Steps:
- Prepare shrimp according to package directions and keep warm. Place a wok or a large saute pan over high heat. Add oil and stir-fry mix and cook, stirring constantly, for 3 minutes. Add sweet and sour sauce. Cook for 1 minute, stirring constantly. - Stir the cornstarch, stock, soy sauce and sesame oil in a small bowl until the mixture is smooth.
- Heat 1 tablespoon vegetable oil in a 12-inch skillet over medium-high heat. Add the shrimp and stir-fry until they're cooked through. Remove the shrimp from the skillet.
- Heat the remaining vegetable oil in the skillet. Add the vegetables, ginger and garlic powder and stir-fry until the vegetables are tender-crisp.
- Stir the cornstarch mixture in the skillet. Cook and stir until the mixture boils and thickens. Return the shrimp to the skillet and cook until the mixture is hot and bubbling. Serve over the rice.

- Peel and devein shrimp.
- Combine shrimp and next 5 ingredients in a shallow bowl; stir well.
- Cover and marinate in refrigerator 30 minutes, stirring occasionally.

- Whisk soy sauce and rice wine together in a medium bowl. Add shrimp and stir to combine; let rest for 10 minutes up to 30 minutes at room temperature. Meanwhile, whisk the Stir Fry Sauce ingredients together in a medium bowl starting with 1/3 cup sugar. Add additional sugar to taste (will depend on orange juice and how spicy you like it); set aside.
- Heat 1 tablespoon vegetable oil in a large cast iron skillet over high heat until just smoking. Add half of the shrimp and cook, without stirring, until the bottom of the shrimp are browned at the edges, about 1 minute. Flip shrimp over and cook just until opaque and nearly cooked through, about 30 seconds; transfer to a plate. Repeat with remaining shrimp.
