CREAMY CRAB WONTONS
How about a fast festive appetizer just for two? These hot, crispy little bites boast a rich creamy filling with a hint of crab. "They simply melt in your mouth," promises Robin Boynton of Harbor Beach, Michigan. Suggestion: serve wontons with plum sauce or sweet-and-sour sauce for dipping.

- In a small bowl, combine the cream cheese, crab and onion. Place 1 rounded teaspoonful in the center of each wonton wrapper. Moisten wrapper edges with water; fold in half lengthwise and press firmly to seal. , Keeping the filling in the center, again fold wonton wrapper lengthwise. Moisten the top of the short edges with water. Bring the two top edges from opposite sides together, overlapping the edges; press and seal (finished wonton resembles a nurse's hat)., In an electric skillet, heat 1 in. of oil to 375°. Fry wontons for 1-2 minutes on each side or until golden brown. Drain on paper towels. Serve warm.

- Place softened cream cheese in a mixing bowl; stir with a fork. Add cocktail sauce, salt, and pepper; mix with a fork until well blended.
- Stir in Montery Jack cheese, crabmeat, and green onion.
- Spread 1/4 of the mixture (about 1/2 cup) onto each tortilla, making an even layer that covers the tortilla completely.
- Roll up each tortilla tightly. Wrap each tortilla roll in plastic wrap and refrigerator for several hours or overnight.
- At serving time, cut each tortilla roll into 10-12 slices.
- I find using a sawing motion with a serrated knife makes the nicest, cleanest cuts.
- You can also use the filling as a spread on crackers instead of making tortilla roll-ups, if you'd like.

- Heat oil in a large, heavy saucepan to 375 degrees F (190 degrees C).
- In a medium bowl, mix together cream cheese, imitation crabmeat, soy sauce, sesame oil, garlic, Worcestershire sauce and green onions.

- 1. Preheat oven to 350.
- 2. Filling :Combine first seven ingredients. Mix well. Set Aside. Spray baking sheet with non-stick cooking spray or use non stick aluminum foil for pan and set aside.
- 3. Lay 2 wontons wraps together on dry surface and spoon heaping 1/2 tsp. of mixture into center of wraps. Dab all sides with water and fold diagonally across pressing firmly to seal. Spray filled wonton with nonstick spray and place on baking sheet. Bake approximately 12-15 minutes til golden brown. Cool slightly.
- 4. Sauce: Bring the sauce ingredients to a boil stirring occasionally. Mix thickening mixture and add to boiling mix. Will thicken quickly. Remove from stove and enjoy with wontons!
AWESOME CHEESY HOT CRAB DIP
I got this recipe from a Southern Living Magazine a couple of years ago. It was an instant favorite, and I get so many requests for the recipe that I figured I would make it easy on myself and just post it. I usually use more Old Bay, Tabasco, and scallions than it says, cause I like a little extra kick. It really is AWESOME, especially with crusty french bread.
