These easy Cheesy Potluck Potatoes are a perfect side dish that pairs well with anything from a casual barbecue to Thanksgiving dinner!

Number Of Ingredients 7

2 lb (32 oz bag) of frozen cubed hash brown potatoes (defrosted (use a zero point hash brown if following the myWW Purple plan))
¼ cup chopped onion
1 cup fat free sour cream
10.75 oz can of 98% fat free cream of chicken OR cream of mushroom soup for a vegetarian option
1 cup 2% reduced fat shredded cheddar cheese
Salt and pepper to taste
¾ cup of corn flakes (crushed)

Steps:

  • Preheat the oven to 350. Lightly mist a 9 x 13 baking dish with cooking spray and set aside.
  • In a large bowl, combine all the ingredients except the corn flakes and stir until thoroughly combined.
  • Pour the mixture into the prepared baking dish and spread evenly. Sprinkle the corn flakes over the top and bake for one hour until potatoes are cooked through. Slice into eight pieces and serve.

After trying plenty of hash brown casserole recipes, I finally discovered the perfect mixture on my own! I always make this for any potluck I go to, and it's ALWAYS the first thing to be eaten! From dinner parties to football game gatherings, you won't be disappointed.

2 cups shredded Cheddar cheese
1 (10.75 ounce) can cream of potato soup
1 (8 ounce) container sour cream
½ (8 ounce) package cream cheese, softened, or more as needed
½ cup chopped green onions
2 cloves garlic, minced
½ teaspoon salt, or to taste
1 (16 ounce) package frozen hash brown potatoes
½ cup grated Parmesan cheese, or more to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch casserole dish.
  • Mix Cheddar cheese, potato soup, sour cream, cream cheese, green onions, garlic, and salt together in a large bowl. Fold potatoes into the mixture; pour prepared casserole dish. Top with Parmesan cheese.
  • Bake in the preheated oven until bubbling and cheese is golden brown, about 1 hour.

28 -32 ounces hash brown potatoes
10 3/4 cream of chicken soup or 10 3/4 cream of mushroom soup
8 -16 ounces sour cream (I use light)
1/2 cup chopped onion
1/4 teaspoon pepper
1/4 cup butter
8 -10 ounces sharp cheddar cheese (I use 2 percent)
optional ingredients may be added -- broccoli, chicken, ground beef, sausage

Steps:

  • Preheat oven to 350 degrees F.
  • Grease 9x13 pan.
  • Saute onion in butter til tender, don't brown.
  • Mix all ingredients together in bowl including onions and butter.
  • Pour potato mixture in pan and cover,bake aprox. 1 hour. uncover last 10 minute.

1/2 cup margarine, melted
1 (10 1/2 ounce) can cream of chicken soup
1 tablespoon onion, minced
2 cups cheddar cheese, grated
12 ounces sour cream
2 lbs hash browns

Steps:

  • Mix all ingredients together.
  • Put mixture in a greased 13 x 9 pan.
  • Bake at 325 degrees Fahrenheit for 1 hour.
