HOMEMADE CORNBREAD WITH CHEESE AND GREEN ONIONS
This easy Homemade Cornbread with Cheese and Green Onions is a flavorful twist on classic cornbread. Serve it with a big bowl of hearty chili and dig in!

- Grease a 9-inch square baking dish well, and set aside. Preheat the oven to 400 degrees F.
- In a medium mixing bowl, add the flour, cornmeal, sugar, salt, and baking powder. Whisk to combine well.
- Make a well in the center of your dry ingredients, and add your oil or butter, milk, and egg. Stir just until the mixture comes together and there are only a few lumps remaining.
- Fold in the cheese and green onions.
- Pour the batter into the prepared pan and bake for 20 to 25 minutes, until the top is a deep golden-brown and a toothpick inserted into the center comes out clean.
- Serve hot.

- Bring water to boil in medium saucepan. Stir in rice; cover. Remove from heat. Let stand 5 min. or until water is absorbed and rice is tender.
- Meanwhile, heat oil in large saucepan on medium heat. Add onions and red peppers; cook 4 to 5 min. or until crisp-tender, stirring frequently. Add corn; cook and stir 3 min. Add garlic; cook 1 min., stirring constantly. Remove from heat.
- Fluff rice with fork. Add to cooked vegetables along with the cheeses, chiles and 1/4 cup cilantro; stir until shredded cheese is completely melted and mixture is well blended. Sprinkle with remaining cilantro.

- In a large skillet, saute onions in butter until tender. In a small bowl, combine the sour cream, milk, dill and salt until blended; stir in 1 cup of cheese. Stir into the onion mixture; remove from the heat and set aside., In a large bowl, combine the egg, corn, cornbread mix and hot pepper sauce. Pour into a greased 13x9-in. baking dish. Spoon onion mixture over top. Sprinkle with remaining cheese. , Bake, uncovered, at 350° for 45-50 minutes or until a thermometer reaches 160°. Let stand for 10 minutes before cutting.

This is originally from a 1995 Gourmet magazine. We like it as a side dish with anything grilled ( it's wonderful with steaks!) or roasted. It's a different sort of side dish and is always well received.

Steps:
- Preheat oven to 350 degrees and butter a shallow 1 1/2 quart baking dish.
- In a skillet, cook scallions and garlic in butter over moderate heat until scallions soften, about 20 minutes.
- Stir in cream and 1/4 cup Parmesan cheese; transfer to baking dish.
- In a skillet, heat oil over moderately high heat until hot, but not smoking.
- Saute bread crumbs, stirring until golden brown, about three minutes.
- Transfer breadcrumbs to a bowl and cool.
- Add remaining Parmesan cheese and season to taste with salt and pepper.
- Top casserole with breadcrumb mixture.
- Bake, uncovered, in the middle of oven until hot, 15-20 minutes.

Steps:
- Shuck sweet corn and cut kernels off of the cob using a sharp knife and a big bowl (this can get messy); set aside.
- Chop 1 bunch of green onions using a good portion of the green part.
- Heat large sauté pan and add butter and olive oil (be sure not to burn) add corn and green onions and sauté for 4-5 minutes, top! Do not over cook!
- Season with salt and pepper and ENJOY immediately!
- Variations: Add chopped red pepper, garlic, green pepper, etc.
