TURKEY BURGERS
"I always like to offer a turkey burger at my outdoor barbecue for friends who no longer eat red meat," says Bobby. "Luckily poultry is a perfect canvas for many big flavors, and this combination of tart goat cheese, sweet Meyer lemon-honey and peppery arugula makes for one outstanding burger."

Steps:
- For the Meyer lemon-honey mustard: Whisk together in a small bowl the mustard, honey, orange juice, lemon zest, lemon juice and season with salt and pepper. Cover and refrigerate for at least 30 minutes and up to 24 hours to allow the flavors to meld.
- For the burgers: Preheat the grill to high. Form the meat into four 6-ounce burgers. If you are not going to cook right away, keep the burgers cold in the refrigerator. Sprinkle the burgers on both sides with salt and pepper. Grill until cooked through, 3 to 4 minutes on each side. During the last minutes of cooking, add 2 slices of cheese to each burger, cover the grill and let the cheese soften slightly, about 1 minute. Put the burgers on the buns, drizzle with some of the Meyer lemon-honey mustard and top with a few sprigs of watercress. Serve with extra mustard on the side.

CHEESY TURKEY BURGER
This burger is tasty and the shredded cheese gives it a great flavor. I've used cheddar cheese, co-jack, or a Mexican cheese mixture. You may need more breadcrumbs, depending on how moist your turkey is. I like to serve this with Veganaise or mayo on the side.

Steps:
- Start the barbecue or preheat the grill.
- Remove the core and seeds from the tomato and finely dice the flesh.
- In a bowl, add to the tomato: the turkey, mexican cheese, paprika and fresh coriander. Mix well.
- Divide the mixture into four and shape into burgers. If you have time, cover and chill in the fridge for 20 minutes to let the flavours blend.
- Place a sheet of foil over the barbecue or grill, or use a baking sheet if preferred- because these burgers are made from a low fat meat, they can break up if not handled carefully, so the foil helps them to stay together. Handle and flip them with care.
- Place the burgers on the barbecue or under a grill, on the foil or baking sheet.
- Cook for 15 minutes, flipping regularly.
- If using a barbecue, remove the foil at this point- after 15 minutes- so the burgers pick up the chargrilled flavour in the next 10 minutes.
- Cook for a further 10 minutes (whether using a barbeque or a grill) or until completely cooked through.
- Serve with salsa if desired, on burger buns, Mexican rice, or whatever takes your fancy!

- 1. Preheat the broiler to high. Place the jalapeños on a baking sheet and place under the broiler. Broil until charred all over, about 5 minutes. Remove and let cool and then seed and chop the jalapeños.2. In a medium bowl, combine the jalapeños, turkey, cheddar, panko, egg, paprika, salt, and pepper. Mix until just combined and then shape the mix into 4 even size burger patties.3. Preheat the outdoor grill or grill pan to high. Grill the burger for 5 minute per side or until cooked through. During the last minute of cooking add the cheese slices. 4. To assemble, spread the chipotle mayo on the bottom of each bun. Top with a burger, avocado, lime juice and a pinch of salt. Add the crispy onions (recipe follows) and cilantro. EAT
- 1. Heat a large pot of oil until it reaches 375 degrees F. or until a pinch of flour sizzles when sprinkled over the pot.2. Add the sliced onions to a large bowl and pour the buttermilk over top. Use your hand to submerge the onions in the buttermilk. 3. To a shallow bowl, add the flour and a pinch of salt. Remove a handful of onions from the buttermilk and place them into the flour mixture. Coat the onions in the flour mixture, and then tap them on the inside of the bowl to shake off the excess. Carefully drop the onions into the hot oil. With a spoon, fiddle with them a bit just to break them up. Watch the onions closely as they cook quick! After about 1 or 2 minutes, they should be golden brown, remove from the oil and place on a paper towel-lined plate.4. Repeat with the remaining onion slices. Onions are best served right away, but can be reheated in a 300 degree oven for 5 minutes. *Watch closely, making sure they do not burn.
