CHEESY ONION AND MUSHROOM FRENCH BREAD
I wanted some type of french bread to go with our pasta and meatballs, but not the same ole, same ole, so this is what I came up with. This could be a vegetarian meal on it's own.

Steps:
- 1. Saute onions and garlic in about 2 tbs. of olive oil or butter till tender. Add sliced mushrooms and cook about 5 min. more. I like to cover my skillet with a lid to hurry along the process.
- 2. Slice bread in half, slightly brush with olive oil or butter. Sprinkle grated mozzarella, add onions, garlic and mushrooms. Top with a little more mozzarella and some Parmesan and red pepper flakes. Place under broiler just long enough to melt cheese.

- In a large saucepan, saute onion in oil for 8-10 minutes or until tender. Add the broth, 1 garlic clove and thyme; bring to a boil. Reduce heat; simmer, uncovered, for 12-15 minutes., Meanwhile, in a small bowl, combine butter and remaining garlic; stir until creamy. Spread over bread slices. Since I make this without really measuring, the amounts listed are only estimated but close to what I use when I make this bread, you can adjust the amounts slightly to suit taste, the amounts listed are for two long baguettes but you can reduce the amounts for just one baguette, I serve these at my get togethers so I always make two loaves. You will love this bread.

Steps:
- Set oven to broiler heat.
- Slice both baguettes diagonally into about 3/4-inch slices.
- In a medium skillet over medium heat melt butter.
- Add in the onions and garlic and saute for about 5-6 minutes or until tender, then season lightly with black pepper and a small amount of salt; set aside to cool.
- In a mixing bowl combine the mozza cheese with Parmesan and mayonnaise.
- Arrange the bread slices on a large baking or cookie sheet.
- Spread the onion/garlic mixture over the slices, then spread the cheese/mayo mixture over the onion/garlic mixture.
- Broil about 5 minutes or until the cheese is bubbly and slightly browned.

- Split the loaf of french bread and hollow (reserve to add to filling.)
- Brown ground beef with dried onion,salt pepper and garlic powder and drain.
- In large mixing bowl combine ground beef, soup, velveeta, sour cream and reserved bread.
- If mixture is too dry add a small amount of water or broth.
- Spoon mixture back into the hollowed out french bread. (I always have mixture left over -- its yummy all by itself!).
- Place top back onto bread, wrap in foil.
- Bake at 325 for about 20-30 mins until sandwich is heated through and top is crusty!
