Cheesy onion and mushroom French Bread image

I wanted some type of french bread to go with our pasta and meatballs, but not the same ole, same ole, so this is what I came up with. This could be a vegetarian meal on it's own.

2 loaf french bread
1 medium red onion, thinly sliced
4-5 baby bello mushrooms, sliced
3 clove garlic, minced or crushed
olive oil or butter
1 c mozzarella cheese, grated
1/4 c parmesan cheese, grated
red pepper flakes

Steps:

  • 1. Saute onions and garlic in about 2 tbs. of olive oil or butter till tender. Add sliced mushrooms and cook about 5 min. more. I like to cover my skillet with a lid to hurry along the process.
  • 2. Slice bread in half, slightly brush with olive oil or butter. Sprinkle grated mozzarella, add onions, garlic and mushrooms. Top with a little more mozzarella and some Parmesan and red pepper flakes. Place under broiler just long enough to melt cheese.

4 cups shredded part-skim mozzarella cheese
1 cup butter, softened
1 cup mayonnaise
8 green onions, thinly sliced
1 can (8 ounces) mushroom stems and pieces, drained and chopped
1 can (4-1/4 ounces) chopped ripe olives
1 loaf (1 pound) unsliced French bread

Steps:

  • In a large bowl, combine the first six ingredients. Cut bread in half lengthwise; place on an ungreased baking sheet. Spread with cheese mixture. , Bake at 350° for 15-20 minutes or until cheese is melted. Cut each half into eight slices.

1 Vienna or Hoagie roll (6 to 8 inches)
2 tablespoons butter, melted
3/4 teaspoon poppy seeds
3/4 teaspoon minced dried onion
1/2 teaspoon ground mustard
1/8 teaspoon seasoned salt
1/8 teaspoon lemon juice
1/2 cup sliced fresh mushrooms
2 tablespoons finely shredded Swiss cheese

Steps:

  • Cut bread diagonally into 1-in. slices to within 1/2 in. of bottom loaf. Repeat cuts in opposite direction. In a bowl, combine the butter, poppy seeds, onion, mustard, salt and lemon juice. Drizzle over cut bread and into cut slits. Place mushrooms and cheese in slits. Wrap bread in foil. Bake at 350° for 15-20 minutes or until warmed.

1 tablespoon olive oil
1/2 cup beef broth
4 garlic cloves, minced, divided
1/4 teaspoon dried thyme

2 cups shredded Gruyere or Swiss cheese

  • In a large saucepan, saute onion in oil for 8-10 minutes or until tender. Add the broth, 1 garlic clove and thyme; bring to a boil. Reduce heat; simmer, uncovered, for 12-15 minutes., Meanwhile, in a small bowl, combine butter and remaining garlic; stir until creamy. Spread over bread slices. Since I make this without really measuring, the amounts listed are only estimated but close to what I use when I make this bread, you can adjust the amounts slightly to suit taste, the amounts listed are for two long baguettes but you can reduce the amounts for just one baguette, I serve these at my get togethers so I always make two loaves. You will love this bread.

2 French baguettes (purchase the long thin crusty bread)
2 large yellow onions, very finely chopped (or minced)
2 tablespoons minced fresh garlic (or to taste)
salt and black pepper
1/4 cup butter, softened (can use more)
2 cups shredded mozzarella cheese
1/2 cup grated parmesan cheese
1 cup mayonnaise (do not use salad dressing it's too sweet!)

Steps:

  • Set oven to broiler heat.
  • Slice both baguettes diagonally into about 3/4-inch slices.
  • In a medium skillet over medium heat melt butter.
  • Add in the onions and garlic and saute for about 5-6 minutes or until tender, then season lightly with black pepper and a small amount of salt; set aside to cool.
  • In a mixing bowl combine the mozza cheese with Parmesan and mayonnaise.
  • Arrange the bread slices on a large baking or cookie sheet.
  • Spread the onion/garlic mixture over the slices, then spread the cheese/mayo mixture over the onion/garlic mixture.
  • Broil about 5 minutes or until the cheese is bubbly and slightly browned.

1 (10 ounce) can cream of mushroom soup
1 (8 ounce) container sour cream
1 lb Velveeta cheese, cubed
1 lb ground beef
2 teaspoons dried onion
salt
pepper
garlic powder

Steps:

  • Split the loaf of french bread and hollow (reserve to add to filling.)
  • Brown ground beef with dried onion,salt pepper and garlic powder and drain.
  • In large mixing bowl combine ground beef, soup, velveeta, sour cream and reserved bread.
  • If mixture is too dry add a small amount of water or broth.
  • Spoon mixture back into the hollowed out french bread. (I always have mixture left over -- its yummy all by itself!).
  • Place top back onto bread, wrap in foil.
  • Bake at 325 for about 20-30 mins until sandwich is heated through and top is crusty!
