CHEESY WILD RICE SOUP

- In a large saucepan, prepare rice mix according to package directions. Add the milk, soup and cheese. Cook and stir until cheese is melted. Garnish with bacon and, if desired, minced fresh chives and oyster crackers.

Steps:
- Start by cooking chicken, onions, & mushrooms in pot until chicken is cooked through and onions and mushrooms are soft.
- Next add crubled bacon and wild rice (I like to use 2 cans of wild rice but you can buy the boxed kind too and prepare it ahead of time)
- Add both cans of cream of potato soup, milk, and Velveeta. Stir all ingredients until mixed well.
- Heat on medium until cheese is melted and everything is blended.
- Season to taste ( I like to just add pepper since the Velveeta makes it a little salty already)
- Turn to low and let simmer for a while, stirring frequently.

CHEESY CHICKEN & WILD RICE SOUP-ANNETTE'S
One of my favorite soups in the world is Famous Dave's Chicken and Wild Rice. One day I was craving it and started looking in the pantry. I decided I wanted to recreate it with a whole new twist. There's isn't cheesy but I LOVE cheese and I needed something to take to a potluck. I also love anything I can make in a Crock Pot because of my disabilities. It's so much easier to prep it, throw it in, put on the lid and let it go, then standing at the stove for several hours. Anyway, this was a huge hit with family and friends. Recipe is my own.

Steps:
- Boil the wild rice in 2 cups of water or according to package directions until rice is done.
- Chop bacon while still frozen then fry until crisp and drain on a paper towel.
- Use enough of the bacon grease to lightly saute carrots, onions, celery and mushrooms. I start cooking them in this order as the carrots take a little longer to caramelize slightly. Do not saute too long, only enough to take the crunch out of the veggies slightly and add some color and flavor.
- Mix all of the ingredients in a 6 quart Crock Pot. Cook on high for 30-60 minutes until cheese melts, stir well to mix again. Turn to low for at least 2-3 hours until soup reaches the desired temperature to serve. Enjoy!
- ****This can be made on the stove top but obviously because of the cheese and milk you have to watch it to make sure it doesn't scald or burn. Cook at a low heat once you've gotten the cheese to melt and stir often.****
WILD RICE CHEESE SOUP
The original recipe calls for italian sausage, but this cheesy soup is great with ground beef or venison.

- In a medium skillet, fry the Italian sausage and onions until sausage is no longer pink. Drain and set aside. In a small saucepan, cook wild rice with 2 cups of water until tender; set aside.
- In a stockpot, combine the cooked sausage and onions, rice, potato and chicken soups, milk, and evaporated milk. Cook over low heat until warm. Stir in the processed cheese and heat, stirring occasionally until cheese is melted.

This is one of the best tasting soups I ever had but it isn't for everyone. If you are one of those people who likes cheese on their cheese then this recipe is for you. ;)

Steps:
- Cut the tenderloins into bite size pieces then sprinkle with salt & pepper. Spray a large pot with cooking spray & cook the chicken until no longer pink.
- Pour the broth & water in the pot then add the rice & seasoning packet. Bring to a boil then lower heat & simmer for 20 minutes, covered.
- Note: If using quick cooking rice the time will be lowered to 10 minutes.
- Mix the salt, pepper, & half-and-half in with the broth. Then add the Velveeta & shredded cheese to the pot. Stir until the cheese is melted.
- Mix the cornstarch & a small amount of water in a cup to form a running paste. Pour this into the broth, stirring until it thickens.

CHEESY CHICKEN WITH WILD RICE
This is something a little different, and a little familiar. Its actually a combination of two recipes my mom used to make growing up, Sour Cream Chicken and Chicken Broccoli Casserole. Now as an adult, these being my favorite recipes as a child, naturally wanted to make them for my husband. However, he doesnt like broccoli. and he didnt like the 'soft' texture of baked bacon, nor the dried beef found in the sour cream chicken recipe (nor the sour cream, for that matter) SO I decided to omit the broccoli, sour cream, and beef, and rather than wrap chicken breasts in a bacon strip I cut the bacon into small teeny bits. Since there was no need for a whole chicken breast now I cut them into bit sized bits like in the chicken broccoli recipe, and slapped it all together and this is what I got! He loves it, By the way, and so do the kids :D

- Boil Chicken breasts (they should be at least half way cooked, but do not need to be completely done).
- preheat oven to 350 Degrees.
- Soften cream cheese in a large microwavable mixing bowl for around 15-30 seconds in the microwave, depending on your wattage. when soft, mix the cream of chicken soup, mayonnaise, cheese, garlic powder, onion powder, and pepper until smooth.
- CUT the uncooked strips of bacon into small 1/4 inch squares ( I use my cooking shears, it goes much faster than using a knife) Add the bacon pieces to the soup mixture and stir in well.
- CUT or tear the boiled chicken breasts into bite sized pieces and place in a 9x11 glass baking dish, or a glass dish of similar size (with at least 2 inches depth) Its ok if you need to do more than one layer of chicken.
- Pour the soup mixture over the chicken and smooth until even.
- Bake at 350 for about 30 minuets or until top is bubbly and cheese is melted.
- Begin cooking your Wild Rice once the casserole is in the oven (PLEASE NOTE: Cook times and water measurements will vary depending on your altitude and the type of rice you buy, be sure to consult the package for proper measurements and instructions) Rice may take between 20 and 30 minuets to cook.
- Serve over wild rice and enjoy!

- In a medium saucepan, combine the wild rice, butter and 1 3/4 cups water. Bring to a boil then lower heat to simmer, cover the saucepan and cook for 45 minutes.
- Add the olive oil to a large stock pot over medium heat. Add the onion and saute for 2 minutes. Add garlic, broccoli and carrots and cook for 5 minutes or until softened. Add the chicken stock and simmer for 5 minutes.
- Meanwhile, heat a separate sauce pan over medium heat. Melt the butter then whisk in the flour, salt and pepper. Cook for 1 to 2 minutes to cook out the flour taste. Slowly add half the milk, whisking as you pour. Let it thicken slightly then add the remaining milk. Cook, stirring often, until the mixture has thickened. Remove from the heat and stir in the shredded cheddar.
- Add the cheese sauce to the stock mixture and whisk thoroughly. Stir in the shredded chicken and cooked rice. Allow to simmer for 10 minutes to heat through the chicken and rice and thicken the soup a bit.
