EASY POTATO CASSEROLE WITH CREAM CHEESE AND CHIVES
This potato casserole recipe is made with a complementary combination of diced potatoes, chives, and cream cheese.

Steps:
- Gather the ingredients.
- Preheat the oven to 350 F. Cook potatoes in a saucepan with 1 teaspoon salt in boiling water to cover for 15 minutes or until tender; and drain.
- Place cooked potatoes in a shallow, lightly buttered 2-quart casserole dish .
- In a medium saucepan, heat the milk and cream cheese, stirring until the cheese has melted.
- Add the chives, salt, pepper, and dried onion.
- Pour over potatoes.
- Bake in the preheated oven for 30 minutes.
- Sprinkle with paprika and more chives, if desired.
- Serve and enjoy.

These are sour cream and chives mashed potatoes with a little extra ingredients , Its hard for me to have potatoes that are just plain. This is a borrowed picture but thats what they look like.

Steps:
- 1. Place potatoes in large pan and cover with water. Bring to a boil ; reduce heat ; cover and simmer about 15-20 minutes until tender ; drain.
- 2. In a large bowl , mash potatoes . Beat in the cream cheese , butter , milk , salt and pepper until fluffy.
- 3. Transfer to a greased 3 quart baking dish.
- 4. Spread the sour cream over top.
- 5. Bake @ 350° for 10 minutes.
- 6. Sprinkle with the cheddar cheese , bacon and chives.
- 7. Bake uncovered for 5 minutes longer or until cheese is melted.
