll the meat, swiss roll style.
- Place in a greased baking dish, and bake at 180C for 30-40 minutes, or until cooked through and browned on top. Slice to serve.

- 1. To make Tuscan Garlic Spice Mix;in a small bowl,combine dried rosemary,thyme,fennel seeds,garlic powder,marjoram and sage,whisk together with a fork,until blended and set aside.
- 2. Preheat oven to 350 degrees F.Grease a 9x5-inch loaf pan.Season with 1 tablespoon italian seasoning.
- 3. Heat olive oil in a large skillet over medium-low heat.Add sliced vidalia onion and chopped artichoke hearts,saute for 4 minutes until are tender.Remove from heat,season with Tuscan Garlic Spice Mix and set aside.
- 4. In a large bowl,combine ground sirloin,garlic powder,egg whites,bread crumbs,dijon mustard and Tuscan Garlic Spice Mix;mix together until blended.
- 5. Transfer the meat mixture to a piece of waxed paper and flatten to a 1/2-inch thick rectangle.
- 6. Sprinkle with 1 cup shredded italian 5 cheese blend into the center of meat rectangle.Add sauteed onion mixture over the cheese and sprinkle remaining cheese on the onion mixture.
- 7. Pick up the edge of the waxed paper to roll the flattened meat into a log around the filling.Seal the ends and seam and place the loaf into a prepared loaf pan.Sprinkle with italian seasoning on top.
- 8. Bake in the preheated oven,about 30 minutes or until the meat is no longer pink in the center.Let stand for 10 minutes before slicing.

- Place ground beef, Italian sausage, garlic, eggs, milk, Panko crumbs, onion, Parmesan cheese and Italian seasoning into a large mixing bowl. With clean hands or a large spoon, thoroughly mix these ingredients together.
- Divide meatloaf mixture into two equal-sized halves. Place one half on wax paper, and use your hands to shape it into a rectangle, about 9-10 inches long and 5 inches wide. Brush about 7 Tablespoons of marinara sauce over the top of meatloaf half, spreading over the surface. Sprinkle 1/2 cup of grated mozzarella evenly over the top.
- Use remaining half of meatloaf mixture to cover top of the meatloaf. (I add small "clumps" of meatloaf mixture, then gradually spread it out to mirror the bottom half in size).
