- Mix the first 6 ingredients; fold in tuna. Shape into 4 patties. , In a large cast-iron or other heavy skillet, heat butter over medium heat. Cook patties until lightly browned, 4-5 minutes on each side. Serve on buns. If desired, top with lettuce and tomato.

TUNA BURGERS
These tuna burgers are thick, savory, and irresistible! Pile on the toppings and smother with aioli for a satisfying meal.

Steps:
- Drain the tuna and flake it into small pieces with a fork, smashing up any big chunks. In a medium bowl, mix it with green onion, Worcestershire sauce, garlic powder, kosher salt, panko, Dijon mustard, mayonnaise, and eggs.
- Form the dough into 5 small or 6 large patties. Refrigerate the patties for 15 minutes to firm up the texture (or up to 24 hours). If desired, use the time to make the aioli, remoulade or tartar sauce.
- When ready to cook, heat 1 tablespoon of the olive oil in a large skillet over medium high heat. Add the burgers and cook for about 4 to 5 minutes until lightly browned, then gently flip them with a spatula and cook about 3 to 4 minutes more until lightly browned on the other side.
- Serve on a bun with tomato, red onion, lettuce, and aioli, remoulade or tartar sauce. Leftovers save well refrigerated for 2 to 3 days.

- Chop the tuna into small chunks, then carry on chopping until the tuna is roughly minced. Tip the tuna into a bowl and mix with the garlic, ginger, soy sauce and coriander. Shape into two burgers, place on a plate, then freeze for 10 mins to firm up.

CHEESY TUNA PATTIES
My husband came up with this recipe one winter afternoon while pondering what to cook for me that would meet my low carb diet and also not require going out of the house. This is a simple and brilliant recipe, and can be done with any canned fish. It goes well with a bowl of tomato soup.

- 1. Beat eggs lightly. Drain tuna and add to eggs. Mix in cheese, chopped onion and seasonings. Let sit for a few minutes to blend the flavors.
- 2. Heat a medium skillet over medium heat. Add olive oil to heating pan until bottom is just coated. Using a pancake ring (or a tuna can with both top and bottom removed) in the pan, pat tuna mix into ring. Allow to sit for a moment, then remove ring and repeat until all tuna mix is used. Cook for five minutes on first side, or until bottoms are golden brown. Carefully flip over and cook for an additional 5 minutes.
- 3. Top patties with sliced cheese (we use double cheddar). Cover, reduce heat, and allow residual heat to melt the cheese onto the patties. Serve warm.

- Prepare stuffing as directed on package.
- Meanwhile, melt butter in large nonstick skillet on medium heat. Add mushrooms; cook and stir 3 min. or until mushrooms are tender and liquid is cooked off. Spoon into large bowl.

- Add tuna and 1 Tbl. reserved tuna water to a medium bowl. Sprinkle with lemon juice and toss to mix, breaking up with a fork.
- In small bowl, beat eggs with mayo, pour over tuna. Pour cracker crumbs over egg mixture; and add dried onion, dill, celery salt, and pepper. Fold and stir until just mixed and still chunky. Don't overstep or you'll break up the tuna too much and the patties will be mushy.
- Shape into 6 (1/2-inch thick) patties placing onto a waxed paper-lined, half-sized baking sheet. Cover with plastic wrap, and chill 30 minutes.
- In large frying pan, add oil and butter, melt over medium heat, stirring to mix. When hot, carefully add patties to pan and fry 3 - 4 minutes per side until browned on both sides. *Turn carefully so that they don't break and fall apart.
