HOMEMADE CHEESE BREAD - EXTRA SOFT



Homemade Cheese Bread - Extra Soft image

You only need a handful of basic ingredients to make homemade cheese bread. This soft buttery yeasted bread is twisted up with cheddar cheese, but you can use any cheese variety you love. Bake the bread in a loaf pan, then slice it to reveal the 2 cups of swirled cheese inside. See recipe notes for make ahead and freezing instructions.

1/2 cup (120ml) buttermilk, warmed to about 110°F
1/3 cup (80ml) water, warmed to about 110°F
2 and 1/4 teaspoons Platinum Yeast from Red Star (1 standard packet)
2 Tablespoons (25g) granulated sugar
5 Tablespoons (72g) unsalted butter, melted + slightly cooled
1 large egg, at room temperature
1 teaspoon salt
3/4 teaspoon garlic powder
3 cups (390g) bread flour (spoon & leveled)*
2 cups (250g; 8 ounces) shredded cheddar cheese (see note)
2 Tablespoons (30g) unsalted butter, melted
2 teaspoons chopped fresh parsley (or your favorite dried or fresh herb)*
1/4 teaspoon garlic powder

Steps:

  • Whisk the warm buttermilk, warm water, yeast, and sugar together in the bowl of your stand mixer fitted with a dough hook or paddle attachment. Cover and allow to sit for 5 minutes.
  • Add the butter, egg, salt, garlic powder, and 1 cup flour. Beat on low speed for 30 seconds, scrape down the sides of the bowl with a rubber spatula, then add the remaining flour. Beat on low speed until the dough comes together and pulls away from the sides of the bowl, about 2 minutes. *If you do not own a mixer, you can mix this dough with a large wooden spoon or rubber spatula. It will take a bit of arm muscle!*
  • Keep the dough in the mixer and beat on low speed for an additional 2 minutes or knead by hand on a lightly floured surface for 2 minutes. (See video tutorial above if you need a visual of kneading dough by hand.)
  • Lightly grease a large bowl with oil or nonstick spray. Place the dough in the bowl, turning it to coat all sides in the oil. Cover the bowl with aluminum foil, plastic wrap, or a clean kitchen towel. Allow the dough to rise in a relatively warm environment for 1.5-2 hours or until double in size. (I always let it rise on the counter. Takes about 2 hours. For a tiny reduction in rise time, see my answer to Where Should Dough Rise? in my Baking with Yeast Guide.)
  • Grease a 9×5 inch loaf pan.
  • Punch down the dough to release the air. Place dough on a lightly floured work surface and with a floured rolling pin, roll the dough out into a 9×15 inch rectangle (approximately). Sprinkle cheese all over the top, leaving a 1/2 inch border uncovered.
  • Watch the video above to see exactly how I do this step. Tightly roll the dough into a 15-inch log. Place the log on its seam. Using a sharp knife, cut the log in half lengthwise. I find a serrated knife works best. Criss-cross one half, cut side down, on top of the other half- forming an X. Tightly twist the two together. Pinch the outer edges to seal as best you can. If you have any leftover cheese, cut a few small squares and tuck into the dough as shown in the video above. This is optional and simply for extra cheesy pockets! Place in prepared loaf pan and cover with aluminum foil, plastic wrap, or a clean kitchen towel. (This step can get a little messy.)
  • Allow the covered loaf to rest for 30 minutes. It will slightly rise during this time.
  • Adjust the oven rack to the lower third position. Place a baking sheet on the lower rack to catch any cheese or butter that may drip down. Preheat the oven to 350°F (177°C).
  • Whisk the melted butter, herbs, and garlic powder together. Drizzle or brush on top of dough.
  • Bake until golden brown and, when gently tapped, the top of the loaf sounds hollow, about 45-55 minutes. If you find the top of the loaf is browning too quickly as it bakes, tent with aluminum foil. (I usually place foil on top after about 25 minutes.) Remove bread the oven and place on a wire rack. Cool for 10 minutes in the pan, then remove from the pan and cool loaf on the wire rack.
  • Slice and serve. Cover and store leftovers at room temperature for 2 days or in the refrigerator for up to 1 week. Leftover slices taste delicious when warmed in the microwave for 10 seconds.

Steps:

  • In a large bowl, combine the biscuit mix, mozzarella cheese, Parmesan cheese, oregano, milk and egg (batter will be thick). , Spoon into a greased 9-in. round baking pan. Drizzle with butter; sprinkle with additional Parmesan cheese. , Bake at 400° for 20-25 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes. Cut into wedges. Serve warm.

Of all the different appetizers I've made over the years, this one is always the first to go and it is SUPER easy to make. You can use either sweet or sour dough bread, both are tasty! I will usually assemble the Cheesy Breads the morning of the party on cookie sheets and cover with plastic wrap and keep in the fridge. When everyone has arrived at the party I just pop them in the oven and serve them piping hot! If you don't want the bread to be crunchy, broil them instead of baking them. I've tried them both ways and crunchy is better!

3 cups shredded Cheddar cheese
1 cup mayonnaise
1 (1 ounce) package dry Ranch-style dressing mix
1 (2 ounce) can chopped black olives, drained
4 green onions, sliced
2 French baguettes, cut into 1/2 inch slices

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, blend Cheddar cheese, mayonnaise, ranch-style dressing mix, black olives and green onions. Increase the amount of mayonnaise as desired if the mixture seems too dry.
  • Spread equal amounts of the Cheddar cheese mixture on French baguette slices. Arrange slices in a single layer on a large baking sheet. Bake in the preheated oven 15 minutes, or until cheese is bubbly and lightly browned. Serve warm.

1 cup grated Monterey Jack cheese
1 cup grated Cheddar cheese
1 tablespoon chopped fresh parsley
8 slices bacon, partially cooked and chopped
2 green onions, white parts thinly sliced, green parts thinly sliced and reserved separately for garnish
1 round artisan or sourdough loaf
1 stick (8 tablespoons) salted butter, melted
2 tablespoons ranch dressing mix

Steps:

  • Preheat the oven to 350 degrees F.
  • Put the Monterey Jack, Cheddar, parsley, bacon and onion whites in a bowl and mix well.
  • Cut the bread in strips in one direction, being careful not to cut all the way through the loaf. Rotate the bread 90 degrees and cut in the other direction to create small squares across the top of the loaf. Move slowly and use caution. Place the bread on a large sheet of aluminum foil.
  • Stuff the cheese mixture in between the rows of squares. Mix the melted butter and ranch dressing, then drizzle over the top. Wrap the loaf in the foil and bake for 25 minutes. Open the foil and continue to bake until heated through and the cheese is melted and bubbly, another 10 minutes. Sprinkle with the onion greens and serve immediately.

ROASTED GARLIC AND FOUR-CHEESE PULL-APART BREAD

8 cloves garlic, peeled
2 tablespoons olive oil
Kosher salt and freshly ground black pepper
1/2 cup grated mozzarella
1/2 cup grated fontina
1/2 cup grated Parmesan
1/2 cup grated Romano
2 teaspoons chopped chives
1/2 teaspoon crushed red pepper flakes
1 round artisan or sourdough loaf
1 stick (1/2 cup) salted butter, melted

Steps:

  • Preheat the oven to 375 degrees F.
  • Put the garlic cloves on a square of heavy foil, drizzle with the olive oil and sprinkle on some salt and pepper. Wrap it up and bake until the garlic is golden, nutty and mushy, about 1 hour. Let cool. Lower the oven temperature to 350 degrees F.
  • Mix the garlic together with the 4 cheeses, chives, crushed red pepper flakes and some black pepper in a bowl.
  • Cut the bread in strips in one direction, being careful not to cut all the way through the loaf. Rotate the bread 90 degrees and cut in the other direction. Stuff the cheese mixture in between the rows. Drizzle the melted butter all over the top.

Studded with melty cheese and herbs, this garlic bread couldn't be easier! I like to buy a crusty round loaf of bread right from the bakery section of my grocery store. Be careful not to cut all the way through the loaf-you don't want the cheese to ooze out the bottom and stick to the pan.

1 small round loaf sourdough bread (7 ounces)
4 tablespoons unsalted butter
1/3 cup chopped fresh parsley, plus for more garnish
1 teaspoon onion powder
Pinch kosher salt
5 cloves garlic, minced
4 ounces mozzarella, cut into 1/2-inch cubes

Steps:

  • Preheat the oven to 350 degrees F.
  • Score the bread with 2-inch-deep cuts with a serrated knife into a 1-inch diamond pattern without slicing all the way through. Place on a parchment paper-lined baking sheet.
  • Melt the butter in a small saucepan over medium heat. Stir in the parsley, onion powder, salt and garlic. Brush the butter mixture all over the bread and into the cut diamonds using a pastry brush. Insert the cheese cubes in the crevices of the bread.

ALMOST-FAMOUS STUFFED CHEESY BREAD

2 teaspoons sugar
1 1/4-ounce packet active dry yeast (2 1/4 teaspoons)
2 tablespoons vegetable oil, plus more for brushing
2 cups all-purpose flour, plus more for dusting
3/4 teaspoon salt
2 tablespoons cornmeal
1 1/2 cups shredded part-skim mozzarella cheese (about 6 ounces)
1/2 cup shredded yellow cheddar cheese (about 2 ounces)
1 tablespoon grated pecorino romano cheese
1 teaspoon garlic salt
1 teaspoon granulated garlic
1/2 teaspoon dried parsley

Steps:

  • Make the dough: Whisk the sugar and 3/4 cup warm water (about 105 degrees F) in a bowl. Sprinkle the yeast on top and set aside until foamy, about 10 minutes. Stir in the vegetable oil. Whisk the flour and salt in a large bowl. Make a well in the center, pour in the yeast mixture and stir with a wooden spoon to make a shaggy dough. Turn out onto a generously floured surface and knead until smooth and elastic, about 5 minutes, dusting with more flour as needed. Form into a ball. Brush a large bowl with vegetable oil; add the dough, turning to coat with the oil. Cover tightly with plastic wrap and set aside at room temperature until doubled in size, about 1 hour, 30 minutes.
  • Make the filling and topping: Toss 1/2 cup mozzarella, the cheddar, pecorino, garlic salt, granulated garlic and dried parsley in a bowl. Preheat the oven to 450 degrees F. Put an inverted baking sheet in the oven; preheat for 10 minutes. Line another inverted baking sheet with parchment paper and sprinkle with the cornmeal. Cut the dough in half; transfer 1 piece to the parchment-lined baking sheet and stretch into an 8-inch square (keep the other piece of dough covered). Sprinkle 1 side of the square with 1/2 cup of the remaining mozzarella, then fold the dough in half to enclose the cheese, pressing to seal. Slice the dough crosswise at 1-inch intervals, stopping just before the folded edge. Sprinkle with half of the cheese-garlic mixture. Move the dough to 1 side of the baking sheet. Repeat with the remaining dough, mozzarella and cheese-garlic mixture on the other side of the baking sheet. Slide the bread on the parchment onto the hot baking sheet in the oven. Another recipe from my friend Kim. It's fun to make and have everyone stand around it ripping off pieces! Great party snack. You can omit the green onion if desired, and you can add other seasonings to the butter... I've seen it with poppy seeds as well.

1 lb round loaf sourdough bread (or available size)
1 lb sliced monterey jack cheese
1/2 cup butter, melted
1/2 cup chopped green onion
1/2 teaspoon garlic powder

Steps:

  • Slice bread from the top lengthwise and crosswise, stopping about 1/2 inch from the bottom, so you end up with a checkered loaf (there will be~1/2- 1 inch square"towers" of bread).
  • Insert cheese slices in between bread sections- this is where you get creative-- cut the cheese slices to fit so there is a bit of cheese in every open section of bread.
  • Mix the onions, garlic powder, and butter together- brush over the top of the loaf, drizzling between the bread sections as well.
  • Wrap loaf in foil, and bake at 350 degrees for 20 minutes.
  • Remove from oven, and remove foil from the top of the loaf, but keep wrapped around the sides.
  • Return to the oven and bake uncovered for another 10-15 minutes, or until the cheese has melted.
  • To serve, place the whole loaf on a plate, and your guests can grab a fork and dive in!

1 cup plain Greek yogurt
½ teaspoon Italian seasoning
¼ teaspoon granulated garlic

1 ½ ounces Colby-Monterey Jack cheese, shredded
1 ½ ounces sharp Cheddar cheese, shredded
3 ounces mozzarella cheese, shredded

Steps:

  • Preheat oven to 375 degrees C (190 degrees C).
  • Mix flour, yogurt, Italian seasoning, garlic, and salt together in a large bowl until it forms a ball. Transfer to a lightly floured work surface and knead until smooth, adding more flour as necessary to keep dough from sticking, 2 to 3 minutes. Shape mixture into 1-inch balls.
  • Layer dough balls and cheese in a small (5-inch) nonstick springform pan.
  • Bake in the preheated oven until bread has risen and is baked through, 15 to 20 minutes.
