2 cans (10-3/4 ounces each) condensed cream of chicken soup, undiluted
2 cups sour cream
2/3 cup butter, melted
1 teaspoon garlic powder
1 teaspoon pepper
6-1/2 pounds potatoes, peeled and cut into 1/4-inch slices
6 cups cubed fully cooked ham (about 2-1/2 pounds)
1 package (16 ounces) Velveeta, cubed

Steps:

  • Preheat oven to 350°. Mix first 5 ingredients. Stir in potatoes, ham and cheese. Transfer to 2 greased 13x9-in. baking dishes., Bake, covered, 1 hour. Uncover and bake until potatoes are tender, 45-55 minutes longer. , Freeze option: Cover and freeze unbaked casseroles. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake casseroles as directed, increasing time as necessary to heat through and for a thermometer inserted in center to read 165°.

This is something I did one night when I had a bunch of leftovers that turned into one of my favorite comfort foods. You could switch out just about anything for anything of a similar type, chicken for the ham, different soups, etc. Make it as is or use your imagination.

3 cups leftover mashed potatoes
1 cup shredded Cheddar cheese, divided
1 (2.8 ounce) package French fried onions, divided
1 ½ cups diced leftover cooked ham
1 (10 ounce) package frozen peas and carrots, thawed and drained
1 (10.75 ounce) can condensed cream of mushroom soup
¾ teaspoon dry mustard
½ teaspoon granulated garlic
¼ teaspoon fresh ground black pepper
aluminum foil

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Mix 1/2 of the Cheddar cheese and 1/2 of the onions into the mashed potatoes. Spread potato mixture over the bottom and up the sides of a 2-quart casserole dish to form a shell.
  • Combine ham, frozen peas and carrots, mushroom soup, mustard, garlic, and pepper in a bowl; mix well. Spoon mixture into the mashed potato shell. Cover loosely with aluminum foil.
  • Bake in preheated oven for 45 minutes. Remove from oven and sprinkle remaining Cheddar cheese and onions over the top. Bake uncovered until cheese is melted, about 5 minutes. Remove and let rest for 5 to 10 minutes before serving.

1 (30 ounce) package frozen hash brown potatoes, thawed
1 (12 ounce) package pre-cooked ham steak, diced
2 cups shredded sharp Cheddar cheese, or more to taste
1 onion, chopped
1 (10.75 ounce) can condensed cream of chicken soup
1 (8 ounce) container sour cream
½ cup butter, melted
salt and ground black pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Stir hash browns, ham, Cheddar cheese, onion, cream of chicken soup, sour cream, and butter in a large bowl; season with salt and black pepper. Transfer mixture to prepared baking dish and cover with aluminum foil.
  • Bake until bubbly and cheese is melted, 45 minutes to 1 hour. Remove foil and continue baking until brown, about 15 minutes more.

5-Ingredient Fix Contest Entry. This is a delicious, quick and easy to make meal we are all so busy these days. I have adjusted an old friends recipe using the Simply Potatoes with onions and adding the ham. My family loves it, so I always make a double recipe for leftovers.

1 (20 ounce) package Simply Potatoes® Shredded Hash Browns
2 cups shredded cheddar cheese (reserve 1/2 cup for topping)
1 cup ham (diced)
1/2 cup butter (melted)
16 ounces sour cream

Steps:

  • Place the "Simply Potatoes" - Diced Potatoes with onions in a large bowl, add cheese, ham, butter and sour cream. Gently fold ingredients together.
  • Turn into a greased 13x9 baking dish.
  • Bake at 350 degrees for 30 minutes.
  • Sprinkle reserved 1/2 cup cheese on top of potatoes and ham.
  • Bake an additional 10 minutes.

2 (1 lb) packages Simply Potatoes Diced Potatoes with Onion
1 lb cubed ham
1 1/2 lbs shredded sharp cheddar cheese
1 lb broccoli floret
3 (15 ounce) cans cream of mushroom soup

Steps:

  • Thaw the potatoes and empty the packages into a large mixing bowl. Mix in the ham, 1/2 the cheese, the broccoli and the soup. Mix well. Put the mix into a large pyrex or metal 11x13 pan and layer the rest of the shredded cheese on the top of the mix. Put into a preheated 350 degree oven for 1 hour.
  • Serve with hot rolls, add salt and pepper to taste if you want.

1 small yellow onion, diced
3 tablespoons all-purpose flour
1 cup half-and-half
½ cup whole milk
salt and ground black pepper to taste
1 teaspoon garlic powder

¼ teaspoon paprika
4 large russet potatoes, peeled and thinly sliced
1 ½ cups chopped hickory smoked ham
½ cup grated Cheddar cheese
½ cup grated Monterey Jack cheese

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Butter a baking dish.
  • Melt butter in a large skillet over medium heat. Add onion; cook and stir until starting to soften, 3 to 4 minutes. Sprinkle flour over onion and whisk together. 5 -6 large russet potatoes, peeled, diced, and boiled until almost done
1/2 lb ham, diced
1 sweet onion
2 cups shredded cheddar cheese
2 cups sour cream
1 (10 ounce) can cream of chicken soup or 1 (10 ounce) can celery soup
1/4 cup butter
salt and pepper

Steps:

  • Saute ham and onion together until ham is slightly browned and the water has cooked off.
  • Combine butter and can of soup over low heat. Cook until butter has melted and soup and butter have combined.
  • Over low heat, add cheese and sour cream to soup/butter mixture, stirring constantly until melted.
  • Put potatoes and ham/onions in a 13"x9" baking pan, pour cheesy mixture over the top. Do not stir. Cook at 350 degrees F for about 45 minutes to an hour.
