Cheesy Mexican Chorizo Dip With Roasted Red Pepper Recipes

CHEESY MEXICAN CHORIZO DIP WITH ROASTED RED PEPPER

Steps:

• Place the Red bell pepper skin side up on baking sheet and place under broiler until skin is charred. Place hot pepper in paper bag and close letting it steam until it is cool enough to handle. Remove the skin with a paper towel and chop the pepper into small minced pieces.
• In a large saucepan add a little oil and saute the onion and garlic. Add the chorizo and cook until meat is done. Stir in the bell pepper. Add the jar of green salsa.
• Shred the cheese and add that to the dip and cook until cheese has melted and dip has thickened. Stir in the cilantro. Serve with favorite chips.

CHORIZO CHEESE DIP

Steps:

• Crumble chorizo into a large skillet; cook over medium heat for 6-8 minutes or until fully cooked. Drain. Remove and keep warm. In the same skillet, saute the peppers, onion and garlic in oil until tender. Stir in cayenne and chorizo; heat through., Heat cheese according to package directions; stir into meat mixture. Serve warm with tortilla chips. Refrigerate leftovers.

CHEESY MEXICAN DIP WITH ROASTED RED PEPPERS

Steps:

• Mix all ingredients in medium microwaveable bowl.
• Microwave on HIGH 4 to 5 min. or until VELVEETA is completely melted and mixture is well blended, stirring every 2 min.
• Serve hot with assorted cut-up fresh vegetables.

SPICY CHORIZO DIP

Steps:

• Cook meat with peppers in large skillet 8 to 10 min. or until meat is browned.
• Add refried beans, 1 cup cheese, sour cream and onions. Cook and stir until cheese is melted.
• Spoon into pie plate. Sprinkle with remaining cheese.
